Poured from a 750 into a beer goblet.
Look: clear, gold
Smell: Herb/spice bomb! Smelled like Ricola lozenges. No barnyard, no green strawberry aroma, no funk.
Taste: Tasted like a sickly sweet herbal liquor, like chartreuse. Little tartness. Phenols from the spices, tannic from the herbs, and overly sweet. Hard to get down a full goblet.
Feel: Viscous body. Again, like Charteuse or herbal cough medicine.
Overall: Disappointed in this, my first Fantôme.
This is for the 2015 version, enjoyed in September of that year.

Poured from a 750 ml green bottle into a goblet.

L - Color is light gold with some orange. Just a bit hazy with an unusual greenish tint when held up to the light. Head is ivory colored and piles insanely high on the initial pour. It settles to a thick blanket of creamy bubbles that looks like it could float a quarter even after settling.

S - Aromas are intense and complex and full of spices. Strong coriander is the most obvious component to me. It gives a sharp, medicinal note. Under that I get grassy notes, light lemon, and a bit of clove. The spices mask any malt or hops aromas for me.

T - The primary flavor component is sharp and medicinal, like the aroma, accompanied by strong bitterness. Again, it reminds me of coriander. After the initial astringent palate entry, things soften and the spices fade a bit. In mid-palate there is some low, clean, bready malt and grassy hos. In the finish are some bubblegum yeast notes, but at a lower level than the coriander, which reasserts itself at that point and in the aftertaste.

F - Medium body. Strong, prickly carbonation with some carbonic acid bite. Bitterness/astringency is strong but whether from hops or spices is unclear. Moderate alcohol presence. The finish is dry, despite some malt sweetness in mid-palate.

O - This is a strongly spiced beer with an unusually sharp aroma and flavor, but the overall experience is more pleasing than it sounds.

A very pleasant saison. Strong herbal (Chamomile?), floral, grassy character to this highly carbed saison. No offputting flavors or lack of carbonation on this bottling. The alcohol in this is completely undetectable at 8%. Starts out with a hint of sweetness that I thought worked well with the herbal/grassy character.

Ach. Well not the best example, perhaps. Cellar temp, gushed on opening.
I wish the taste followed the complex aroma, bit funky little spice/clove..maybe citrus. Really interesting.
Carbonation in this bottle is harsh. After the bubbles, it's heavy spice and not really balanced to my tastes. It did drink a little better 20m later.

Ah, even later I believe I can taste what it should have been.. far better. Maybe just a massively overcarbed example.

Too much barnyard for me. Tastes like it was squeezed out of a horse blanket. I don't mind a little barnyard funk but this is a bit over the top.

Bottle I brought to share last night, purchased at Nathaniel Square Corner Store in Rochester, NY. '14 vintage.

This one pours a cloudy light orange/yellow, with a half inch head, and a small amount of lacing.

This one smells super weird, and just funky. I get cucumber, dill, parmesan cheese, oregano, lemongrass, grassy hops, and some mild tartness. What the hell is going on here?

The more I drank this, the more it grew on me. All of the above foods are there, with the parmesan and the lemongrass being the most dominant flavors. There's a mild hop presence, with a very atypical yeast character. There's some slight citrus, but this just mostly tastes super earthy and green. I have no idea what spices go into this beer, but I feel like someone raided an old spice rack and just went to town here.

This is medium bodied, with a slightly grainy mouthfeel. Slightly oily.

This was quite possibly the weirdest beer I've ever had, but it was oddly enjoyable.

The bottle I had was dated 1995. So I had low expectations of it holding up. Got an old apple taste from it. Surprised that the carbonation was high. Had an old vinegar smell to it. I do love trying these old bottles of Fantome I have.

It's a fairly non-descript appearance. Very clear for the style, with a copper orange color. The head is a very bright white, but doesn't retain that well. Each swirl brings new life to the head, but again, it's short-lived.

Smells saison-like. It's funky, that's the best word to describe it. Typical Belgian yeast with a pear skin/pepper scent that dominates. As it warms, the alcohol builds.

