750 ml bottle at Delirium Cafe in Brussels, no bottle date that I can find, poured into a snifter.

A- Pours a hazy golden color with a finger of white head, nice retention and spotty lacing.

S- Funky, lots of citrus peel with a nice herbal element to it.

T- Very fruity, lots of pear, orange peel, some lemon, a bit tart towards the finish, some wheat sweetness as well.

M- Light-bodied, smooth feel, nice carbonation.

O- A nice wheat beer, actually quite flavorful and obviously very drinkable at 4.00% ABV, it's too bad we don't get this one in the US or I would buy it more often.

750ml bottle poured into New Belgium snifter
Vintage: Didn’t catch this, but it was a newer label.

From notes. Enjoyed a couple summers back at a backyard BBQ with the usual suspects in the Mile High Knight's tasting crew. If memory serves correct, I can thank André for this one. Cheers!

A: Hazy, hay-ish yellow. ¼ (white) fingernail head on medium pour.

S: Very herbal and strong. Notes of white grape skins, tart grapefruit, white pepper, touch of lemon, and cracked wheat. Interesting, but slightly too much here.

T: Taste is quite mellow compared to potent smell. Mix of herbals notes, soft citrus, and some wheat. Touch of yeast too. Nice and refreshing.

M: Light bodied with gentle carbonation.

O: Different twist for this style, but quite enjoyable. Clean. Crisp. Solid!

Thanks to Umberto for sharing this during our epic drinking session at the Goblin Pub in Pavullo nel Frignano, Italy.

Pours a hazy brigt golden yellow color with a one finger white foam head that quickly settles into a thin lastig ring. Minimal spots of lacing left behind.

Sligtly earthy, vegetal aroma with farmhouse funk, bready yeast, peppery spice, light fruit and faint citrus. Nice farmhouse character with musty earth and wet hay followed by pepper, coriander and apple. The citrus presence is there but I'm not picking up much grapefruit in the nose.

Medium bodied and much cleaner than the nose suggests. There's still a subtle farmhouse presence but I was expecting it to be a bit funkier. Slightly earthy with hints of grass and straw followed by bready yeast, zesty spice and citrus. The citrus presence is much stronger than in the nose with lots of lemon peel and grapefruit. The must and spice flavors are there preventing it from ever becoming too sweet. Well balanced and really easy to drink. Very refreshing.

Bottle at Fantome-a-thon 2012

A pale yellow color with a white head. As soon as the bottle is opened an intense skunked aroma is apparent. Smells almost Heineken-like. There is a light fruitiness and just a bit of yeast. Taste-wise, things are significantly better. Not much skunk on the palate, but good light malt flavor and a hint of lemony tartness and yeast. Some wheat flavor and a pretty easy to drink beer.

Reviewed from notes.

A: Straw yellow. Little to no lacing.

N: Intense lemon sourness, to the point where it knocks out the rest of the flavors. Green apple, lime, citrus.

T: Tastes like Thai food. Lemon, lime, green apple, mint, ginger. There's also some jalapeno pepper going on here. The nose is quite tart but the body's very much on the sweet side of the spectrum.

M: Very, very light. Like lemonade.

O: Definitely interesting, and it's memorable because of how completely bizarre it is. Saying that about any other brewery besides Fantome might shock people, but I'm guessing the rest of the beer world nods its collective head in agreement. Good enough to recommend if you're into weird, though.

Platinum with steady white head and lots of trailers of bubbles. Insanely strong funky nose: yeasty, white grape skin, and cat box, with boiled broccoli and lemon peel underneath - not entirely unpleasant but very arresting.
Candy sugar, lemon, white currants, a touch of funky in the form of washed rind cheese, then fresh chopped herbs for hops.
Citrusy end and musty rind linger. Bone dry, crisp and light.

Lemon and yeast. A more perceptive taster said this is like an old style spontaneously fermented blanche rather than the spiced, Pierre Celis-made, reborn wits. Very drinkable, but undone by a nose that's all wrong.

Just plain weird.

White label with a ghost on and not the label shown above.

Appearance: Heavily hazed, light golden-yellow body topped by a large white head. Head retention and lacing are actually quite poor for such a light beer.

Smell: Mmmmm there is a ton of lemon right off the bat. Mostly sweetened lemon flavour (reminds me of lemon sorbet), but some tart fresh lemon is also present. Other notes include: Sweet oranges, lightly tart granadillas, coriander, light white pepper, wheat, honey and a hint of funk.

