750 from appalachian vintner
barrels on their third use give more oak than wine, bottled july 12 consumed nov 12
a: served in a crooked stave chalice, honey golden in color, slightly hazed, with a light layer of carbonation
s: notes of good chardonnay and clean oak mesh with a crisp saison malt body, the wine really shows here and often takes center, fresh white grapes with a deep apricot side, tropical fruits and apple, a current of alcohol, saison yeast with hints of bread and spice, honey and pineapple, great blend of sweet and acid
m: carbonation between moderate and high, prickly on the tongue, body around a low medium
t: a similar blend of characters as found on the nose opens on the palate - a saison slightly on the maltier side but still quite clean melds with an oaky chardonnay, pineapple and apple, peach fuzz, bready saison yeast with a touch of fruity spice, going dry around the middle to oak and a grassy hop bitterness
o: the oaky chardonnay plays extremely well with the saison base, the beer and barrel ease together into something a little sweeter or heavier than the traditional saison, the nose is really quite nice and showcases all the best parts of the barrel

The brewery opened an old bottle at the Omega Point pre-release party on 3/6/15. The flavor and the nose on this was fantastic. It had lost most of its carbonation and was a tad oxidized, but I think it must've been fantastic when it was fresh.

Served from tap into an Olde Hickory goblet (proper!). Poured a hazy yellow-orange with a one finger white head that subsided to a minimal amount quickly. Maintained excellent lacing throughout the glass. The aroma was comprised of sweet malt, wheat, grain, earth, fruit, and bread. The flavor was of sweet malt, fruit, bread, wheat, spice, grain, and subtle funkiness. It had a light feel on the palate with high carbonation. Overall this was a pretty decent brew. For the style this one definitely had all of the right characters going on in it. I just really wish it would have brought a new component to the party. While the dry funkiness I picked up on was a start, it really felt out of place unfortunately. If you are a fan of the style it is worth your time trying if you get the opportunity to do so.

bottle picked up in NC when visited not all that long ago. tagged as bottled in july of 2012. enjoyed from an olde hickory half pint kind of taster.
a - brew poured a transparent yellow orange with a very thin fizzy head that fizzed away almost as soon as the beer settled in the glass.
s - smells fairly fruity and wheaty. some bubblegum and strong apple flavor.
t - taste is similar...lots of wheat and apple. a fair amount of booziness. some earthiness.
m - surprisingly boozy with a dry finish.
o - overall, very apple heavy on the flavor with some booziness...kind of feels almost like a hard cider. not a bad beer, but missing a lot of what i look for and love about the saison style.
