Bottle (2012)

Thanks for opening this one with me, Tim!

Hazed, golden and yellow with a quickly forming, persistent, near-white, fairly large bubbled head. Eventually this leaves thin ribbons and irregular lines of lace down the glass. Gorgeous saison in every way imaginable.

The aroma is surprising because it doesn't give any hint to the beer's sour flavor: huge amounts of white fruit present in the aroma. There's a good mixture of green apple and white grape, along with big notes of juicy pear and a mild lemon character. There's just a bit of grass and an earthy funk character. Complete.

The flavor is simply superb. The aroma doesn't prepare you for the level of sour in this beer, though the name certainly gives it away. Good amounts of previously noted white fruits, mild barnyard and grass, some pepper, and earth combine with the delicate sourness. I couldn't imagine enjoying a beer more.

Medium bodied with high carbonation--crisp, refreshing, disappearing, airy. Marvelously drinkable.

One of the finest beers I've had to date.

750 mL bottle poured into a snifter. Reviewed from notes.

Appearance - Murky burnt orange. Big white head that settles quickly to a nice collar and wisps.

Smell - Malty and very yeasty. Spicy, but I'm never good at identifying them. The maltiness makes it not smell like a saison.

Taste - Lots of pale malt. Sugars and esters. Cloves. I can definitely pick that one out. Bitter and quite yeasty. Way to big for the subtler notes to come through.

Mouthfeel - Really heavy and intensely malty. Well carbonated.

Overall - Way too heavy and, I'm sure everyone knows by now, not sour at all. The saison characteristics are weak compared the malt.

Cork pop is dangerous to say the least. No spillage but I expected there to be.

Pours a hazy golden with super active carbonation. Bubbles are racing to the top.

Smells of all things that are great in a saison. Starts with tart lemons, moving to funky earth, and finishes with black pepper spice.

Taste starts with Earthy funk. Stop... this i one of the most interesting beers I've had the advantage to sip on. Part black pepper and earthy roots followed by some tart sour notes. By no means the sour adventure I expected from the name of the beer but actually better than I expected... and I expected a lot. Super spicy and fruity, dry and with a depth of flavor that I don't often encounter.

Ultra crisp carbonation and mouthfeel just add to the experience of this beer. Dany has, yet again, created a truly amazing beer.

One of the most interesting and enjoyable beers that I have had this year. God... I really wish there were more than 48 cases in the US and the bottles weren't 30+$.

That being said, if you see it, grab it.

Thanks kindly to Ed, poured from the bottle at Churchkey DC into a snifter glass.

Gusher a bit on the opening with a big solid pop. A white head is produced and falls fairly quickly to a thin top and crown. Body is opaque but a real nice orange and yellow glowing hue, with lots of super fast carbonation rising.

This nose is unreal. What a bouquet on this beer. Peach, dirt, sour nectarine, a wonderful sweet smell of juicy fruit and off funk aromas, super fruity juiicy with a sweetness that dominates eventually while still maintaining a little tartness. After some warmth there is egg yolk.

Taste on the palate is massively crisp in feel, super carbonated and playful with and incredible fruity finish almost like a serious champagne but far sweeter and dense. Lemon sourness, sweet tasty penny candy, and then a big aromatic mix of funkiness. Cream character comes in with the fizz soda giving an almost perfect cream soda like taste and feel. Aftertaste even manages some toasty malt and grain bread finish. At 10% ABV there is no heat on this, you can't even get any sense of alcohol even, zero, zilch, zip, NADA.

I am speechless. This is probably the best saison I have ever had.

Cloudy, somewhat turbid amber pour topped by a tall three finger head that recedes to nothing. The nose is vegetal, herbal, funky, a bit phenolic and mineral. Pretty mild aromatics. Tastes only mildly sour with a big grainy, doughy backbone. Herbal notes appear mid-palate, followed by a funky, mushroomy barnyard note. Mineral, almost metallic. The body is medium-full leaning toward heavy. This isn't especially sour, and it's not all that crisp or dry for a saison. It's also lacking any particularly exceptional qualities. Meh.

