The peppery-dry, toasty-dark and tantalizing fruit character of saison is pushed and prodded along with a cidery and sour prop. The blend is both sweet and sour.

Its semi-spritzy pour shows a reluctance to dissolve its froth of a head as the foam struggles to retain any more than a minute or two. Its wine-like demeanor late is reddish brown with a tawny bronze haze, particularly around its edges.

Tangy and sweet in its scent, its acidity plays out like hard cherry candy. Complementing toast, nutty and grain give the fruity center a wrap of savory malt and robust toastedness. A vinous merlot-like scent rises as the fist sip ensues.

And just like the nose, the flavor kicks off with that hard candy-type sweetness, laced with cherry, berry and grape. Cola-like in its sweetness, the thin malt flavor is honey-thin and lightly of toasted caramel. As nutty brittle emerges, its middle is tempered by the wine-like tartness and peppery finish.

Medium bodied, the sour ale is kept from absolute dryness by its residual sweetness that's slow to fade. Somewhat thin across the middle, the ale's spicy finish concludes with a smoothly toasted and nutty-sweet sourness. Mild alcohol and wood tannin remain and give the ale a semi-flinty aftertaste.

Silly Sour is more of a sweet and sour beer with peppery and nutty aspirations. Outside of a pairing with pad thai, the beer might have a lackluster demeanor either as a saison or a proper sour. As is, it has a fairly ordinary Flanders Red profile.

Pours a hazy dark copper with a foamy khaki head that settles to a partial film on top of the beer. Foamy rings of lace line the glass on the drink down. Smell is slightly sour with malt, grape juice, and grape jelly aromas. Taste is much the same with slightly sour grape juice and grape candy flavors on the finish. There is a mild amount of acidity on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp mouthfeel. Overall, this is a pretty good beer with a mild tartness and fruity profile that make this one easy to drink, but nothing too extreme for a sour.

11.2 oz bottle poured into a Brasserie de Silly tulip glass. No bottled on date except for “SS2407 GLOBAL” stamped on the cap.

Appearance: Pours two fingers or pink tinged head. Cherry pink body. An inviting appearance.

Aroma: Earthy yeast, fleshy tart apples, candi sugars, nutty munich type malt.

Taste: An earthy funk opens up followed by some green apple tartness, some dusty bitterness from the saison, lots of sweet jammyness and a sweet malty finish. Imagine pulling a dirty underripe apple off a tree and taking a big bite.

Mouthfeel: Effervescent, drying and cloying.

Overall: An interesting idea and recipe but it doesn’t really come together very well. Simply put the beer is too sweet and becomes cloying. There is some nice tartness but it’s overtaken by the sweetness and the malt build only adds to it. Imagine a Jolly Rancher’s attempt at a Flanders Red.
