The beer comes in a hazy deep yellow/straw.

The beer offers banana, fruity esters, clove, vanilla, hints of bubble gum, wheat, onto a light bitterness on the finish. An easy drinking beer without too much going on after the initial fruitiness up front. Similar to Dreamweaver for an American attempt at a hefeweizen.

Hazy straw color , lots of carbonation, a couple fingers of white head that is gone fast

Very fruity smell, one of the first times it picked up pronounced bananas from a weisbeer

Fruity taste but light enough to be refreshing

A bit of substance on the mouth

Very cloudy pale yellow body, non-uniform but velvety white head, good ambient carbonation. Solid 'MEH' bottle art. Nose has some delicious nutty banana and warm vanilla, but plagued by a minor metallic note. Taste steps back a bit, in both power and clarity, and still has that metallic flaw. Bready throughout. Clove is very mild. Thin body, even for the style, but pleasant tickling/prickly carbonation.
All in all, one of my favorite widely available (locally at least) beers, especially of this style, even edging out some true German hefe's. It has a minor flaw here and there, but still a great brew.

Hazy straw gold under a cream colored foam cap. Bready nose and palate with banana, clove and vanilla. Medium to medium full body, medium to medium high carbonation. A very refreshing and easy to drink beer.

Ebel's Weiss is the best American version of a Hefeweizen or Weizen that I have tried, even better than Dreamweaver. It has the same characteristics of a Bavarian Hefe, except everything is toned down a little compared to drinking a Schneider or a Weihenstephaner. Lighter gravity and ever so slightly less flavor. It actually doesn't give up too much flavor as there is quite a bit of clove, banana, and bubblegum flavors; slightly floral as well, maybe it's the coriander. Didn't find it very estery and the mouthfeel is a lot like Dreamweaver to be honest. No alcohol taste. Overall, looks and tastes great!

12oz bottle. 8/23/15 code date. Appearance: Cloudy light golden, with minimal white head, especially for style. Aroma: Banana is strong, with some clove as well. Typical weizen yeast. Taste: Sweet, grainy maltiness, with a hint of banana and strong clove. Bitterness is minimal. Mouthfeel: Medium bodied with a slight creaminess and slickness in the tongue. Carbonation is low for the style. Finish: Banane esters and clove phenols linger retro nasally long after the swallow. Overall: Great weizen yeast character. This serving is under carbonated for the style, but well wishing code date on bottle. Tastes good but a bit overly sweet, almost cloying

This beer pours a very pale golden color. On the nose I get wheat, banana, and a little nuttiness. The flavor is a little thin, this is what I would call a very shy beer. It sneaks into the room and leave without a fuss. Not bad in anyway, but not particularly interesting either.

Very yummy... This beer billows with banana and bubblegum esters, atop a tastefully understated mix of clove and coriander. While nothing particularly stands out, that's not exactly a bad thing - this actually drinks like a hefeweizen.

Pours clear gold win a small white head dissipates quickly, smells yeasty malty and of wheat, taste brings a sharp bitterness up front smoothed by biscuity malt with for a smooth lasting finish.

12 oz bottle, poured into a tulip glass at approximately 40 degrees F.

Appearance: Pours a bright and sunny straw gold, mildly cloudy beneath a fluffy white head.

Smell: Fruit and spice drifting above a ripe wheat field, redolent with notes of banana and clove. This is one of the first US "hefeweizens" I've smelled that has given me hope that I'm actually about to taste a traditional hefe.

Taste: Tradition confirmed. This beer billows with banana and bubblegum esters, atop a tastefully understated mix of clove and coriander. While nothing particularly stands out, that's not exactly a bad thing - this actually drinks like a hefeweizen.

Mouthfeel: Light while bordering on creamy, this is a quaffable brew!

Overall: I am quite pleased to have found another US version of a hefeweizen that is not a pale wheat ale with a misleading title. Will definitely repeat.

Sampled yesterday on 1/25/15. Bottle chilled down to 36 degrees F in my beer cooler and poured in to a "CHEERS-BOSTON" handled glass stein.

Pours a hazy honey in color with a thin white cap. Some decent lacing is seen when sipped that sticks to the sides of the glass. The aroma is of yeast and grains for the most part. More going on with the taste as there is some vanilla, clove and hint of banana also. Smooth to drink and goes down easy with no harsh or bitter aftertaste. Medium-bodied with perfect carbonation. A tasty brew!

