Dull copper appearance. Very thin head. The rimming left behind leaves sparse lace. This beer smells of lemon peel, must, yeast, vinegar, black pepper and dank cellars. The taste is citrusy. And acidic. Some tartness is observed. Lemon drop and misty sea water mix effectively. A little anise. Quite dry. Kind of lip smacking. Good. Mouthfeel is light on the carbonation and quite fluid. Nice brew.

Dark amber...small floaty head. Aroma is complex...fruity, cherry, almost a touch of oxidation but not quite significant yet! Tasty but not at its peak as may have been present at fresh release. Still, totally intriguing, tasty, and something I could drown a 22 oz of without hesitation....great tasting experience.

2003 vintage broken out by jedwards (thanks jonah). Pours a pale orange-gold with a quarter inch, loose, bright white head. Aromas suggests grapefruit and cork - there is a dryness to the nose. Taste consistent with nose - muted; however, some light fruit also comes out in the mix. Mouthfeel is light-medium (but closer to light) with a lively effervescence and a semi-dry finish. A great Saison. Easy drinking and really quite refreshing; not to mention that this beer has held up quite well over time.

Thanks to jedwards, I will get to try this one after all. 2003 bottle served at cellar temp.

A - Pours a light orange with a foamy white head. LOTS of carbonation. Retains very well.

S - Musty, spiced grass. Some brightness shines through, maybe a hit of lemon.

T - Light spiced lemongrass, slightest notes of tartness. Some of the Fantome barnyard funk/must comes through. Slightly dry on the finish.

M - Light to medium, right where it should be. Carbonation is right once the head goes down.

O - Another perfect example of how well Fantome can brew the Saison style.

Thanks to merlin48 for getting this one for me. Had this one while brewing in the rain the other day. I removed the cap and looked away and the cork exploded out of the bottle, easily clearing the building we were near. Glad my face wasn't over the bottle. This beer poured a straw color with a tall head that had nice retention, but didn't leave too much lacing on the glass. The aroma had a lot of orange and lemon with some slight spice and some funk. The flavor was much the same. Lots of citrus with the Fantome funkiness that I enjoy. A little bit of sour, but not as much as some of the other Fantome brews. Also some acid in there, but again, not as much as expected. Light body and easy to drink.

Appearance: A deep orange/gold with a -- am I seeing this? -- pale yellow head. That's a first. The head is massive and has great retention. Slightly cloudy. Good lace. Very active carbonation. I don't see how it could get too much better.

Smell: Interesting. A Saaz, almost pilsner, aroma explodes off the bat, with apple, orange, and honey. There's also a really odd... rainwater scent and bit of the fabled barnyard mustiness.

Taste: Woooh, that's DRY. Bitter lemon juice, spicy pepper and maybe a hint of diacetyl, which I didn't see coming. Not much sweetness, that's for damn sure, and pretty light on the spice as well. The mouthfeel is quite crisp and medium bodied. Finishes hoppy, dry and a bit bready.

Note: The yeast pour adds a TON of dimension, sweetness, fruit, and all kind of clove/corriander goodness. Wow.

Drinkability: Well, not what I expected. But quite enjoyable and -- once you get used to it -- really addictive. At $6.99, a surprisingly good deal as well.

Murky tangerine with a large and distinct head of foam. Aroma is heavily spiced with hints of orange peel, curacao, cocoa powder along with a touch of sour fruit (tangerine especially) and strawberry jam. Flavor is bursting with fruit and spice; the fruits being a blend of peaches and nectarines while the spices are loaded with orange zest (coriander, bitter orange peel), along with a suprisingly dry and herbaceous blend that I can’t quite identify. This is my 13th different Fantome beer and this has by far the most spice character. Very delicious.

Solid orange with golden traits. The head is relatively compact, and fades quickly, but bone-hued while it lasts.
Aromas of orange and lime and hay and mown grass with an oaky white vinous undercurrent.
Begins rather tart, but not searingly so. Lime juice and oak, with vague white wine hues. Parched apricots. Cilantro leafiness. Breadier as it sits, but never hugely. Granny Smith Cider. Gueuzey. Complexities drop out later, but it hardly matters. Ends dry, herbal and grassy, with loose mustiness. The tartness lingers for a while, then is partially masked by the ample yeast pour. Turns spicier with ramped-up, powdered cilantro notes, and earthier, herbal hues. However the lime and lemon drop connotations remain steadfast; they just lose some of their edge.
Light bodied with rushing CO2 upfront. Stays semi-perky throughout, but it seems to grow a bit stagnant (and quasi-heavy) by the end.
Fans of lambic will find some intrigue here. I did.
It's not one of Fantome's premier offerings, but there is a good deal of flair here.

four inches of foam came pouring out of this one and then easily doubled in size, never fully coming back down. Rich side glass lace and tons of carbonation then engulfed it quickly. Very nice hazy golden yellow in color.

