Bottle from Etre Gourmet. Served in a Fantôme tulip at Kan's place.
A - White foam settles to a thin collar, leaving behind wispy splotches on top and minimal lacing. Hazy ambery body that is a tad darker than your typical Fantôme.
S - Aggressive, sharp, continental hopping, with loads of pine, herbs, and earthiness. The usual Fantôme yeast character is really dialed down here, and the candi sugar dominates the malt bill. The aroma is kind of rough and the combination of flavors doesn't totally work.
T - Sweet malts, lots of candi sugar sweetness, red fruits, and very low yeast character. More of a Belgian Strong Pale than a Saison; might have to change the listed style here, because I can't find any information either way. Hop character isn't as present in the taste, but instead manifests as potent bitterness.
M - Zesty carbonation, medium-full body, with a dry finish and some lingering oily hops. A bit of alcohol warmth; 8% is definitely accurate in this case.
D - A very weird mix of flavors and not particularly successful. I'm glad that this doesn't have the smokey yeast flavor that has plagued other Fantôme products recently, but it still isn't very compelling. Disappointing relative to some of the previous beers in the Santé series.
