750 mL at just-under cellar temperature poured into a wide-mouthed wine glass.
A - Pours a hazy, golden yellow body with a frothy yet delicate head formation.
S - Lots of fruit: apricots, peaches, and clementines. Slightly floral (jasmine? chamomile tea?), and a touch of spice (coriander, fennel pollen). Just a touch of basement funk. Everything comes together well, and the nose is delicate and inviting.
T - Beautiful progression: starts out sour and tart, then moves to a juicy fruity sweetness, then the finish is back to sour. I'm back to the floral notes that I picked up on the nose, still jasmine and chamomile. The finish is incredible - I'm still tasting this beer minutes after I've swallowed.
M - Spot-on carbonation. This brew is light-bodied, but the depth and complexity of flavors would have you think otherwise.
D - What a beer. I'm amazed by how floral this brew is, but also by how well-tempered the floral character is. It's just right. I'd love this beer with a creamy fresh-ripened goat's milk cheese. Yet another reason to love the Fantome beers.
