Reviewed 9-22-2010 from a very fresh bottle.
How fresh? Standing next to the store clerk as he fills the shelf with a newly arrived case of Fantome Strange Ghost fresh.
Fresh Fantome is just awesome, and this beer did not disappoint! The beer poured with a huge, creamy head of foam. Cloudy, a rusty metalish brown color, close to home-brewed ice tea. Almost light cola, with a old brick red tinge to it. The nose was wild, with lots of spice & herbs in it. I'm picking up cloves, nutmeg, thyme,
even some cardamon. Fantome funk is there too, tart and fruity. Cherries, and figs like a spiced Christmas fruit cake! Strange indeed.
It taste like it smells. A inter-mix of spices and herbs, with a wonderful fruity tartness in the mouth. High carbonation at first then becomes soft and creamy. Good barnyard funk mixing in as the beer warms. There's just so much going on here, holiday spice, cherries, figs, fruitcake, fresh baked pie, candied fruit. Spice/ herbs all the way through the beer, not overpowering everything is in balance. Earthy, tart-funk, spice, fruity bubblegum in the finish. 8% abv is hardly noticeable as usual with Fantome beers, I'd call this a Spiced Saison.
Update: tasted this beer again a couple months later and the spice & herbs had dropped out the beer considerably, still there, but not as much as when I first tasted it. Became more tart/ sour with that barnyard funk and fruitiness present. Still damn good though.
Fantome beers are so delicate in the nose and palate, they transform rather quickly. I've got 2 more bottles in the cellar I'll see how it's tasting later this summer. Very refreshing brew.

750ml bottle poured into a Duvel tulip.
A: Hazy, deep ruby red. Creamy off white head initially stands at a three finger height, but eventually settles to about half an inch. Patches of foamy lacing remain.
S: Tart green apple skin. Candy apple, caramel. Musty and funky. Toast and brown bread. Orange peel. Baseline of herbs and spices. Very herbal, actually. Like thyme or oregano or something of that ilk.
T: Sour, slightly puckering green apple and lemon up front. Crusty brown bread and toast contributions from the malt. Caramel also. Musty and funky on the mid-palate. Herbs and spices are not as apparent as they were on the nose, and they support nicely. Garden herbs. Mint. Orange peel. Finishes a bit subtly with lingering herbs and a receding sourness.
M: Medium bodied. Creamy and smooth enough. Very mild carbonation. could use just a little bit more dimension, but it isn't bad.
O: Strange indeed. Not quite sure what they have in here for spices, but it's interesting. It works well enough, but it's nothing mind blowing. A good food beer for sure, it could make for some more esoteric pairings.

750 ml bottle into tulip glass, best before July 2013. Pours slightly hazy and cloudy ruby red color with a 2 finger fluffy off white head with good retention, that reduces to a thin cap that lingers. Nice soapy lacing clings on the glass. Aromas of big cherry, strawberry, apple, pear, pepper, clove, hay, straw, grass, caramel, leather, light funk, and herbal earthiness; slight oxidized cardboard note, but not bad. Very nice aromas with good balance and complexity of fruity and spicy yeast esters. Taste of pear, apple, cherry, strawberry, pepper, clove, hay, straw, grass, floral, caramel, bread, light leather, light funk, and herbal earthiness. Lightly tart fruitiness on the finish; with lingering notes of dark and light fruits, pepper, clove, hay, straw, grass, floral, caramel, bread, light leather, light funk, and herbal earthiness on the finish for a good bit. Very nice complexity of malt and fruity/spicy yeast ester flavors; with a nice malt/spicy ester balance; and zero cloying flavors present after the finish. Medium carbonation and body; with a slick, fairly crisp, and lightly syrupy mouthfeel that is nice. Alcohol is very well hidden with hardly any warming noticed after the finish. Overall this is a damn nice farmhouse ale. Nice balance and complexity of malt and fruity/spicy yeast esters; very smooth to sip on. A very enjoyable offering.

After a string of Fantome beers that I didn't find particularly enjoyable, I'm glad to have sampled the entire bottle of Strange Ghost, as it was a delicious amber saison with odes to the Flanders oud bruin style. Rich with tart strawberry and raspberry flavor, with hints of ginger and Belgian brown candi sugar, this is a Fantome that I would not hesitate to pick up again.
Pours a 1cm head of beige foam, composed of small to medium-sized bubbles, retention being average in duration. The head falls to a thin ring around the glass with a modest amount of lacing clinging to the glass' sides. Body is a wood-stain brown color with reddish tints, somewhat hazy. Light brings out stronger reddish and orange hues in the otherwise brown body.
Aroma is sweet, somewhat fruity, slightly spice-like, and a bit tart. The sweetness is reminiscent of mildly tart raspberries, strawberries, and some brown Belgian candi sugar blended together; the spice is akin to ginger; the tartness is very mild acetic acid/vinegar. Someone mentioned Flanders-style ales, and I would agree that this has similarities to Flanders oud bruins.
The flavor of Strange Ghost is tart and fruity, similar to a Flanders oud bruin, and quite enjoyable: definitely not a typical saison. Front of palate is sweet and tart with a hint of soured strawberry-raspberry juice mixed with a brown Belgian candi sugar liquid. Mid-palate picks up ginger, tart strawberry and raspberry flavors, with the fruits and tartness being most assertive. Back of palate detects moderate to light tartness with residual strawberry and raspberry fruits. Lingering aftertaste of crisp, tart raspberry with a hint of Belgian brown candi sugar.
Beer is medium to medium-light in body, with carbonation of medium intensity that leads this to foam up slightly on the palate, but never feels fizzy or prickly. The result is a smooth, foamy mouthfeel that's a pleasure to partake of. Closes fairly dry with medium to medium-high stickiness across palate.