I do not eat bananas. It is one of the few foods, and the only fruit I can think of, that i truly do not enjoy. Yet, with this beer, I found the strong banana flavoring incredibly enjoyable. The pour is a little disappointing, with little head and a pale yellow color that I found unpleasant before tasting. However, I loved how it felt, and the smell and taste were very good.

Many solid reviews have already been done, so I'll leave it here. I just wanted to chime in and note that I did not find the banana to be too strong, I loved the lightness of the beer, and it came across as a good, traditional weiss beer with a good balance of flavors -- good stuff!

decent beer, but this is a far cry from the best beers i have had from these guys. its a little thin and flat in the glass, and it shows in the mouthfeel too. i usually like a brightly carbonated hefe with some body, and this is neither of those, which really hurts it for me. the flavors are nice though, the yeast is subtle but still distinct, and the grain base is light enough to make this an easy session beer, especially with an abv under 5%. others have said this is overly yeasty, lots of esters, spice, bubblegum, all of that. i disagree, as my beer (draft) was pretty minimal on all of that. its flavor and yeast complexion were not the issues, it tastes fine, its the mouthfeel that lags in this one for me. still, i find their beers compelling and interesting most of the time, and this doesnt hurt my overall impression of two brother much, it just needs some bubbles. a nice food beer as it is though.

Poured a cloudy golden yellow body with two fingers of rich fluffy white head that stuck around. Very true to form for a hefeweizen, quite nice. Scents of banana, clove and citrus zest, alongside a heavy hit of bubblegum. Overall impression of aroma is of a nice hefeweizen. Much more balanced towards banana and clove, but with a nice bubblegum presence. Very nice. Flavor begins with a hit of banana, mingling with a large amount of bubblegum, perhaps too much and a nice clove spiciness. This moves into a middle that is very bubblegum forward, with a medium high level of clove and banana to balance. Finish is lightly dry with notes of banana, bubblegum, clove and a hint of tangy wheat. Aftertaste is banana, clove, grainy malt and light bubblegum. Overall impression of taste is of a decent classic hefeweizen flavor, nice, but with a bit too much bubblegum. Mouthfeel is light bodied, almost watery, with high carbonation and a smooth, creamy feel. Overall impression of mouthfeel is of a classic hefeweizen. Quite nice and true to style. Overall this is a fairly good hefeweizen. It is true to Bavarian style, unlike many US hefeweizens and not bad. Just a bit too much bubblegum. Still not bad.

I used to live walking distance from the brewery, and this was always my favorite Two Brothers brew. Everyone else has pointed out the flavor qualities, and they're on point. I think many have rated it a bit low, but I understand we all perceive flavor differently.

As hefeweizens go, it's probably tied with a Hacker Pschorr (tap, not bottle) in my book.
As always, many reviewers get their jollies by trashing any beers or styles they don't particularly care for, so take those with a grain of salt.

Good stuff.

Pours an effervescent amber & pearl white head. Average head retention & lacing

S: Juicy fruit & cloves , white pepper

T: Follows the nose, a little white grape & a little Band-Aid up front. More juicy fruit & a little bit of cloves as this warms, faint hints of persimmons. Finishes fruity & with juicy fruit & cloves

MF: Medium bodied, light carbonation

A nice take on the style, not top shelf, but not too far off...

Appearance - Cloudy, light-amber, with a golden yellow hue. Looks like foggy urine. Not the most appetizing color for a beer, but I'll take it. Looks heavily carbonated too.

Smell - Smells like beer - the stereotypical smell one would equate to beer. Grainy, subtle hints of aromatic hops, but not a lot to say.

Taste - Tastes heavily grainy, not as bitter as evident from the carbonation, but has a strange, smoky aftertaste to it. Not bad, but nothing special.

Mouthfeel - The heavy carbonation stings a bit, and that's probably the beer's only glaring issue.

Ebel's Weiss is nowhere near the aesthetically sublime and delectable qualities set forth by Two Brothers' Domaine DuPage. It's my first Hefeweizen beer, but if this sets the course for the style, I'm not sure how active I will be in exploring it.

12 oz. bottle with a best by date of... tomorrow! Yikes, I should check dates before I buy things, but I'm getting this one just in the nick of time. Aggressively poured into a weizen glass. Hazy straw body with absolutely no head to speak of. My initial reaction is a bad bottle, but other reviews seem to say the same. A ton of bubbles rising up and only the thinnest layers of bubbly lacing.

