Murky amber brown appearance and a foamy beige head with good retention and lacing. Stone fruit, cherries, clove, peppercorn, barnyard funk. Medium body, moderate carbonation, tingly.

750 ml capped and corked green bottle, as Fantôme été, Cardinal Pub & Bar, Stavangee. ABV is 8%. Cloudy brown colour, some yeast floaties, low off-white head. Moderate aroma of farmhouse and ripe berries, hints of oak. Very moderate carbonation. The moderately sour flavour has notes of berries, brettanomyces, oak and cider. Very moderate hops. Not my favourite Fantôme beer this one.

White head. Some lace. Golden color. Slight cloudiness.
Herbal, citrusy, tart, spiced. Lots of hops and bitterness. Orange peel. Lemon zest. Saison flavors. Wheat and bready malts. This is a winner. Very well done.

Poured a murky, muddy orange brown body with minimal head and almost no lace. The aroma strikes me as boozy and apple brandy-ish with some sweet possibly dark fruits hanging around. The beer seems to mix an apple or pear dipped in honey sweetness with a grape and raisin vinous/dark fruit taste with a bit of sour crispness on the finish. Not a bad beer at all but I was expecting a classic saison from Fantome and this is not a typical or classic saison.

Review is for two different vintages. But rating is only for the first one -- a rare 2005-ish bottle. Drank 2016.
Pours like the haziest NE IPA you've ever seen. Like mango juice hazy, orange, glowing.
Aroma is Fascinating. Herbal, vanilla, sourness, citrus. Minty perhaps.
Taste is insane! Like someone melted a orange creamsicle into a gin & tonic. A LOT like that in fact. Tart, almost sour, and a bit funky but tastes incredibly fresh. Not the least bit tired despite its 10 years of age, and doesn't have a hint of alcohol burn despite its 8% abv. Amazing. Absolutely amazing.

Next is a ~2012 vintage (best by 2017). Aroma is sour, Gueuze-like, a bit acetic, and definitely some classic Fantome funk.
No head, very little carb. Couldn't get a head to form even pouring from 8 inches above the glass. Looks like unfiltered apple cider. Just like that, no other descriptors needed. Yep, an ugly beer!
Taste is pleasantly tart, but has a weird mouth-drying, flem-forming aftertaste. A bit of herbal tannin bitterness. Kind of sweet, a bit of overripe fruit. Strange - my throat gets quite flemmy after each swig. Not sure I like that. Would love the taste of it weren't for those factors.
Mouthfeel would be nice - it has substantial body - but in the end it is quite lacking due to low carb, tannins, and wierd flemminess.
Overall I didn't love this one. I feel like it had potential, but some odd flaws kept it from being very enjoyable. Too bad the pre-2010 iterations are white whales. Would love to revisit those but doubt I'll have the opportunity, but I am not sure I'll want to revisit the 2012 vintage.

750 ml capped and corked bottle, label says best before end 2017. Served in a Prairie Teku, the beer pours a hazy brown color with pretty much no head whatsoever. No lacing, either. Aroma is subtle at first but gets stronger as the beer warms, it smells like red apples, caramel and woodiness. Luckily the flavors are stronger in comparison to the aroma. It tastes like red apple, cherries, caramel, vinegar, stone fruit, earthiness, oak and some light spiciness. The tartness is subtle. Mouthfeel/body is light/medium, with very low carbonation. I thought this was OK overall, it's not my favorite Fantôme brew but still an interesting one. I'd like to try a different batch of this in the future.
