The classic Belgian-style ale known as the Saison is no stranger to our Scratch Beer Series. While the Saison has stood the test of time and endured as a distinct and respected beer style, we decided to add a bit of pizzazz with this latest interpretation by incorporating an experimental hop variety. Known only as “871,” its floral, citrusy and herbal attributes work extremely well in the context of traditional farmhouse ales such as the Saison. The use of French Saison yeast lends a silky texture and dry, champagne-like finish, two hallmarks of the style. The result is a mouthwatering Saison with a complex aroma profile supported by a sweet malt backbone and surprisingly rich, velvety mouthfeel.

On tap at Keenan's in Irondequoit, NY.
Pours a golden yellow, almost opaque, like sunshine. There's a one and a half inch head, and a small amount of lacing.
Smells super clovey and banana-forward, almost like a funky hefeweizen. I get a big dose of citrus, tons of orange juice really.
This tastes pretty good for about 4 oz, then gets overbearingly yeasty. So much banana, clove, and fruity esters, it just gets tiring. I wish they dialed the yeast back, and emphasized more of the citrus hop flavor, which is really nice, very orangey.
This is medium bodied, slightly full in the mouthfeel, with a lower level of carbonation.
This is alright, but not without problems.

A - Pours hazy golden yellow with a nice one finger tall white head, quickly dissipating down to a small ring around the edge, leaving small trails of lace on the glass.
S - Smells of black pepper, bready wheat, earthy rye spice, dash of lemon rind, bit of herbs and some light floral hops.
T - Starts off with the spicy rye and pepper quickly being joined by the chewy wheat, herbs, lemon peel, faint hint of must and some dulled hop bitterness. Finish is pretty chewy with some spice backing, not lingering for overly long after consumption.
M - Medium body with moderate carbonation. Chewy, spicy feel makes it a little hard to consume in large quantities.
O - An ok saison I guess. A bit too spicy and not enough musty farmhouse. Worth a shot but still plenty of room for improvement.