Aroma is very yeast-forward. Bubble gum and cloves with just a touch of banana. Light wheaty aroma and a touch of spicy, earthy hops.

Flavor is mostly clove, banana, and vanilla. Touch of white pepper. Slightly spicy hoppy finish, but overall very thin flavor.

Light bodied and highly carbonated. A little creamy, but far less chewy than most hefes.

Meh. This is a very unsubstantial and underwhelming beer. Actually, kind of disappointing considering how much I like Two Brothers. All the typical hefeweizen flavors are there, but most of them are completely sedated. I'll stick with a Munich hefe or a SN Kellerweis next time.

On draft at World if Beer in Tioga. Highly recommended by the waitress. Pours slightly cloudy yellow with a fluffy white head as expected for the style. Aroma is banana, clove, wheat malt, spicy and grassy hop presence. Flavor follows he aroma closely with big banana and clove notes on top of what is a slightly watered down wheat malt base. Could use a bit more flavor punch. Body is light with adequate plus carbonation and a smooth mouthfeel and finish. Overall all the hefe flavors are there but there's something missing from this that I can't put my finger on. Nonetheless a solid brew to have on a hot and humid Florida day out on the patio.

It is another of the ongoing series of interminable snow days and as such, I am continuing to clear out my backlog of beer. The upside is that it includes a decent depth and breadth, allowing me to do horizontal tastings, among other things. Right now, it is Two Brothers' turn to be followed by collaboration beers.

From the bottle: "With nice malty sweetness and a soft aroma of clove, vanilla, and banana, this German-style hefe weizen is unfiltered for a glowing orange haze."; "Two Brothers is a craft brewery on the outskirts of Chicago that specializes in rare and seldom-brewed beer styles. The two of us - Jason and Jim Ebel - strive to produce the very best beers available anywhere."; "We hope that you enjoy them as much as we do!"

I had no compunction about stirring up any lees that nay have formed during this beer's storage. As such, I inverted and righted it several times, then placed it back in the reefer to allow the carbonation to settle back down. My heavy-handed pour created a finger of dense, off-white head with moderate retention. Color was, as advertised, a cloudy yellowish-orange (SRM = >9, < 13). Nose was more banana than clove and I could not discern vanilla. It is precisely the banana esters that I do not like which leaves me cold about this style. it is actually possible to bring out the clove esters by cold-lagering the beer, but most places do not have the tank space, inclination or time to do it this way. Mouthfeel was medium and the taste was banana with vanilla. Hey, what happened to the cloves? Aha! They reappeared on the finish, giving it a crisp dryness. Not bad, but just not my cup of tea.

Odor: Very floral and wheat like, maybe a touch of vanilla

Pour: Golden blonde color Light Head, dissipates quickly, unfiltered or very lightly filtered. Faint lacing. Served in a Hefeweisen glass

Taste: Tastes just like it smells. Rose or lily type taste. Not sweet flowery but floral. Secondary faint taste of vanilla with a mild wheat taste. Slight bitterness at the finish. Touch of light hops.

Opinion: Nice beer. Two Brothers is a great brewery that likes to experiment with various beer styles. This is definitely an American hefeweisen. I notice the difference between American and Belgian Hefeweisens is that the American style seems to imitate a general wheat beer where as the Belgian want to work at creaminess and banana overtones. I think this to be a characteristic of the wheat used but that's just my thought. Someone smarter than I am probably knows the real answer. Definitely an interesting beer though. I have had beers that smelled very floral, but this one actually tasted of actual flowers. Definitely a beer you could drink a few of.

A: Pours slightly hazed, almost clear pale yellow color. A small white head forms and sticks around as a cap. Light lace is left.
S: Banana, clove, spice, baked bread. Not bad, the banana and clove dominate.
T: Again, big banana bread and spice flavors. That is it. Pretty standard, but enjoyable.
M/D: A light body. At first, spritzy soda like carbonation. That dies down fast. A bit thin and lackluster after the carbonation dies down. Easy drinking, and something you don't really have to think about. Which is a good thing IMO.

Standard and easy drinking. Nothing more, and really nothing wrong with that. Certainly not close to my favorites of the style, but still enjoyable for what it is.

On tap at the brew house: Hazy golden with nice white head that dissipated too quickly but into a thin cap. The beer had a nice wheat aroma, not much else...could have been a little more bold. Good flavor, wheat, banana, as expected. Light feel, good carbonation, smooth and easy to drink. Overall a good beer, but would not consider it a go to Hefe.
