A- Restaurant is dimly lit. There is a food bar where you sit in front of the Chefs that are cooking... very cool. There is a bar right in the front.
Q- In terms of beer, they do things right. I was served an Orval in an Orval glass and a Chimay Red in a Chimay glass.
S- They offer 5 star service. They will make sure you are always pleased.
S- A very nice beer list, put together thoughtfully to pair with their food. Lots of European brews on here, only a handful of American.
F- I'd like to see anyone ever complain about their food. I had the 3 course prix fixe meal, filled me up and then some. I was sorry I couldn't finish my veal tenderloin.
V- It's one of the more expensive restaurants, but a great time anyway. For price references, a bottle of orval is $12 and I think the Rochefort 8 is the same. Chimay Red is around $10 or 12.

CLOSED July 2011.
Too bad, since it was a great place to match beer with great food.
Google the restaurant name and Las Vegas if you want to confirm the closing.
Rest of this post is filler (to meet BA requirement of 500 character minimum)...

I went to Rosemary's on a tip from Hoser.
The restaurant is located far from the strip in a suburban strip mall. Upon entering the restaurant we were shown to our table by a hostess and sat at the table by two servers, wow that is what you call service. The beer menu is very good for a higher end restaurant that one would expect to only see a good wine menu. The beer menu can be viewed from their website. I ordered the five course beer pairing menu. Every beer and food pairing was perfect. I believe that it was six ounces of beer for every course, which does not sound like a lot but once you go through five courses its definitely enough. The service is of military precision, friendly and knowledgeable. The food is excellent, the cuisine is very refined. Rosemary's is definitely not your meat and potatoes type of joint, I found the portions to be of perfect size. It's not a cheap restaurant but you definitely get what you pay for.

This was the highlight of my recent trip to Las Vegas. Unassumingly located in a strip mall, this place proves the old adage to never judge a book by its cover.
As you enter, you will see a cozy bar. The larger than expected dining rooms are located behind the bar room.
They have a large and well thought out beer list with an emphasis on offerings from Belgium or their US counterparts. They list a short description of the beer and the ABV. This was the best beer list I encounter while in Vegas.
The food is fantastic. I started with a BBQ shrimp appetizer that was served over blue cheese coleslaw. I then had the wilted spinach salad and then had a perfectly seasoned and cooked prime rib eye. Desert was more beer and a yummy crème brule.
Note they suggest both wine & beer pairings on their menu.
Service was incredibly professional and the meal was well spaced.
Pricey but worth it!
I really recommend you try this place!

Located in a non descript strip mall. Inside though it is very nice, white linen table cloths. Pretty fancy. More of a restaurant than a bar. Bar has about 20 seats. Great happy hour special. Half price drinks and appetizers. A small but well thought out list of Belgian beers. Knowledgable staff. You can buy some discounted gift cards at costco, either locally or online $100 for just $80 that helps with the price, can be used for both beer and food. Awesome food. They do a fixed price dinner with either beer pairings or wine pairings. They also have really good bloddy marys-made with their own homemade tomato sauce for a change of pace.

A very expensive cab from the strip delivered us to this restaurant located in a small strip shopping center. We had reservations (a must) but arrived early and sat at the bar. I had a
Popperings Hommel Ale and my wife had a Manhattan. The bar tender was attentive and pleasant and was handling a full bar and lounge very easily. We were moved to our table and had 2 very helpful waiters, both top notch. Dinner was excellent with a pairing of 2 appetizers and the suggested Schoenramer pils then a fillet of beef with a great Cabernet. My wife had a fish from the evening specials and enjoyed her wine pairing as well. Desert and coffee then they arranged for a cab back to the hotel. We were able to share the appetizers, salad, and desert. It was Wednesday which is lady's night so her meal was discounted as well. A great evening for us both.

Really great restaurant that gives good focus on quality beer. I consider Rosemary's to be one of the best restaurants in Vegas off the strip and I believe it has been voted the best restaurant off the strip by Vegas residents recently. They have a lot of Belgian or Belgian style beer and try to pair it up with the food which is pricey, but excellent. The restaurant has a nice atmosphere and the obvious upscale restaurant vibe. The food is certainly the focus here but they've done a good job offering good beer with it.

Stopped in here with my wife for a few beers and appetizers, based on other reviews and a desire to get off of the strip.
Great place overall. They really get the art of pairing great food and great beer, as an alternative to their excellent food/wine pairings. The atmosphere is an upscale restaurant (the prices reflect this) with a small bar area in the front. Service was friendly and inviting, we were underdressed so we headed for the bar. The attentive bartender said we would have been welcome in the dining area despite our casual attire.
The beer is Belgian focused, only 3 taps (Chimay, Blanche de Bruxells, and Muadite), with at least 20+ other quality Belgian/German bottles available in proper glassware.
Food was excellent but pricey. We had two "half plates" that averaged $13 each, but bread was included, and the bartender/chef gave us unsolicited complementary taste samples of an appetizer and desert.
Despite the high prices, if I were a local resident, I would probably be a regular customer, and that is the highest compliment I can give.

Owners Michael and Wendy Jordon have a goldmine here that is largely undiscovered by the traveler to Vegas, but well known to the locals.
It is far enough from the strip that most conventioneers don't go there, which can be good if you are weary from the show floor.
I consider this to be one of the best restaurants in the U.S., definately the best in Vegas. Excellent food, always changing menu, beer infused dishes and beer paired diners (wine also). Head beer (and wine) guru Mike Shetler knows his beers and will lead you down the beer trail during your dinner.
I have eaten here over a dozen times and every time is an excellent experience. I recommend everything on the menu; but always enjoy the beer infused dishes paired with the recommended beers.

Went here for a birthday dinner and ended up leaving extremely impressed.
We made reservations and once we arrived we were immediately seated. Servers and hostess were extremely friendly.
The appearance of the restaurant from the outside isn't all that impressive and the inside is nice, but nothing out of the ordinary. Seating is kinda tight, but it's still a very nice place and worthy of the high costs. These are the only reasons I gaive it a 4 on "atmosphere".
The staff was on top of everything. We were constantly waited on, cleaned up after, made sure everything was fine, etc etc. Was a nice change of pace.
Food was top notch. For $55 they offered a prixe-fix Dinner that was well worth the money. They gave us a little extra side since it was my birthday.
Beer selection was great. Very cool how they pair meals with beers, and the beers pair very well. I paired my Dinner (scallops) with their recommended La Fin Du Monde. Went together perfectly. They also serve all their beers in their appropriate glassware.
Overall, I would highly recommend this place to check out atleast once. For 2 of us, with drinks it was around $200, so be prepared to spend money. Very very worth it though.
