750 ml bottle poured into a La Chouffe tulip, no idea on the date, but I'm pretty sure it probably isn't too fresh

Pours a murky orangey amber with a large fluffy white head that recedes pretty quickly. Little bands of lacing as I get through the beer. It gradually gets darker and more murky towards the end of the bottle.

The smell is very rich, fruity, and floral. Peaches, green apples, sourness, wet hay, grass, earthy/funky cheese, flowers. As it warms the earthy and funky flavors come out more and more.

The taste is bright and fruity. Along with the smell. The sourness isn't at all over the top but is a significant presence. While the character from the yeast (and maybe spices) is dominant, there's a subtle maple syrup sweetness in the background that is nice.

It's pretty highly carbonated but not fizzy. The carbonation helps the bright fruity characters come across initially. Finishes dry and earthy.

As far as drinkability, I really wouldn't think it necessary to share a 750ml bottle. It's both refreshing and complex.

While it may be a little "out there" for the style, I don't think anyone could knock this brewery for making more complex and interesting versions of saisons.

Poured into a Gulden Draak tulip. Pours a hazy medium orange amber with a fine white one finger head with good retention and lacing. Aroma of light bready malt, saison yeast, honey, light fruit, especially apple, mild Belgian spicing. Flavor is light fruit with an interesting earthy character, completely defying identification of flavors, mild citrus, finishing with earthy Italian herbs; thyme and rosemary, with finishing bitterness that seems much more medicinal herbs than hops. Light to medium bodied with peppery carbonation. I've been waiting a long time to try a Fantome (the distributor was out of our state for a long time and I only saw bottles of questionable age and storage on my trips, so only got a chance now). I'm on the fence with saisons in general, not really liking the aggressively funky and/or sour ones, but enjoying well made herbal versions. This one was worth waiting for. An ale in which it is almost impossible to describe the flavor components even though it is full flavored, but everything really comes together. It invites repeated tasting to try to tease out the identity of the flavors. I'm sitting here licking my lips to taste the mildly bitter herbal flavors left over from my last sip as I type. Really enjoyable, complex and integrated. I look forward to future opportunities to try Fantome ales. This is the kind of beer that makes trying new breweries pay off.

A 750ml green glass bottle of unknown vintage (though probably the most recent). Purchased recently from the Brewdog webshop. A winter saison brewed with spices.

Poured into a Duvel tulip. Bottle conditioned. A deep, hazy orange-amber hue with medium carbonation and fine sediment. Produces a large head of creamy white foam that lasts for a few minutes before reducing to a patchy surface layer. Aroma of banana, clove, bubblegum, spice, fruity yeast esters, earthiness, subtle caramel malt and faint stewed leaves. A warming whiff of booze in the background. Very nice.

Tastes of fruity yeast esters with a prolonged dry finish. Notes of banana, clove, coriander, spice, bubblegum, yeast esters, earthiness, faint caramel malt and stewed leaves. Well-attenuated with a hint of warming alcohol in the background. A subtle, spicy bitterness upon swallowing. Mouthfeel is smooth, dry and tingly, with good carbonation and lovely body. Pretty astringent, followed by an aftertaste of banana, spice, fruity yeast esters and earthiness.

Excellent - simple yet complex. Looks great, if rather murky. The aroma and flavour are intensely yeasty, with fruit and spice notes that remind me of a good hefeweizen (especially the banana). Great body with a perfectly judged texture. Nice and nicely done. A fantastic saison - well worth sampling if you have the chance.

Pours a hazy copper with amber edges, one finger thick of offwhite foam, a few rings of lace down the glass. Smell: sweet with caramel and bread, red delicious apple, subdued grassiness comes along. Taste: caramel and overripe red apple, grainy twang, date, plum skin. Medium plus bodied and sugary but with a nice drying finish. Pretty straightforward as a saison or at worst saison-ish, but it's meant as a winter seasonal and it plays that hand well.

Poured from the bottle a cloudy and dank ochre color with two fingers of beige head. Good amount of sticky lacing left behind.

Aroma of Juicy Fruit gum, light spice and Belgian yeast.

The taste matched the aroma with Juicy Fruit gum, light spice, Belgian yeast and caramel malts at the end.

Medium bodied and quite sticky with a moderate carbonation.

A flavorful and easy to drink Saison from Fantôme.

2014 Edition

I opened this bottle somewhat concerned because of previous reviews. Did I get a bust, a literal fantome?

As I was serving, I saw some yeast deposited at the bottom of the bottle. The liquid was dark yellow, almost reddish, and very little carbonation was formed. The nose was non existent at first, but after swirling, the classic scents of a saison, a wheat beer, were released. The scents kept increasing as time went by.

I tasted it and it was the classic saison taste. A little bitter, definitely hoppy, a little sweet, a little yeasty, with little carbonation that was only felt after I played with it in my mouth.

Overall, a great import, definitively something that can be had in excess. The artisanal taste is present, and that makes this beer a classic saison.

750 ml. bottle, corked and capped and served into a large wine glass. Pours a medium orange/golden with a touch of haze. A white cap shows decent retention.

Nose is a bit funky and tart with some earthy citrus perhaps hop based notes. A pleasant mustiness accompanies. A second pour after some warming yields a bit more hop spice to the aroma.

Taste is spritzy and smooth up front with light citric and malt notes. Offers a lingering finish of a medley of flavors with notable pepper spice, orange must and a nice tart character. Quite smooth on the feel, spritzy up front and segueing to a smooth malty middle and a tart and rather dry finish.

Overall a solid offering with a good amount of depth.