The aroma was charged with spice, it was so carbonated it was literally tickling my nose as it went by. Lots of light fruit, grain, touches of grass and peppery like notes along with a touch of sour, the flavor was more of the same and was very nicely done. No hint of the alcohol here, rather a finely blended, and very light and airy feel to it. Sloshing it around created that coveted silky feeling of foam in the mouth. This was very good. Lots of light citrus flavors bouncing around and a very dry finish, a touch sour but not really, Very earthy in nature, and yet very light with a nice light grain base and a wonderful champagne like finish

Served in a trappist glass around 12 celsius: Very cloudy yellow body with orange, almost brown tones, like a dirty river's water, muddy. Fully diminishing white head unfortunately. Aroma is bold hay, moderately malty, rather sweet, lightly yeasty with notes of orange, dust and coriander. Sweet fruitiness like a passion juice, citric but also weizen-alike acidity. Notes of dust, citrus, cherries and blueberries. Once again, Fantome brings out a great beer which I definitely had to try once though I wouldn't seek it out again. The first of an incommensurably huge six-pack courtesy of Nexxus!

2004 bottle opened on 7.27.12

A - Pours a slightly hazy amber-orange with a one inch off-white head that fades very slowly.

S - Green apples, funky, slight oxidation is present.

T - Sour green apple, subtle barnyard funk.

D - Surprisingly good carbonation with a lighter body. Mild oxidation.

O - 8 years old. Nice funk and apple taste. Oxidation doesn't really hurt it.

The beer poured crystal clear pale golden with a white and frothy head that refused to fall but coated the glass.

The aroma was slightly citrusy with notable belgian farmhouse yeast character. A slight spiciness was present and a notable earthiness existed in the aroma. The spiciness enticed to explore further. The spicy aromas were lemon and lime more heavy on lime than lemon.

The flavor was slightly sour and acidic with a definite earthy presence. The spice was present yet restrained. The sourness at first seemed to be a detriment, but later as the beer warmed it enhanced the complexity. The fruit presence was citrus and most notably lime followed by lemon.

The finish was dry with just a slight acidity lasting with some earthiness well into the aftertaste. The finish had a slight chalkiness to it as well. The body was medium and the carbonation was just a smidge low.

750 ml corked and capped bottle. If I had rated this beer on the first sip the rating would have been much later. By a few minutes in my palate had adjusted to the beer and actually found it quite interesting.

Bottle, first batch, @ Ebenezer's.

Pours cloudy dark reddish-brown, big off-white head.

Aroma is a hint of brown sugar, sour green apples.

Taste is a quick initial hit of brown sugar, quickly overtaken by a fresh soft green apple sourness and hints of barnyard. Hint of very earthy hops poke through a good way into the mild, sour finish.

Soft but crisp carbonation over a medium body.

Been holding on to this for a long while, close to 8 months, waiting for an evening with friends to share it with. Yeah for friends, as we poured this out and smelled it right off the bat. However, and first most, lets see how it looks as the color is a dull peachy orange with somewhat of a murky glow to it. Once the last of the bottle is emptied it becomes much more clouded and yellowed. Not much action in the form of foam though. Just a breeze of large bubbles loosely float about the top for a small breif minute. Minimal lace in a few light, thin strings and some dots.

Ahh, the aroma, Fantome's usual high ended citrusy funk with a twist of old white grapey sourness, spicy salts and peppered herbs, and one large lemony barnyard fart on top.

Taste is a firm yelp of deep, darkened sour lemony goodness backed by some funky touches of yeast, floral dried herbs, crunchy spices, and a slow sea salty pale malt stale cracker moody backing. Quite tangy and loud in the mouth with a big but well tamed sourness that wrangles the tongue into a quick pinch of soured, dulled lemon, weird other tangy citrusfied funk of old, over ripe stuff , just a drizzle of barnyardyness, and a buzz of yeasty fluffy dryness closes out the finish late.

The body is a bit low and under a mediumness and not as bold as it probably once was. Maybe due to age? Not sure, but it seemed to be a bit underwhelming when going with other Fantome goodies that have that zip of boldness, malts, and buzz of yeasty girth.