The flavor separates it from the wannabes. White pepper is always prevalent, but the pear and apple provide nice balance to the spice. Surprisingly, a crackerlike maltness evolves as the chill wears off.

I love Belgians, but I do wish they'd taper back the spicy pepper feel. This has a sweetness that almost cuts all the way through the spicy feel. Somehow, a creamy feel presents almost immediately as the beer hits the palate and works its way back. Medium bodied, the alcohol is mostly a bit player, its only job to warm the throat.

After the appearance, I had some doubts, but as usual, the Belgians know what they're doing. This isn't world class, but it's right up there. Despite the peppery feel, it goes down easy.

750 ml bottle with no freshness date. Poured into a wine glass

Appearance: Pours a bright golden orange color with 1+ finger of an off-white head that dissipates to a thin coating and medium collar. Body is lightly hazy with light visible carbonation and some fine sediment.

Smell: Huge aroma of spices and herbs. Oregano, maybe some basil, mint and some peppery yeast. Weird.

Taste: Follows the aroma almost exactly. Lots of oregano as well as a strong general herb/spice character. Theres a mild funkiness and a light malt character in there as well, but they're overwhelmed by the herbs/spices.

Mouthfeel: Medium bodied and soft mouthfeel with medium carbonation. 8% ABV is hidden well.

Overall: Weird. Very weird. Very strong herb and spice character, which is tasty, but given how overpowering it is, it makes it difficult to drink more than a few ounces (and a bit tough to rate as well).

Pours a beautiful golden clear color. Smells earthy, herbal, slight booze, band aid. The dominant tastes are sage and oregano. High carbonation, dry finish. The sage and oregano linger for a while as does the plastic band aid taste. I know that sounds disgusting, but it works. I would not suggest drinking the whole bottle alone. The taste is best in small doses.

Poured from a capped and corked 750 mL bottle into a Duvel tulip. Moderately gentle hand. Label reads: Lot 13 aj. Best By End 2018.

A: Hazy, honey-colored body. 1.5 fingers of dense off-white head. Good retention. Moderate lacing.

S: Grassy, musty. Rather herbal, although the specific scents are a bit hard to pin down. Some sage, thyme, lemon balm. Slighter mint, eucalyptus. Clover. Faint candi sugar, honey. Lemon.

T: Slightly astringent bitterness initially. A touch of pale malt grain develops. Finishes semi-dry with a bit more sweetness than I was expecting. Works nicely, though. Linger floral hop bitterness and herbal notes in the aftertaste. Light alcohol presence.

M: Moderate carbonation with moderate body. Good vehicle for the flavors.

O: Unique saison with a very herbal character. Very suggestive of spring for me - brings to mind the essence of flowers, grass and all things green and blossoming. Imaging mowing your herb garden in beer form.

Pours a pale saffron-tinged champagne colour. Large fluffy head, a bit light-looking. Lace likewise doesn't cling. Nice-looking but such a big head should do more, otherwise it's just cosmetic.

Loads of free radicals coming off the head. Resinous and earthy. Somewhat metallic. Hint of fruit, but it's all quite dour bitterness. Needs more dimensions.

Taste is smokey, now hmmm... didn't expect that. Meaty, smouldery, almost peaty. It's an earthy smoke with touches of sweetness. Back gets an odd champagney zest that sits ill with the front, but really it's the front that's incongruous. Just settles down into earthy bitterness. An odd package, but a decent smoky palate.

Foamy, decent body. Very clipped, dry back. OK.

Really don't know what to make of this. No smoke on the nose, but virtually nothing but smoke on the palate. As a result doesn't fit together in a symbiotic way for me. Certainly an odd saison.

Bottle poured into a Fantome outline-ghost tulip.

