A- Hazy yellow, really cloudy body with about an inch white head.

S- Smells like fresh banana puree and spices sprinkled ontop.

T- Spices are more at the forefront on the palette. White pepper, cloves, orange peel, a very dry slightly funky finish. Very complex.

M- Lots of lively carbonation that keeps the palette alive with curiosity.

D- Abv cannot be detected. This is a great bang for your buck pick this up if you see and skip over all American Saisons.

A 750ml green glass bottle of unknown vintage (though probably the most recent). Purchased recently from the Brewdog webshop. A winter saison brewed with spices.

Poured into a Duvel tulip. Bottle conditioned. A deep, hazy orange-amber hue with medium carbonation and fine sediment. Produces a large head of creamy white foam that lasts for a few minutes before reducing to a patchy surface layer. Aroma of banana, clove, bubblegum, spice, fruity yeast esters, earthiness, subtle caramel malt and faint stewed leaves. A warming whiff of booze in the background. Very nice.

Tastes of fruity yeast esters with a prolonged dry finish. Notes of banana, clove, coriander, spice, bubblegum, yeast esters, earthiness, faint caramel malt and stewed leaves. Well-attenuated with a hint of warming alcohol in the background. A subtle, spicy bitterness upon swallowing. Mouthfeel is smooth, dry and tingly, with good carbonation and lovely body. Pretty astringent, followed by an aftertaste of banana, spice, fruity yeast esters and earthiness.

Excellent - simple yet complex. Looks great, if rather murky. The aroma and flavour are intensely yeasty, with fruit and spice notes that remind me of a good hefeweizen (especially the banana). Great body with a perfectly judged texture. Nice and nicely done. A fantastic saison - well worth sampling if you have the chance.

Pours a hazy copper with amber edges, one finger thick of offwhite foam, a few rings of lace down the glass. Smell: sweet with caramel and bread, red delicious apple, subdued grassiness comes along. Taste: caramel and overripe red apple, grainy twang, date, plum skin. Medium plus bodied and sugary but with a nice drying finish. Pretty straightforward as a saison or at worst saison-ish, but it's meant as a winter seasonal and it plays that hand well.

Poured from the bottle a cloudy and dank ochre color with two fingers of beige head. Good amount of sticky lacing left behind.

Aroma of Juicy Fruit gum, light spice and Belgian yeast.

The taste matched the aroma with Juicy Fruit gum, light spice, Belgian yeast and caramel malts at the end.

Medium bodied and quite sticky with a moderate carbonation.

A flavorful and easy to drink Saison from Fantôme.

2014 Edition

I opened this bottle somewhat concerned because of previous reviews. Did I get a bust, a literal fantome?

As I was serving, I saw some yeast deposited at the bottom of the bottle. The liquid was dark yellow, almost reddish, and very little carbonation was formed. The nose was non existent at first, but after swirling, the classic scents of a saison, a wheat beer, were released. The scents kept increasing as time went by.

I tasted it and it was the classic saison taste. A little bitter, definitely hoppy, a little sweet, a little yeasty, with little carbonation that was only felt after I played with it in my mouth.

Overall, a great import, definitively something that can be had in excess. The artisanal taste is present, and that makes this beer a classic saison.

750 ml. bottle, corked and capped and served into a large wine glass. Pours a medium orange/golden with a touch of haze. A white cap shows decent retention.

Nose is a bit funky and tart with some earthy citrus perhaps hop based notes. A pleasant mustiness accompanies. A second pour after some warming yields a bit more hop spice to the aroma.

Taste is spritzy and smooth up front with light citric and malt notes. Offers a lingering finish of a medley of flavors with notable pepper spice, orange must and a nice tart character. Quite smooth on the feel, spritzy up front and segueing to a smooth malty middle and a tart and rather dry finish.

Overall a solid offering with a good amount of depth.

Fantôme Hiver ("winter ghost") actually pours like a summer rosé, at least without the sediment added in; everything beyond the first few ounces comes out looking a little like a cinnamon-doused cranberry sauce. The bottom of my glass is sandy enough to act as an hourglass. And anything that could have passed for snow quickly melts away.

What goes into a Fantôme recipe is anyone's guess; how to describe what they smell like is often just as much of a mystery. Saison yeasts are naturally full of spicy phenols and fruity esters but this bouquet also has eccentric notes of mulled apples, flowers, mint, and citrus zest.

As is also typically the case with Fantôme beers, putting a finger on exactly what is tasted is a tricky ordeal. This sample is markedly different from the previous ones I've sampled - hardly surprising given that the recipe changes every year. The flavour is oddly iced-tea-like and has hints of cranberry, hibiscus and mint. It'd make a good herbal tea.

There's no vintage stamped anywhere on the bottle or cork; it's been in the cellar for so many years that I can't remember exactly when I got it. Aging hasn't exactly been kind; a lot of folks will tell you that Fantôme beers are some of the best candidates for aging but they're not. In my experiences they are typically funkier when fresh. The cellar only oxidizes things.

Fantôme Hiver is perhaps my least favourite of Dany Prignon's creations. This may have something to do with the fact that each time I've tried it has either been at a tasting or from an aged bottle, but I doubt that: great beer is great regardless of sample size and some of my highest ratings were aged. Fantômes aren't cheap; skip Winter for a more pleasant saison.

Hiver in a Duchesse goblet. Burnt orange amber color with a bleach white head of thin dimension. Lingering does the foam.

White grape, light honey, lemony tartness, nectary malt, hint of allspice and cardamom, farmhouse yeast, and a touch of vanilla.

Bright acidity without exceeding "tart" into the land of sour. Less of the funk and more of a white wine and lemon zing. Not tangy, just really bright and semi-tart. Firmly bitter for a saison. There is a light Bretty note that is understated, but delicious. Great flavors and complexity.

Tart and light and airy. An easy drink with a semi-stinging finish. Refreshing.

Very distinct. Not too showy, but tasty. The yeast doesn't steal the show.