I liked that this seemed tamer and a bit more mellow then I'm sure it once was when fresh. A fun tangy, soured ale to be much like other Fantome brews.

Cork is extracted with a pop, and a waft of smoke.
Pours with visible carbonation into the tulip glass, with 1/4" of foam capping the clear amber Saison. Tiny champagne bubbles rise through the high-clarity liquid.

Aroma of overripe fruit, with a metallic mineral note at first. The bottle is 2 years old at least, so this could be attributed to some degree of oxidation.

Initial taste of mildly tart fruit (lemon rind) and malt/grain, most likely the Spelt listed as an ingredient. Mild Gueuze funkiness. Dry earthiness is fleeting in the finish. Carbonation enhances the mouthfeel, its understated but keeps it velvety.

One bottle is no problem in a sitting, this is a nice seasonal that may be best enjoyed in the springtime.

Had on from a bottle at Ebenezer's Pub in Maine. Poured into a chalice. Served cool.

A-rusty, burnt orange body and an off white head. Rings nicely.

S-hay, rust

T-sour, citrus peel, fruit stone,

M-medium, somewhat gritty

D-nice but not the best in this category. Would pair nicely with food. I would drink this beer again.

Pours a cloudy orangy color, some carbonation, the head fizzles away quickly, very light lacing around the edges. Scents of yeast, malts, slight hops, spices, apples, and grapes. The taste is slightly tangy, slightly bitter, citrusy, with a nice dry finish. Medium body, a well rounded/complex brew. Alcohol content is hidden very well. Very drinkable, this is a totally different kind of saison compared to Saison Dupont. Highly recommended will buy again if available.

Pours a medium golden with a white frothy head that takes a while to settle. Pretty good lacing. The smell is fairly faint, there is a definite delicate sourness and a pretty floral aroma- hard to define, but its not hoplike, more like an alpine meadow. The taste and mouthfeel are light, crisp, and lemony sour with a spicy coriander like aftertaste. This one is not acetic really, its more like there is the tiniest hint of verjus blended in. Lemon cream on the finish. A little lighter and spicier than some of the other Fantome offerings. Refreshing, and great on a hot day, but lacks some of the complexity of the best that Fantome has to offer.

Pristine tangerine with fewer bubbles than I'm used to seeing in a Belgian saison. No surprise that the cap is thing of beauty. The pastel orange foam is a little too firm to be called mousse-like, a characteristic that allows it to persist seemingly forever. Very little lace graces the glass and even less manages to hang on.

I don't drink beer from this brewery as often as I'd like, so it's hard to remember what each one smells like. It seems to me though that each offering's nose is slightly different (and very good), while retaining a 'house similarity', for want of a better phrase. This one is mildly farmhouse funky, warmly spicy and a little herbal.

I wondered how a wheat saison would taste and now I have my answer. La Gourmande is impressively sour while retaining the spicy yeastiness and orchard fruitiness that Fantome is known for. Each sip is an exercise in puckeriness and acidity that would make many a Flanders red proud. In fact, I wonder if this beer uses a different yeast strain since it's hard to believe that this degree of tartness is completely wheat-related.

To be more precise, spelt is the grain used (epeautre on the label), not the typical wheat that most wheat/wit/weizen beers use. While it's a simply another species of the same grain, who knows, maybe it tastes vastly different when used in brewing. In any case, something is giving the beer a dizzinging amount of sourness and makes it stand out from the rest of the Fantome line.

Green apples, unripe pears and lemon zest make up the bulk of the flavor profile, as the usual yeasty spiciness takes a backseat. I'm not sure if this beer is brewed year-round or if it's a seasonal, but it seems to me to be a perfect summer beer. The body favors the lighter end of the spectrum even without a ridiculous amount of carbonation. Fewer bubbles means that 750 ml should be no problem at all on a hot day. Or any day at all.

I appreciate what the brewer attempted to do with La Gourmande. It's just that the sourness is cumulative and is beginning to wear on me now that I've entered the final third of the bottle. Less than average Fantome beer is still light years ahead of average. If that isn't the mark of a world-class brewery, then I don't know what is.

Huge thanks to Umberto for opening this during our epic night of drinking at the Goblin Pub in Pavullo nel Frignano, Italy.

Pours a very cloudy, bright golden orange color with tangerine edges and a half finger off-white head that quickly settles into a thin ring that soon dissapears. Not much in the way of lacing.

