Hazy, saddle leather brown with an amber edge. Cottony, dirty honey cream head that laces well. Smells of fresh grass and mown hay. Light toasted caramel notes. Rusty barn door hinge; faint tart funk and some cob webs for good measure. Complex aroma and good, but not overly aromatic. Taste is lightly toasted caramel-wheat tang. Grass, lemon-grass. Pepper notes. A little fruit (plums?). Acidic tartness escalates to a dry, bitterish finish. Maybe some yeast in there. Medium-bodied, sparkling mouthfeel with a hint of minerals. Me gusta.

1993 vintage - a 21 year old saison. I was not expecting much of this but decided to pop and share it at the recent Bullfrog Grrrz release. The cork came out fully intact with a soft pop. The brew pours a prestine polished copper to gold color. Surprisingly brilliant in the looks with a persistent white frothy head that leaves patches of lace on the glass. By looks alone, you would never belive this beer is that old.
The aroma contains classic Fantome funk at first and immediately turns to an unmistakeable note of dampness - mushrooms mingled with cardboard-like and papery oxidation. Some caramel and toffee maltiness blends with cork and earth underneath.
The taste is surprisingly contrasting with a fruity aspect of alcohol then hints of sherry blending to caramel and toffee. Oxidization is prevalent with a papery note almost like decomposing leaves - fall folliage so to speak mixing with a soft kiss of warming alcohol and then more bretty earth and grassy notes.
This is a surprisingly medium to lighter bodied brew with a moderate amount of carbonation. This brew certainly tastes its age with a very earthen oxidized and mushrooms character. No doubt this beer has seen better days but what a unique experience. Like all Fantomes, you never know what you are gonna get. This one was a pleasant surprise.

Bottle at Fantome-a-thon 2012
The beer is a hazed orange color without much (if anything) in the way of a head. Heavily corked, as I expected, with some wet cardboard and musty funk. Like some other older Fantome beers, a bit of butterscotch and caramel sweetness. The flavor is rather uninteresting and not all that good, unfortunately. Cork and cardboard with a light funk and some sweet malt and sugar notes.

Dark pour with a nice sized head and a good amount of lacing on top
Nice touches of coriander, lemon, hints of pepper coming through, with a touch of pears warming up to it as it came up to room temperature. The initial taste was peppery, with a rush of lemon following suit almost immediately. A wonderful sense of light fruit really just ran all over this one. I was quite impressed I have to admit. Smooth mouth feel was more the adequately carbonated and really just kept the profile popping throughout. An easy sipper

The initial taste was peppery, with a rush of lemon following suit almost immediately. A wonderful sense of light fruit really just ran all over this one. I was quite impressed I have to admit. Smooth mouth feel was more the adequately carbonated and really just kept the profile popping throughout. An easy sipper

A - Pours a vibrant, clear chestnut brown with a couple of fingers of off-white head. A few light streamers are visible.
S - Farmyard funk, hay, lemon peel, solvent.
T - Starts with sweet lemon before this rounds out in the middle of the drink and becomes herbal. Funk moves in towards the end. Aftertaste is tobacco and slightly soapy.
M - Once the spritz of the carbonation dies away the mouthfeel becomes velvety and coating. This is enjoyable to a point but just becomes too much after a while and makes it tough to finish the bottle.
D - Not a huge fan of this one. All a bit disjointed.