Taste: The flavour leans a little closer to a regular wit than the nose, but is still dominated by lemon (both the sweetened flavour and fresh). The coriander makes more of an appearance, as does wheat and earthy yeast. Pepper and tropical fruits are also noted. A distinct musty funk is noted in the after taste.

Mouthfeel: Light body with moderate carbonation. Very easy drinking and refreshing - one of the best summer beers I have come across.

Overall: This is a very atypical wit, but delicious non the less. I would love to have a stack of this to drink next summer.

750ml bottle poured into a matching Fantome tulip. This brew appears a strikingly clear color of yellow. A finger of white froth sits atop and slowly dissolves and holds around the edge of the glass. Rising bubbles of carbonation maintain a halo effect across the surface of the brew. A light swirl agitates more bubbles from solution but fail to ever capture that initial formation from the pour.

The aroma coming out of my glass is very vibrant with lemon. It covers the whole spectrum of lemony aspects from rind to flesh and zest with even some almost exaggerated artificial lemon candy inclusion. Some sweetness is present that presents a bit of wheat-like grain to cereal inclusion that is a nice change of pace from the straight lemon character that was so bold initially. As the brew warms up, the lemon character flirts back and forth between candy sweet smelling and lactic/sour almost like a berliner weisse. No complaints here, I am loving this experience.

The taste of this brew does not disappoint. I am going to go out on a limb here and say this is one of the better, if not the best examples of a witbier I have had in a very long time. It displays a very bold lemon flavoring that is not too far off from yellow tart candy that would be a strange hybrid if you mixed skittles, sweet tarts and coriander into a solution. The first couple of sips shock the palate with lemon but as you get accustomed to it, a bit of grainy backing comes forward tasting of wheat and bready grains.

This is a light bodied brew with a fizzy amount of carbonation in the feel but it doesn't display visually the amount of carbonation it has that is most noticed once it hits the mouth. It is very crisp and easy drinking brew with a depth of lemony character unlike any other wit I have had before. For only 4% abv, the alcohol is felt down the back of the throat which makes me really scratch my head and wonder if that is accurate. Regardless, this is some quality stuff right here and something I would certainly enjoy having again.

2nd pour from the bottle thoughts:
I highly recommend you swirl your bottle before pouring. Getting some of the yeast up in suspension really produces the expected look of style and makes for an overall better blended experience. Having a little bit of yeast in the profile brings out some herbal and earthy qualities that were previously missed. It also mellows out the bold focus on the lemony aspects in both the nose and flavor.

Thanks Michael, beer was in the Fantome line-up at a recent tasting. Served in of course a Fantome tulip because why wouldn't I? This was one of the first beers of the night and quite memorable, reviewed from notes.

Beer is light yellow, really hazy, soft white head, one finger, decent retention, some lacing, moderate carbonation.

Aroma is strong lemon, citrus, almost woody, like smelling a branch of a lemon tree, really strong, almost Pledge strong.

Beer is light in body and very fruity, strong lemon / lime flavor in this beer, it is not off putting but it is definitely strong, mildly sweet, a little dry on the finish. To sum up this beer in a word, Lemon.

From 11/05/11 notes. Bottle shared by yourefragile at the mega-Fantome tasting. Poured from a 750ml bottle into my Cigar City snifter.

a - Pours a clear pale yellow color with light sediment floating in the glass, one inch of white head and moderate carbonation evident.

s - Smells lemon juice, peaches, tropical fruits, yeast, and light earthy notes. Super citrusy/lemon nose and very fruity, I love it.

t - Tastes of tropical fruit, lemons, citrus hops, floral and earthy notes, tiny bit of spice. Very good again, almost as good as the nose.

m - Medium body and low carbonation. Very easy to drink, would have liked a tiny bit more carbonation, but still good.

o - Overall a great beer from Fantome; this ranked behind the Ete and the normal Saison as probably the best Fantome I had at the tasting. Super fruity/lemon nose and easy to drink, a witbier I'd love to get more of.

Sampled alongside twenty other Fantôme beers.

The beer is hazy and light yellow hued, with a small white head and sparse lacing. The aroma brings some light spice, candied fruit, and a subtle medicinal scent. Good flavor. Tastes like fruit juice in some regards. Refreshing and light, this is a stellar example of a session beer. A lot of flavor packed into a 4% abv beer. I would definitely have this again, and would like to have a few of these in the cellar.

