APPEARANCE: Poured from a 12oz. bottle into my Goose Island pint glass. Bright orange in color, very transparent with a thin head that quickly vanished. The thin head also led to an almost complete lack of lacing. The impressive coloring and clarity, however, made up for the lack of head and lace. A very pretty beer.

SMELL: Strong nose. Sweet, floral and hoppy smelling with a hint of malt.

TASTE: Not nearly as sweet as the nose would indicate. The bitterness up front remains throughout the sip and leaves a dry, hoppy aftertaste. Despite a hint of malt in the nose there is a noticeable lack of malt flavor in the St. Terese's.

FEEL: Light and refreshing. From the first sip it is clear that this beer does not have a tremendously high ABV. It is also quite thirst quenching and crisp. Almost too easy to drink. At the end of the glass I did not feel like I had just consumed a full beer...or even a full water. I'm not sure if that's a horrifying thing or great, but I'll give Highland the benefit of the doubt and go with great.

OVERALL: The taste could use just a tiny bit of malt flavor, but generally I would rather have a beer err on the side of hoppiness, which this one certainly does. The 5.2% combined with the lightness of this beer makes it an excellent session beer for those of us used to higher ABVs.

Highland St. Terese's Pale Ale has a thick, spongy, off-white head, a clear, burnished-gold appearance, with some bubble streams, noticeable sediment suspended throughout, and some lacing clumps left behind. The aroma is of sourdough bread, some lemon, and hop resin. Taste is of those elements, with an unfortunate underlying tap water note. Mouthfeel is watery, and Highland St. Terese's Pale Ale finishes dry and easy drinking.

Poured from a bottle into a pint glass. The beer is a solid example of an English Pale Ale.
Asheville has turned into quite a good destination for sampling craft beer and being from nearby Knoxville is a joy! I enjoyed it quite a bit and plan to drinking it again in the near future.

Poured from a bottle into a shaker pint, the beer is a bright, yellow-gold coloring with a steady flow of carbonation and a fluffy, dense, off-white, foamy head. Aromas of toasted grains, subtle caramel notes, slight bitterness, and some floral highlights. Flavors are roasted and sweet forward, with a buttered toast character, some floral highlights, citrus notes, and a subtle underlying bitterness. Sweet and tangy through flavor, with a subtle sweet aftertaste, as well. The body is light and smooth throughout. Subtle bitter linger on an otherwise clean, effervesced finish. This is right along the English Pale Ale style.