Appearance: Hazy, golden orange - pours with a giant, frothy, bright white head - keeps a solid cap, leaves walls of lacing

Smell: Sour and saison-y - some acidity, mostly a lactic sourness - very funky, farmhouse aromas - peppery yeast, and legit peppercorns - some light fruits, vaguely tropical - classic Fantôme musty basement

Taste: Sour, funky, and definitely Fantôme - wet, lactic sourness, and some nice tartness - seltzer - yeasty funk, with barnyard and musty basement - lemon, apple, grape, peach, bananas and other fruits - peppery, lightly sweet - hay, grass - earthy and damp, yet lively - the lightly tropical flavors work very well with the sour, funky elements - utterly no hint of alcohol, I refuse to believe this is 10% ABV

Mouthfeel: Medium body, highly carbonated in a good way, lingering sourness

Overall: Gloriously accurate beer name

It's like Fantôme made a beer that is extra sour! It's not remarkably sour, but the sour elements work so very well with the musty funk. Want. More.

Finally opening my lone bottle with almost all of the main peeps around.

A- Poured into six glasses with an uber murky, putrid swamp looking cidery color to the body. Head forms to more than four fingers with an ultra foamy texture but falls down after a few minutes to nothing, resembles cider truly. Lace is out of the question.

S- Reminds me of the regular Fantome Saison (the good batches) in many ways with an extra Brett funkiness and something that leads me to believe it will be tart and lactic. Spicy Saison yeast and Geueze-like funk/tarts seem to balance each other pleasantly.

T- Follows the nose pretty much with some extra fruitiness and nuances really opening up. Spicy, peppery and lemon zesty Saison yeast in a balanced blend with tart lactic, lemon juice sourness. A decent amount of barnyard and Brett funk with some cherry and apple fruitiness.

MF- Super highly carbonated light end body. The foaminess is pretty intense but compliments the flavors nicely like a Geueze would. Finishes with tartness and slight spicy bitterness on the palate.

Funk meets a good Saison and overall it aged quite well and is probably over two years at this point. I like the extreme level of lemon juice flavor with the underlying spicy Saison yeast. Hopefully Fantome can get back on the ball soon.

750 mL bottle on trade (thanks, John Serra!), unknown bottling date (2013 vintage), poured into my FFF Teku glass, drank 8/4/13 over an hour.

A: 3/3 - dark brown almost black coloration, no clarity (cannot see through), carbonation rocky burnt brown on first pour but very quickly dissipates into glass lacing , moderarte alcohol legs

S: 9/12 - lots of pungent sour (especially vinegar, barnyard and maybe sweat socks) notes predominate with such alcohol aroma to balance it out

T: 16/20 - on the anterior tongue, there's a strong sourness but, to be honest, with the "extra sour" moniker, I was expecting something more; in the middle of the mouth, there's more of the funk with smoke, pepper and fruit flavors and, surprisingly, some balanced offer by the malts; I taste alcohol but not overpowering

M: 4/5 - moderate bodied and appropriately carbonated for a sour; the sourness doesn't linger and leaves a tart, refreshing phantom in the mind only

O: 8/10 - I must admit that I am a little underwhelmed due to the hype of the brewery and the price ($27 in the greater San Diego area), but this is still a really nice dark sour that I would return to again and piqued my interest in other beers in the Fantome line-up.

Big thanks to a generous trader for this one. Served in a Fantôme tulip. Pours a slightly cloudy light golden with a big, fizzy white head. Nose is fairly pepper heavy with a bit of Brett & very mild lactic. Some tropical & citrus to flavor. Highly carbonated. Better after swirling out some of the carbonation. More lemon, light lactic, and faint funk after that. Overall, nose is too peppery and flavor is similar to a good batch of the regular Saison.

Cracked at my cellar cleaning party.

Nice small fizzy head covering sticks around, clear honey colored.

Nose tea aroma, sour light lemony and leaf like green, little sweet candy syrupy malt, mild spices, nice sources little lactic.

Taste semi sweet, little lactic acid, juicy tart fruit, into nice spices, wheat grainy malt, lactic, lemony as Hell, mild earthy flavours, sour fruits, tart little flemmy sticky.

Mouth med bod little sticky and flemmy, nice carb, little lactic acid bite.