Amber-copper color, hazy, with a finger or two of fluffy white head that receded to a thick collar, lacing the glass nicely. Lots of funk and spice in the aroma, herbal medley. Similar taste, lots of spices, I pick up oregano mostly, with some thyme, rosemary, and white pepper, mint leaves, freshly cut grass, light barnyard funk, crackery malts. The spices are dominant, even if the bottle doesn't specify exactly what spices were used. I've never heard of a beer that used oregano, but that's definitely what I'm getting the most, with rosemary as a close second. Medium body, moderate carbonation, crisp mouthfeel. Typical Fantome offering in that you really never know what to expect when you pop that cork. I'm not a big fan of beers that are spiced in this way, but among them, this one was pretty good, and I thought the drinkability was fine.

Poured from a 750ml capped and corked bottle into a Savor 2013 tulip.

A : beautiful beer, right on point for the style. Golden orange, slight haze with a 3 finger white head. Nice.

S : very interesting. Rosemary, menthol, rose petal, pine, thyme, white pepper, clove, basil, slight bandaid phenols, slight sweetness I can't quite put my finger on. Smell is very much dominated by herbal qualities.

T : menthol and rosemary up front, followed by a bready/spicy more classic saison taste. Finishes very light and clean with slightly linger phenolic notes hinting at the bandaid and medicinal qualities in the nose.

M : mouthfeel is on the light end of medium. I expected a touch more carbonation from this one, but admittedly that expectation comes from past Fantome brews all gushing on me.

O : definitely one of the stranger beers I've tried in quite a while. Expected this to be somewhat reminiscent of Fantome Saison, but it's an entirely different beast. While Saison is all about the phenolics, this one seems to be far less yeast driven and more dominated by the spice additions. Very interesting brew

750ml green bottle capped and corked as is the Fantôme way. Purchased from K&L Wine Merchants in Redwood City, CA and shared with Sam back in Sydney.

Pours a wonderfully clear and bright pale straw colour, almost like a fine pilsener. Head forms a fairly coarse-bubbled, but substantial and frothy head of pure white that settles out to a persistent half-centimetre of foam. Lacing is great. Body looks fairly light, but it has a hidden weight to it that forces some fairly languid carbonation. Looks really very good indeed.

Nose is wonderful. Bright, gripping funk that's clean and green, giving a crispness and vitality to the beer. There's a slight organic character to it that comes through, with a bit more earthiness and a sense of weird aromatics. It's mostly just bright and very clean—a really lovely aroma.

Taste is also extremely clean and bright, with a moderated funk that lends a crispness and a touch of acidity. Then all of a sudden, the green organic note evokes a hint of smokiness which is completely unexpected, but with the crispness of the body, and the mild acidity works really well. Finish is minerally and bright, with an almost salty accent to really clean things up. Quite remarkable stuff.

Feel is light and crisp throughout, with a slight frothiness that expresses some of the more delicate flavours.

Overall, this is gorgeous stuff, getting towards Fantôme at the top of their game. And with a brewery this good, their top game is fairly spectacular.

Loved this beer. The best way I can describe the taste is that this is a Czech pilsner brewed with saison yeast. . The floral hops and the saison yeast make for a beautiful pairing. Combined with the effervescent mouthfeel this makes for a great hot weather beer.

Beer pours a hazy yellow with great head retention. Nice thick rings of lacing.

Scent comprised of white pepper, corriander and overall strong herbal scent.

Tastes begins with lemon and moves to a tart herbal and white pepper finish.

Very lively mouthfeel. Medium to lighter bodied.

Absolutely exemplary take on the style. Unique herbal character without stressing the point.

Poured from the bottle a murky peach-orange with two fingers of off-white head. Light wet lacing left behind.

Aroma of cardamon, chili powder, barnyard funk, clove, light apple and earthy yeast notes.

The taste opens with the cardamon and clove notes along with apple, lemon, earthy yeast and barnyard funk.

Medium bodied and dry with a moderate carbonation.

I really liked this one but didn't love it. The chili powder and cardamon notes in the aroma was just a bit too odd for me.

Looks like a pilsner apart from the strong soapy head and lacing.

Light breadiness, orange peel and zesty spice.

The base beer is light and unobtrusive but Fantome has added it's secret dose of magic to make this beer exceptional. I don't know what they did but it works (I swear I taste cannabis).

