750ml capped and corked bottle, firdge temp, poured into a snifter.

pours out kind of a burnt orange/ light brown color, a huge billowy, off white head, takes up more than half the glass. very nice head retention with lots of sticky lacing. some cloudiness.

initially i get some lemony citrus, maybe a touch of cherry. as it opens a bit of musty funk comes out, kind of subdued. also some toasted malt, some yeasty esters as well, phenolic. hints of dark fruits.

bitter sweet toasted malts, plum, fig, grape, berries, a bit wine like. just the slightest hints of funk. it seems like a rich maltiness is kind of hidden by the low finishing gravity, seems a little dry as a result.

a pretty high amount of carbonation, prickly on the palate, and a very light feel for 10%. some tartness.

a pretty interesting beer, a real subdued funk that makes it pretty drinkable, especially for 10%. seeing as its my first beer from fantome, i must say i am a little let down, but i wasnt really expecting to be wowed considering the other reviews. not really something i would recommend but it was a nice change of pace for me.

From a 750ml capped and corked bottle. A holiday ornament on the label.

A: Hazy orangish brown with minimal head. Decent amount of visible carbonation in the body. No real lacing left behind.

S: Light sour tart is the first thing I notice. A dark fruit aroma lingers in the background.

T: Nice blend here. Rich malt goodness adds raisin and plum to the mix. A hint of spiciness just adds uniqueness. Then the great tart character just dominates throughout. Alcohol is well hidden.

M: Puckering sourness at first takes a second to get everything in line. Light to medium body with a crisp and punctual finish. Nice and warming.

Overall I'm real happy with this beer. Havent been able to try any other Fantome beers and this one reminds me of a quad mixed with a sour. Try this if you can.

A: Pours a slightly powdery bright blood orange color with some minor sediment floating in the bottle. Visibile carbonation coming up through transparency through the bottom of the glass.

S: Aroma of rich caramel and barleywine along with a light spicy finish. Sweet with some spices and herbs.

T: Flavors of rich sweet malt, some holiday spices that are faint but present. Most holiday beers have lots of nutmeg or cinnamon. There may be a hint of cinnamon in here, but I am guessing that the spices are locally grown if not wild as I remember reading Fantome likes to do. I think I can pick up some cardamom but who knows?

M: Thick and chewy with light carbonation. syrupy almost, at 10%, I really apprecciate the body as it is full and not overly carbonated .

O: Overall this is a good saison. I prefer lighter saisons however this is likely the highest abv I have had of the style that I can think of off the top of my head. It is clearly enjoyable and while not as good as Hiver or some other Fantome saisons I have had, it is clearly different and good for the winter season.

From the green, corked 750 ml. bottle. Sampled on March 8, 2014. I had to use a corkscrew.

The pour is a slightly hazy bronze-brown with a long lasting cream colored head. A slight fog to the beer. It has been sitting for a few months.

The aroma is of dark toasted malts, pear, apple, and a little spice. A modest earthy hop note in there too that reminds me of something more boozy than I expected.

The body is medium to full. It is also smooth.

The taste has many of the Belgian malty and yeasty characteristics I enjoy. There is a kind of toasted biscuit note too. The finish tends to be dry and bitter. It lingers. It is really well balanced.

Bottle from Tipples. Giving Fantome one last chance after nothing but infected bandaids. Bottle is corked and capped. Pours very dark red with a creamy one finger off white head that stays on for a good while. Aroma of hay, grassy and lemony hops, some other floral aromatics, more farmhouse funky yeast and some light spice. Flavor is sweet up front with some brown sugar and plums but balanced by some grassy hops and funky yeast. There is light spice to this as well. This is like a Belgian Strong Dark that somehow is light and funky like a Saison. A really really interesting and unique flavor profile. Medium bodied with adequate carbonation and pretty easy drinking, but also sweet enough to be happy with a small bit. This almost redeems past failures for sure. What a beautifully crafted brew.

They only thing I have to say is it had a taste akin to sucking on dirty pennies. There were many other flavors but after every sip I would get a strong metallic flavor. The cork crumbled when trying to open this bottle and I don't know if this had an impact on the taste or if the bottle was just simply bad. For me it was a great disappointment because it was my first fantome and it was a holiday beer to boot.

a cool saison for the holidays with fantoms special yeast, which is awesome stuff thats made them famous. light rusty brown in color with a massive and lasting several inches of fluff off white head and some fish food yeast floaters. the nose on this is alcoholic and foresty, i get a ton of spruce or pine tree in this, and a small dose of roast malt. in the taste the pine is more reserved but still present. i taste the alcohol, and i like to in this style every once in awhile. 10% abv is a lot for a saison, but it works in this winter context. moderate spice and big body too. this is really well carbonated but it still feels much heavier than their other stuff. for 15 bucks I'm not sure i would buy this again, at ten bucks i would for sure. its in that zone for me, but a very cool take on winter/holiday beer.

Poured into a tulip glass on New Year's Eve.

A: amber/bronze. A huge 3 finger head that lay in state for a while. Foamy tan bubbles and formidable lacing.

S: heavenly. Fruity, funky. Belgian yeast comes through with apricots and Brett.

T: follows nose with a sweet, sensuous cascade of fruit, funk and highly carbonated sensations. Fantastic.

M: medium to heavy with carbonation to die for.

O: one of my top 10 favorites. Best saison I've had, hands down. Highly recommended.
