on-tap @ Elysian Brewery.
taster glass.
from notes.

Hazy pale yellow, thin white head.

Lemony, grass, wheat, coriander are all present in both the nose and taste.

Medium+ body from the wheat, prickly active carbonation.

A good example of the style, something I would enjoy having a couple glasses of on a warm afternoon.

Draft at the brewpub in Seattle.

Pours a hazy golden yellow color with a 1.5 finger frothy white head that slowly settles into a lasting ring. Streaks of lace left behind.     Very dark for the style.  Looks like a berlinerweisse.

Like most of their beers, there's a strong yeast presence with lots of bread in the nose along with spicy coriander, pepper and lemon zest.  Herbal with lemongrass standing out and subtle banana character from the yeast. Smells prey complex.

Fuller bodied than expected with a complex flavor profile. Slightly tart with a nice balance of bready yeast, banana, sweet citrus and zesty spice.  Lots of ginger, coriander and clove up front followed by bread and banana with a strong citrus presence mid palate that lingers into a slightly dry, tart finish. Complex, well balanced and refreshing.  Really good.

Witbier brewed with ginger. Had on-tap at Elysian in Seattle.

Pours a creamy lemon yellow hue, with pronounced and very full haze. Head is white and forms a firm if filmy ring. Looks very good, and very suitable for the style.

Nose is pungently weighted with ginger and not much else. There's a touch of citrus fragrance lurking underneath when you look for it, and a bit of earthiness, although that melds somewhat with the ginger.

Front is sweet and sour lemonade, before hints of pepper and coriander midpalate get BANG! steamrolled with ginger. Stacks and stacks of ginger. Ginger! Why all the ginger?? Finish has (you guessed it) ginger, with a rather dry bite.

Feel is light, and seems slightly over carbonated.

The ginger overpowers everything else in this beer, almost nullifying any other interest it might have. It becomes a powerful, one-note brew.

Tried White Woods Wit on tap out of a standard pint glass. The pour was clear gold color with an extremely tight head of fine white bubbles and excellent lacing.

Strong aroma of clove, coriander, ginger and cardamom.

Taste is close to a traditional German hefeweizen with the hint of banana and a little clove. However the coriander and ginger that have been added during the brewing process are evident and bring a nice dimension to this wit bier.

This beer goes down easy and the spices blend well creating a very refreshing and drinkable beer. 5.2% ABV

On tap at max's.

The beer pours a fairly light gold color with decent head retention lacing. The nose is textbook wit, with noticeable clove, honey, nutmeg and light coriander. The flavor profile replicates the nose pretty closely in this light, easy to appreciate and enjoy wit. The beer is lightly sweet, but with enough underlying spice to buoy that sweetness quite easily. Mouthfeel is light to medium bodied, with a fairly long, lightly spiced finish. Drinkability is quite good, with the alcohol virtually unnoticeable.

While nothing spectacular, I thought this a pretty solid belgian style wit from Elysian.

On-tap at the Capitol Hill location.

This beer appears a clear, glassy gold colour, with one finger of soapy white head, which leaves some decent low drooping walls of lace as it recedes. It smells of coriander, lemon, orange, pale malt, some ginger, and grassy hops. The taste is more lemon and orange citrus, wheaty grain, some garam masala curry spice, and faint leafy hops. The carbonation is moderate, the body medium weight, and a little airy. It finishes off-dry, wheaty, with some lingering lemon and ginger.

A nice, flavourful, balanced witbier. Good stuff.
