Big thanks to BdubleEdubleRUN for hooking me up with a bottle of this. Poured into a matching Fantome tulip, this brew appears a very attractive lightly hazed amber orange color. 2 fingers of off-white froth appears and slowly recedes to a thin film across the top.

The smell is fruity with hints of lemon mixed with cork and must. Quite a bit of earthy elements like Brett and horsey character of barnyard dryness. Across the board this is a very balanced ad enjoyable smelling brew.

The taste is lightly tangy with lemon before switching to a toasty sort of caramel grainy quality. It is earthy with barnyard flavoring expected of a saison. There are mild notes of clove and pepper mixed with musty cork and earth. Some fruit like pear or apple skins and spice. Toffee-like aftertaste includes a touch of oak.

This is a medium bodied brew with a modest level of carbonation. Visually it looks low in carb but it is fizzy in the mouth/feel. Superb drinkability with well integrated/hidden alcohol. Very well balanced brew that I feel like I could drink all day without getting bored with it.

Note: Based on some buzz in the forums, I think this may be an infected/slime bottle. But it was still good, so I'm posting my review.

Review adapted from notes taken 12-12-11

Appearance: A pale orange gold, pours like a heavy broth - a very strange sludgy-ness, considering how light it is - leaves something akin to a weird film rather than a lacing, as if there were fat and/or oil in the beer - cloudy, slimy [2014 bottle - still hazy, but not slimy looking, impressive carbonation, score upgraded to 4.00]

Smell: Funky at first, but becomes delicate as it warms - some hay, barynard, horse blanket - very funky, but in a very mild way [definitely smells like a Fantôme beer, with some musty funk, yeasty weirdness]

Taste: It's like a funky malt smoothie - light malts, grains, light bread - a little tart - some light fruits - fruit seeds? - lemon, some grassiness - flowers, minimal bitterness - very weird, but good

Mouthfeel: Hands-down the weirdest mouthfeel of any beer I've ever had - it's like chewing on jello - it's so heavy, it's seriously like a smoothie - very smooth, I'm not sure even how to comment on the carbonation [non-slimed bottle has a medium bottle, smooth, nice carbonation, floral finish, score upgraded to 3.75]

Overall: One of the most bizarre beers I've ever had

This really felt like I was drinking a smoothie. I practically had to chew it. But despite the unexpected mouthfeel, it was a good saison. At the very least, Fantôme beers are consistently interesting. I would buy this again. [Non-infected bottle was definitely better, overall score upgraded to 3.75]

Update, 5/19/14

This bottle confirms that the 2011 bottle I previously reviewed was, in fact, a slime bottle. The mouthfeel on this is dramatically different, but the smell and mouthfeel are more or less the same. [Updated comments above in brackets]

App- A bit of a hazy double colored color of orange and yellow with some gold mixed in. A small head formed on a small pour which was nice to see. A couple lines of lace as well.

Smell- A few combined scents in the glass. A good bit of classic Fantome yeast and add to it a bit of grainy earthy floral notes.

Taste- A little bit of dry citrus character with notes of light spice and earthy yeast. A little bit as most are saying similiar to a wit bier.

Mouth- A pretty unique dry complex finish. Wasnt a fan of the ending combo of fruit/spice but I liked the beer overall.

Drink- A tasty beer with a lot of highlights. Overall the feeling I got was with Fantomes I should stick to the basic varieties.

750ml green corked and capped bottle - No date but this comes from the most recent batch, poured into a tulip...

Pours a cloudy light orange, dark yellow with an abundance of fluffy white head which sticks around for a while, lots of lacing is left behind...

Smell is pretty subtle, earthy and dry with slight Fantome funk. A bit of fruity sweetness can be detected after a few sniffs, but this one leans mostly towards the grainy/earthy aromas, actually smells much like a Witbier...

Tastes much like a Witbier as well, subtle sweet and citrus fruits up front with lots of earthy, dry bitterness in the finish. Grassy with just hints of some funk.

Medium bodied with moderate carbonation, has a smooth and coating feel, dry bitter finish.

A- Wonderful looking saison. Cloudy golden orange with a thin layer of head that sticks to the snifter and leaves a layer of foam coating the side of the glass.

S- Very mellow earthiness, light citrus, minerals, a tiny bit of funk.

T- Strawberries, lemons, pears, apples, light if pleasant spice notes and a lightly sour medium bitter finish make this very well balanced.

M- Medium high carbonation and a robust mouth coating finish. The bitterness helps it drink very cleanly.

O- One of the better beers I have tried from Fantome, though they have all been interesting if not very good.

Poured from a bottle into a Chimay goblet.

Appearance: Pours a very cloudy orangish yellow with a finger of fluffy white head. This beer has some good retention.

Smell: Smells like a very fruity saison. Pears and melon along with some herbal tartness. Just the right amount of sweetness to go with the other smells.

Taste: This one is good, but not as fruity as the smell would have suggested. Light and herbal with some yeast spice in the finish.

Mouthfeel: Medium body with a lot of aggressive, tingly carbonation. The finish is quite dry.

Overall: This smells fantastic and tastes really good. I wish the melon notes came out more in the flavor, but it is still really good.

.75L bottle into a Duvel tulip. "Lot No." and "Best before end" both blank. Nice pop on opening.

A: Big, creamy head on top of a hazy, near-orange body. Great retention of the head, like a souffle. Can't see through it, very cloudy.

S: Pretty classic Fantome. A bit sweet, some lemon, and a nice tangy sweat smell. It says 'brewed with spices,' and while I get a generally sense of that, I can't pick anything out. Probably coriander and grains of paradise...it feels a bit Witbier-like. Grassy, a bit. Good nose.

T: The taste overpowers the subtle nose, in a good way. Lots going on, and very much in the Witbier vein. Orange starts off, then some bready yeast, and then a bitterness not just from hops. Some green grassiness to match the nose. Pretty good.

M: Relatively thick, despite good carbonation. The body's heavier than expected. Not a bad thing, and it carries a lot of flavor, but still. Got more chew than anticipated.

O: This is pretty tasty, but it's a bit different than I expect from fantome. It's got some usual saison notes, but it deviates a bit far from the usual bill. Not bad, but I'd rather have regular fantome over this.

Poured gently into a big tulip. Darker than I expected: amber and very hazy. Big fluffy offwhite head that doesn't go away. Lots of floaties mixed in with that haze.

The nose hits you immediately with the classic Fantome funk. Some citrus (lemon, orange zest) in there as well. Aroma also has a very distinct grassy, earthy bitterness; almost like wet dirt?

This is a rather dry beer, but the malt profile in this beer gives way to a sourdough-like bread sweetness. Lemon/citrus characteristics come through in the flavor and create a mouthpuckering, pleasant sourness. Lots of yeasty spice/funk in the finish. Very creamy and dry beer. Am I drinking a sour farmhouse or a tame gueuze?

Solid offering from Fantome. Worth every penny.