Mouthfeel light, ABV controlled.

Sessionable beer that seems simple and reserved but under close inspection is a complex and distinct beer.

Corked and capped 750 ml from Tipples with "Best Before 2018" printed on the label. Pours slightly hazy golden colored with a big fluffy white head. Aroma is funky barnyard, some spices--cinnamon, clove, coriander--and a really interesting floral note that differentiates it substantially from the regular Saison. Flavor is spicy, very big on the cloves with barnyard funk lingering, lots of yeasty goodness, hay, more spice. Light to medium bodied with some wheaty sweetness and medium plus carbonation. An interesting take on the style with a very unique spice note.

Pours a cloudy but radiant ochre with one finger thick eggshell colored head. Settles slowly with sparse rings left on the glass. Smell: cardamom, orange peel, snappy grain, bready and light caramel in the back. Taste: fleeting caramel candy, nectarine, clove, orange peel, then a grainy sweet and note of blue cheese section, before finishing with a blast of coriander and a minty pop. Medium bodied, creamy but relaxed carbonation. A lot going on but pretty harmonious.

Bottle purchased January 2014 from a high volume store so assumed to be relatively fresh. This one pours a pale yellow retaining a nice foamy head. The last bottle of Fantome Saison I opened was a drain pour so I was pleased to get a good bottle. Fantome is one of the most unique and unusual beers. It is an experience, for better and for worse. It is very fruity - apple and apricot dominate - and that is my favorite aspect of the flavor profile. There is a slight tartness that is followed by herbal and medicinal flavors - I taste and smell mint, lavender and grass. There is also a faint band-aid plasticky flavor and then it finishes in an ashy smokiness. An earthy funk lasts throughout. I even get some funky cheese in there. It's like an episode of yeasts gone wild. The carbonation was textbook saison - active, creamy and full. This was not a gusher like the Saison was for me. In a word: strange. I am definitely rating higher based on the uniqueness of the brew. It is delicious - particularly the fruit flavors - and challenging at the same time due to the medicinal, band aid and ashy flavors. It's a worthwhile experience but I won't be in a rush to try it again.

No notches marked for a Best Before date, but I've had the bottle for years (plural). Poured almost half into a Rodenbach Grand Cru tulip.

Some sediment having trouble settling. Golden colored beer, with haze, to boot. Head was sudsy, but reformed into a thin cap. Lots of streaming bubbles.

Lightly tart. Happening, still, with a saison yeasty squalor. Gooseberry, lemon rind, basement funk, maybe tangerine, and some pale wheat Belgian malt. Hints of creaminess. Great nose.

Oh my... such a fruity saison, after all. Apple and lemon combo, plus notes of tangerine, apricot, and nectarine. Somewhat nectary, with a light funk note and a very thin tartness that seems to have developed and then undeveloped. Stone fruit fruitiness, too. Especially, after I poured the bottom of the bottle. Nuttiness, too. Needs some dryness in the finish. Good, but not great.

Drinks pretty good. Not too wet, far from not too puckery, either. Carbonation held up very well. Excellent.

A solid Fantome, but not as good as the Fall saison.

The beer comes in a hazy golden orange. A bright sun orange.

The aroma has tons of spices, corainder, fresh mint, and then lemon with a bit of a smokeiness along with a saison funk.

The flavor follows with a bright juicy orange, orange peel, and then a big sweet bready malt. Throughout there's peppery spice and herbs like corainder and floral. There's a smokey flavor and musty funk in there as well with a grassy dry finish.

The mouthfeel is medium with lots of carbonation.

A really well made saison and I actually prefer it to Fantome Saison.

Unknown vintage. Hazy, straw like in color with a bone white head.

Yeast, grassy, spicy/ medicinal nose with a slight musty funk.

Flavor is similar to the aroma but less intense than I had anticipated. Light spice, lemon citrus and hay... Slightly metallic with a dry finish. Perfect carbonation and medium body.

Signature Fantôme. If I could I would buy this again... and again.. and again... and again...
