pours a nice yellowish orange color with three fingers worth of big white creamy head. smell is mostly lemon and grass with just a tad of funk in the background. taste on the other hand is nothing but dirty funk with some spice and lemon in the background. this tastes like dirt to me. mouthfeel is thin and crisp with a dirty inish and some warmness from the booze, a lot more heat than i would expect from an 8% beer. overall, fantome is just not my thing. i've enjoyed many other saisons that were head and shoulders above these guys, imho.

750ml into snifter.

A: Pours a deep honey color with a fluffy, huge, whipped egg-white head that very slowly faded into a fuzzy and thick collar.
S: Meaty, savory, smoke fills my nose. I get notes of band aids and maybe a hint of mild lemon and caramel beneath.
T: Dirty dish water, peat, sour old grains, boiled meat, and faint citrus. The finish has a terrible sourness, and the aftertaste is peppery and full of grain.
M: Medium-full body, fluffy carbonation, muddy, sour, greasy mouthfeel.
O: Bad bottles are bad. I've heard of these smoke bombs but haven't encountered one yet. Very disappointing. I will have to revisit this again with hopefully a good bottle as I am not getting any of the flavors other reviewers are describing.

Poured from a capped & corked 750 mL bottle into a Brewer's Art goblet. Moderately gentle hand. No date visible, but presumably from this past winter.

A: Hazy, orange-brown body with 2 fingers of off-white head. Ok retention. Nice lacing.

S: Belgian yeast with musty, fruity notes. Apple and apricot. Hay. Bread.

T: Spicy, earthy yeast opens and introduces a slightly nutty, rustic maltiness. Light hop bitterness on a fairly dry finish. Alcohol is consistent with 8% or just slightly more present than expected. Pretty clean finish with light floral elements in the aftertaste.

M: Moderate carbonation with moderate body. Fuller than your typical saison, but fits well with the flavor profile.

O: A tasty, malt-forward saison. Reminded me a bit of a biere de garde without losing it's fundamental saison qualities. Probably would have enjoyed this more a few months ago, but on a temperate May day it still drank pretty damn nicely.

Pours a cloudy orange with a bubbly head that reduces over time. Lots of floral, smokey notes with some fruit. The smoke really comes through in the taste (I suppose that's the lavender), coriander, spice and more floral, peaty notes. Medium mouth with a fairly long aftertaste. Quite unlike any farmhouse ale I've ever had. Very complex and well-made. Probably not something I'd grab often, except to show the variety of saisons.

750mL into a tulip. Pours a murky copper color w/ a 1-finger off-white head that settles to a thin film of sea foam.

Aroma is mostly floral, almost perfumy. If I had to guess, I'd say lavender, hibiscus, and jasmine. Kind of tea-like. Underneath that is a subdued spiciness.

Taste is likewise very floral, with hints of honey. More lavender and jasmine here, kind of soap-like. I'm not sure what they were going for here, but I'm not sure they nailed it. Tastes a little like one of Dogfish Head's more experimental releases.

Mouthfeel is medium-bodied and fairly soft and clean. Goes down pretty easy.

Overall, I don't know that I'm on board w/ this one. It's OK, but feels a bit muddled. Probably won't be seeking this out again.

love this stuff, and the love for this brewery is not unfounded, as some claim. these beers are so unique and special, and this winter saison is special too. its very yeasty copper colored, with a smallish white head and tons of sediment. the nose has some holiday spice. not like a pumpkin beer or anything, but i get some cinnamon and some cardamom, maybe a hint of candy apple, and of course the yeast that makes these beers famous. the flavor has a pleasant malty front end, and basically a soft spice into a spicy yeast finish. where the spicing stops and the similar character of the yeast begins is not decipherable. either happy coincidence or brewers genius, and i will choose the later, for lack of any real understanding about the recipe or process here. baked dessert notes with zero sweetness is the go here, with some chai tea notes and a prickly carbonation that makes it sing. a top tier saison, subtle yet ultra distinct. easily worth the 15 bucks they ask for it, even though it gets a shade boozy as it warms, its never anything but a flattering effect.