This beer has a very complex aroma with lambic, farmhouse and wheat beer notes bouncing off of each other. Lots of earthy funk with hints of barrel, wet hay and cobweb along with zesty autumnal spice, bready yeast, citrus and light fruit notes. Slight herbal/vegetal presence with lemon peel, pepper, bread and apple. Really odd combination but the nose is pretty inviting.

Medium bodied and again, very complex with hints of lambic, saison, vegetable/spiced beer and wheat notes playing off of one another. Slightly tart and puckering with a decent amount of earthy funk followed by zesty spice, bread, sweet malt, light fruit and citrus. A decent amount of sourness but not harsh or acidic. More funk than anyhing else with grass, straw, hey and wood flavor. There's also peppery spice with coriander, cinnamon and clove followed by caramel malt, apple, pear and bread. A truly unique beer. I don't really know what to make of it because it's so weird but it's very complex and quite flavorful.

A cloudy amber with a moderately-thick, creamy, off-white head. Fairly sticky, and plenty of carbonation, even after nearly a decade in the bottle. Good amounts of floating, chunky sediment, though even more is left at the bottom of the bottle. Certainly appropriate, and almost pretty.

A nice, integrated, earthy aroma. Combinations of roasted apple sprinkled with cinnamon emerges, and is quite expressive. Good amounts of earth, grass, and dried, cracking, crumbling Fall leaves as well. This smells like a Winter or Fall saison, if I'd ever experienced one.

The earth and dried leaves present in the flavor as well. The earth and leaves present a funky bitterness. Along with this, there is also good amounts of the apple and cinnamon character found in the aroma. Very drinkable. Alcohol is well hidden. As with the aroma, this has a distinctly Fall or Winter feel about it.

Medium bodied. Moderate to high carbonation. Very appropriate. Time didn't hurt this aspect.

Delicious, interesting, complex, though still not one of my favorite Fantomes--granted, Fantome is, arguably, my favorite brewery around.

A 750 ml green champagne bottle full of a golden, rich (thick) looking slightly cloudy brew with a full, rich, creamy looking head that drops to 1/4" and stays there. Very pretty.

Aroma is first a sharp organic attack, followed by a slightly sweet, citrusy and slightly spicy

Flavor is lemony/tart orange, with a nice hop overtone, and a strong alcohol attack at the back of the throat. Spiciness is there, not subtle, not overpowering. There's a lot going on here.

Mouthfeel is rich and full. I'm still fairly new to Saisons, so I don't know how close to the style it is, but I like it!

Overall a pretty tasty brew- not something I think I would drink a lot of, but on the right occasion, pretty nice. Paired it with a pesto-tomato pizza- not bad combination, where the two organic flavors play off against one another.

Lovely full gold. Large fluffy white head that settles to an incomplete cap, but erupts again with each pour.

Lots of bready malt, and a pleasant yeastiness dominate the nose. Touch of phenol and a bit of limey citrus.

Medium weight in the mouth where the copious malt combines seamlessly with the yeasty notes. Hint of hop flavor and bitterness comes out with food. Nice length. Tastes funkier, in a good way, when the sediment is swirled into the beer.

Great bottle-conditioned mouthfeel, with the sofness of the carbonation a real complement to the overall subtleness of this beer. Great to quaff in quantity, excellent with food, and worthy of contemplation on its own. Certainly Duvel-esque, but with a bit of Fantome funk. Nice beer.

A-pours a cloudy orange-golden color, has very little head that did not retain or lace well

S-has the typical belgian farmhouse aromas, semi tart, a little citrusy, not as spicey as other saisons but still nice

T-complements smell, citrus flavor is very present, not too spiced, has a somewhat bitter sweetness to the finish

M- light in body, low carbonation for a saison, moderate dry feel

D- goes down very easy, a nice saison, not my favorite one (for either the style or the brewery) but still very nice, would probly drink/buy again

Pours an opaque, earthy golden yellow with a 1 1/2" white head. The comparisons with champagne are noticable even in the appearance. It begins with a very bubbly pour.

The nose is earthy, spicy, with a tomato ketchup and hard cider edge, also a touch of yeast.

It starts alot like a geuze, the slightest hint of sweetness is rolled over by a dry sourness that gives a bubbly-champagney mouthfeel and finishes quite clean. There is a fresh baked sourdough bread kind of taste to it.

This is a splendid weekend lunch brew. It has alot of potential as an aperitif. I'm sure it was made to be enjoyed over a long and easy-going afternoon.