Bottle. Pours a cloudy pale yellow color with about 7 bubbles of carbonation, so basically flat. It smells exactly like grapefruit juice! Citric with a slightly bitterness to it. The flatness kills this for me. There is absolutely zero carb and I think this one would really benefit from it. Medium mouthfeel. Taste is grapefruit and slight peach and some lemon.

From the bottle at the De Heeren 20th Anniversary party during last week's Belgium trip. Reviewed from notes.

Served in a mini snifter.

Pours a clear golden color with a big white head and great lacing.

The nose brings a bit of very mild funk along with a nice bit of wheat and light grain. The flavor is mildly funky as well, though most of the flavor is coming from the wheat.

Really nice dry, bitter finish. Not over the top, but nice and crisp. Exceptional body.

Great brew and very different from other Fantome offerings.

Bottle poured into a snifter.

A- No carbonation whatsoever, some bubbles are apparent, murky, white yellow straw color.
S-The aroma is actually really nice, big lemon lime, grapefruit, fruity aroma, smells really tasty.
T- Could use a lot more carbonation, pretty flat, fruity floral taste, some spice, lemon grapefruit, slight sour apricot flavor.
M- Light mouth feel, really under carbonated, smooth drinking with a clean finish.
O- This beer would be really nice if it had more carbonation, really nice fruity grapefruit aroma and taste to it, but too under carbonated for my liking.

Part 2 of the Fantome tasting. Label is black and white with basic ghost on it.

Pours still. No head had all... just a few bubbles. Color is a pale hazed straw yellow.

Aroma: A lot of grapefruit. Wheat and malty flavors. Reminds me of fresca. Lemon-lime citrus. Very unique.

Taste: A lot of spice. Grapefruit citrus, grapes, and lemon lime. It has a herbal taste to it. Some bready malts. Very yeasty.

Mouthfeel: Flat and uncarbonated. Light bodied with super low carbonation, if any. This part kills the beer for me. Ends pretty clean though.

Overall, the smell of this was awesome and the flavor was really good, but it was just a bit flat for me. Straight up fresca goodness. I did enjoy this one.

Strange beer produced by Alex.

A - Golden, hazy beer with a foamy head that didn't leave much on the sides.

S - Smells like marijuana, wild catnip, a little mint (which is also like catnip), hay, some citrus. Just kind of strange, but not unpleasant.

T - Not as much of the green stuff in the taste, as the malts come forward a little bit more. Actually fairly crisp and refreshing. A little more lemony citrus on the tongue with some nice floral notes.

M - Soft carbonation, light bodied, slightly drying finish.

O - For a weird beer, as in what's up with the weed, this was refreshing and easy to get down. Didn't like it as much as some, but it was good.

A - Pours a mirky gold color, large bubbles, some whisps on top.

S - Marijuana, herbal, grassy, lemon peel. A very unique nose, to put it lightly. That said, it smells very refreshing and crisp.

T - Lemons, herbs, floral notes. Reminds me of summer. Like the nose, very unique and enjoyable. Not as much marijuana as the nose, but still, very cool.

M - Light, good spritzy carbonation, refreshing, dry finish.

O - Really cool beer. Very unique and something I really enjoyed. Too bad it's a tough beer to locate or I'd get more of this. Recommend.

Bottle purchased at the Alvinne bottle shop by my wife. Minimalist black & white label with a ghost on it (not as pictured). Served in a Russian River tulip.

A - Pours with a big white foam that settles to a thick cap, leaving minimal lace. Hazy pale yellow body.

S - Massive aroma of weed, weeds, dandelions, herbs (catnip?), skunk, sharp lemon peel, and as it warms up a bit sweet malt emerges.

T - Taste is a lot milder than the aroma, with only faint weed and herbs and a bit more sweetness. Some yeast and light lemon peel in the finish.

M - Very light body, surprisingly low carbonation, quite refreshing and quite appropriate for a 4% beer.

D - This was kind of awesome in that peculiar Fantôme sort of way. It's like Dany replaced the coriander and orange peel found in traditional witbiers with marijuana and lemons. We crushed the 750ml bottle - wish this one was sold stateside (or is it? I've never seen it).

Hazy yellow with a huge head. This beer smells like straight up canibus and grapefruit. Slight musty aroma (typical of Fantome), but the canibus/grapefruit aroma dominates the nose. Flavor follows the nose upfront, but it finishes with a strange floral almost peppery flavor. Dry finish and leaves you wanting more.

