I've come to accept that fantome beers in the united states can be hit or miss, packaging and time and green glass and whatever else, but this one is a great success, at least my bottle was. an odd and rarer amber style saison, not enough of these around, hazy and muted in color, but with a positively massive white head with great retention and spider web lacing everywhere. it smells a bit funky, feet and socks meet weird ale yeast and summery harvest season funk, all in a good way. its yeast driven for sure, like all fantome beers, but it has a great grain profile. luxurious in feel too, but i taste the caramel color of the beer all the way through, along with a more meaty wheat profile that sticks all over the palate. carbonation is really intense, but can hardly penetrate the malty density of this, which i love, but its also dry as anything, crockery and crisp for a saison, and the yeast leaves a funky sensation on the tongue. just top quality beer, as interesting as they get, love the yeast and the heavier grain bill on it. expansive and large, but a very well hidden 8% abv. well worth the price.

s beer is a huge gusher. Lost almost half the bottle.

The color is this unfiltered hazy peach orange.

The aroma has fermented apricot, tons of phenolic and band aids. Some funk in there.

The flavor follows with this apple cider sweetness, a bit of fermented fruit flavor, again the band aid phenols. There’s lots of spice and green herbal. Actually a bit of lemon tartness going on. An extremely weird amagalmation of fruits and chemicals and herbs and spices. Strange.

A weird beer. The flavors were interesting, but it didn’t work for me. I actually had to drain pour this.

750 ml cork and capped green bottle poured into a Bruery tulip.
8% ABV, best before end 2015

A - Good thing I saw the gusher warnings and knew what to expect. Foam rose out of the bottle as soon as the cork was pulled, but having expected the high carbonation, a quick pour kept all the hazy goldenrod beer in the glass. Tall, tightly packed bubbles create a formidable head with great retention and moderately sticky lace.

S - Calling Fantôme's Boo! rustic is an understatement. This musty, earthy, dry beer reeks of an unfinished, rarely maintained basement, but isn't that how the breweries keep over there? Careful to protect the natural environment that creates their beers? Plastic notes are the only thing in this fresh pumpkin rind-filled nose that come close to offending me but, even then, it's not terrible and seems to stem from subtle smokiness. Is Boo! Weird? Sure. Out there in terms of a pumpkin beer and/or saison? Definitely, but it smells like an interesting brew and, damn it, at the core I'm just happy it's not skunked.

T - Delicately smoked malt is a wonderful compliment to freshly lobotomized Jack-o-lantern with classic rustic yeast overtones completing the ensemble splendidly. Clove with a dash of white pepper adds spiciness to the finish while suggestions of lemon bring in subtle tartness. From start to finish, this beer is quite tasty.

M - Despite the gushing, it's carbonation is under control, dancing on the tongue joyously as this surprisingly light-bodied beer finishes as absolutely dry as they come. Alcohol is nowhere to be found, just lingering smoke and spice characteristics remain on the palate.

O - Fantôme's Boo! combines lightly smoked malt and pumpkin into a very rustic saison for complexity and uniqueness that demonstrates a true step out of the box. A one-of-a-kind distinctive beer that might be polarizing - love it or hate it - Boo! is one that won't soon be forgotten by those who try it.

The bottle gushes when opened. Big fizzy head after eruption from the bottle, nice lacing, very hazy peach color.

Nose big funk, gourd like and sweet potato like aromas, pumpkin, weird spices, light musty, lots of spices, fair grainy sweet syrupy malts. Interesting but strange.

Taste syrupy mess, sweet weird malts, lots of strange spices, spicy like, gourd and pumpkin flavours, yam as well, toasty vegetable, vegetative in general, weird bitter spicy flavor, syrupy candy flavours that I can't really label, light booze warmth, some heat from spices. Finish is sticky sweet, candy, syrupy gourd and yam flavor, more bitter spices.

Mouth is med bod, syrupy, light warning booze, spices heat too, fluffy carb.

Overall weird but interesting, although not very tasty.
