Appearance 3/5: Warm amber color. Slightly cloudy. Firm white head that lasts well.

Aroma 3.5/5: Honey and hay. Peaches and rye crackers. Forest floor moist leaf tannic. Slightly piney.

Flavor 4/5: Pilsner saltine cracker sweetness. Boozy sweetness like invert beet sugar syrup. Pepper and pine in the astringent bitterness.

Mouthfeel 4/5: Medium bodied and slippery to start. Astringency develops around the edge of the tongue, the creeps to envelop the palate. Finishes dry with a long lasting resiny sticky bitterness.

Overall Impression 4/5: This very complex beer sits strongly on a tripod of Belgian Golden Strong, aggressive Czech Pilsner, and American Double IPA. It confidently expresses the stronger characters of all three of these styles while remaining balanced on three sturdy legs – clean malts, complex DIPA style hops, and warming alcohol. The yeast characters are in the honey/fruit background and peppery mouthfeel. Very good beer, but why “Boo!”?

Maybe because it’s scary delicious?

Pours a hazy darker amber with thick soapy white head that settles to a thin ring with a few blobs of lace down the glass. Smell: peach, leather, herbal and spicy, lots of pale malt in the back with some woodsy/fruity brett-ish notes. Taste: juicy peach, caramel, triple levels of pale malt, spicy hopping. Medium bodied, chill carbonation, tons of sweet but slightly tart peach everywhere in this one. As a Fantome + malt focus, perfect for a late fall seasonal, and still delicious in summer.

750 ml poured into a SN tulip glass.

A: Nice orange color with a white head composed of creamy to large bubbles mixed together. A little cloudy but had only refrigerated the beer for a few hours after having been sitting at room temp for a few weeks if not months. Head dissipated to a thin film of bubbles in a minute or less.

S: Very earthy and classic Fantome with that grassy almost lemon grass character. Also get a slight sweetness but mainly yeast fritiness. A bit perfume like also, Fantomish definitely but not as profound as other Fantomes.

T: A lot of spice straight away. Definitely a fall or Halloween beer from the pumpkin like spices. Interesting but a little strange to have during mid spring. Still, very interesting and a definite treat to be tasting this tonight.

Also, this is more malt forward than their Siason or Brise-Bon Bons where they are aromatic yet bitter. This is nice and bitter but the spices highlight the malt more than the yeast.

M: Dry and spicy but a little bitter in the background.

O: A very very interesting brew and definitely encourage anyone to give this a try especially during fall or Halloween. Actually quite refreshing from its dryness but more malty and spicy than hoppy or fruity like most other Fantomes but still really tasty and worth every penny.

Corked and capped bottle from Tipples. Lot number 25-8-12. Pours mostly clear orange with a small off white head. Funky yeast aroma, spice, lots more funk, light hops, hay and grass, some fruity sweetness. Flavor is light hay, fruit sweetness of apples and pears, peaches/apricots, bananas, some spice, cloves, lots of farmhouse hearty funk. Has some tripel notes and Saison notes. Prickly carbonation and medium mouthfeel. I am really enjoying this one and wish I had it in the fall as it would make a nice autumn seasonal. Not sure why the ratings are so low here unless they made a bunch of bad batches before this (I guess characteristic of Fantome).

S- Bottle (newer batch)

A- This looks exactly what I would picture an autumnal saison to look like! Really great dark orange color with beautiful lacing and white head. (The bottles from a year ago poured with a much more agressive head, one was a total gusher)

S- Definitely has the signature fantome nose! No smoke as there was on the last batch. Smells funky, a little hoppy and very pleasant

T- Wow does this taste better than the last batch! Great balance between hops, spices, funk and just a touch of tartness. I could see this being even better in a year or two.

M- Much better than the last batch as well! Beautiful carbonation that I would describe as near perfect.

O- Dany did an awesome job on this batch of Boo! This is exactly what I was hoping for the first time around. And like always the 8% abv is not detectable at all. Time to buy another bottle to stash for a future halloween!

A solid beer once again by fantome. The color is a nice amber, a bit hazy with generous amounts of head (slow dissipation). Medium in body with medium carbonation.. A nice spicy (spices.. Sweet..) saison with hat fantome funk! Skunky, white pepper, vegetal, with a. Nice English/Belgian grain bill. A really enjoyable beer and well, you do not feel the 8% til it's too late!

I've come to accept that fantome beers in the united states can be hit or miss, packaging and time and green glass and whatever else, but this one is a great success, at least my bottle was. an odd and rarer amber style saison, not enough of these around, hazy and muted in color, but with a positively massive white head with great retention and spider web lacing everywhere. it smells a bit funky, feet and socks meet weird ale yeast and summery harvest season funk, all in a good way. its yeast driven for sure, like all fantome beers, but it has a great grain profile. luxurious in feel too, but i taste the caramel color of the beer all the way through, along with a more meaty wheat profile that sticks all over the palate. carbonation is really intense, but can hardly penetrate the malty density of this, which i love, but its also dry as anything, crockery and crisp for a saison, and the yeast leaves a funky sensation on the tongue. just top quality beer, as interesting as they get, love the yeast and the heavier grain bill on it. expansive and large, but a very well hidden 8% abv. well worth the price.

s beer is a huge gusher. Lost almost half the bottle.

The color is this unfiltered hazy peach orange.

The aroma has fermented apricot, tons of phenolic and band aids. Some funk in there.

The flavor follows with this apple cider sweetness, a bit of fermented fruit flavor, again the band aid phenols. There’s lots of spice and green herbal. Actually a bit of lemon tartness going on. An extremely weird amagalmation of fruits and chemicals and herbs and spices. Strange.

A weird beer. The flavors were interesting, but it didn’t work for me. I actually had to drain pour this.