Appearance: Looks like fantome, hazy amber-orange. Pours with a huge, craggy head.

Smell: Lots of off funk, mostly diapers, but also some spices (mostly pepper), wood and herbs.

Taste: Again with the wet and dirty diapers, hope I didn't get a bad bottle. ALso loads of pepper and herbs.

Mouthfeel: Full and creamy, excellent in this department

Drinkability: Taste makes it hard to envision drinking more than a glass or two of this, although I appreciate the low 4% alcohol level

I later had a second bottle of this that was much better, lacked the dirty diaper notes. I've bumped the score slightly.

A - Hazy pineapple/piña colada gold color with a small bubbly white head that disappears fast leaving some thin patchy lacing.

S - Huge amount of grapefruit jumps out of the glass. Some orange citrus, pineapple and tropical fruit. Very light wheat and spice aroma. Strong, intense, and enjoyable fruity aroma.

T - Similar to nose, but the fruitiness is a bit more subdued. Still a lot of grapefruit, orange, and lemon citrus. Gives off some tart flavor. Some floral/herbal hops along with the wheat base. Slight weed aroma. Hints of pepper in the background.

M - Light to medium body with a good amount of carbonation. Crisp and fizzy with a touch drying finish.

D - Very drinkable with a nice mix of different citrus and fruity flavors paired with the wheat and pepper taste of a typical witbier. Easy to drink and refreshing.

Notes: A nice witbier with plenty of citrus. Packs a lot of flavor, especially for the ABV. Definitely not like a typical witbier, but a very enjoyable. Another great beer from a great brewery.

Had a few bottles of this rare Fantome offering at Deep Ellum this past weekend.

Pours a hazy golden color with a good amount of head. This is a rarity for a Fantome offering.

Beer had a strong Orange peel smell too it.

Taste was outstanding. Crisp and light. Lots of floral and even more grapefruit in the taste.

Beer is carbonated well which gives and excellent mouthfeel.

At 4%ABV, I could drink four of these by myself.

750ml bottle picked up at the Delirium Café in Brussels, I'm not sure how recently it was made, as it's never seen stateside. The label is not the yellow one pictured, but a basic black and white with a large Fantôme ghost. Poured into my Supra tumbler after the cork limped out with no pop, Fantôme Blanche is generally still, some lazy bubbles stream up from the bottom, and larger ones coat the walls of the glass, providing a deception of spritz. The beer is a pleasant hazy straw yellow with no head or lace.

Smell is amazing, floral and citrus potpourri, with just hint of musty, sour wheat, but overall on the restrained side, but very appealing.

Taste is very nice, like the nose, it's floral (lilac) and citrus (lemon lime), subtle. A very well done wit, tasty and refreshing.

Mouthfeel is dry and light bodied, but it's sorely lacking spritz.

Drinkability is high, as this is a very tasty wit. Properly primed, it would be perfect. I love Fantôme, and this is a great example of why.

This pours some serious white-gold with some nice foam. Beautiful beer.

Nose is of big white grapefruit and orange blossom. I was floored. Just an incredible nose.

While there was white grapefruit overload on the nose, there was little to be found on the palate. Instead, a clean, smooth flowery hop character along with some tartness.

Perfect mouthfeel. Plenty crisp, but in no way overcarbonated.

I had no idea this was only 4%. Wow, if only I could get this more often. This was tons of fun to drink, and I'd wager polishing off the 750 myself would have been no problem at all. This was one cool beer.

Poured from a 750ml bottle into a large cognac snifter.
The color of autumn sunshine . . . if you could only really bottle such a thing. LOL! Medium head which dissipated slowly into lacing at the top. Once the beer settles, the "sunshine" look of it kinda hazes over a bit with more of a white element.

The nose? WOW! Think of your nostrils being pummeled with a mallet made of grapefruit. Intense citrus and definite grape fruit aroma is almost overwhelming, but in a very, very good way. Never had anything like it

Taste: As I go for the 1st sip, I'm almost squinting my eyes, expecting to drink a form of carbonated grapefruit juice. And there was the magic of Fantome: not a grapefruit note to be tasted in the drink. Not a one that I could pick up at least. Great spicy taste, some citrus back notes, a bit of vanilla and oak as well, but no grapefruit. An incredible beer!

Mouthfeel & Drinkability: This is listed as a witbier, but I felt it more as a saison . . . almost bordering on a sour. That said, the drikability is definitely up there with witbiers. This could easily be the 1st of many glasses for me. Smooth and very tasty.
