From Notes - Sampled on tap at the Alchemist on 7/3/10
Appearance: Pours a slightly cloudy straw color with a 1 finger white crown that displays moderate retention and lace.
Smell: Grapefruit and lemon rind, saison fruitness, banana, bubblegum and a bit of bready malt.
Taste: Bread, banana, bubblegum and herbal hops. Kind of a mess.
Mouthfeel: Thin side of medium bodied with moderate carbonation.
Drinkability: Would rate it higher if the taste was better.

A: Very pale yelow, unfiltered with a white 2-finger head. Servered on cask in a tulip glass. Great acing and a slow, creeping effervescence.
S: Bready with a nice spiciness: Coriander and nutmeg.
T: Mellow Belgian flavors: bright malts, banana bread, coriander, with a notably hoppy aftertaste. I've never had regular FD, but on cask it is definitely smooth, mellow and delicious.
F: A creamy feel (could be the cask-aging) that is not silky. Very little presence for such a tasty beer. Smooth and light as a feather.
D: High drinkability. This goes down easy, and has a feel that barely registers: you could have 4 before you know it!

Taste: Malt and alchohol and residual sugar. Some clove and spice, maybe some lavender. Orange rind flavor and yeast flavor notes in the background.

Drinkability: An easy drinking beer.

On cask, via hand pump, @ The Alchemist (Waterbury, VT) on 2/18/11. Served in a tulip glass. ABV is listed as 7.5%.
Pours a hazed gold, topped with a finger sized cap of bright-white head. This retains with a thin creamy richness that rings the sides of the glass with some robust froth. The aroma smells floral and spicy, with some sweeter notes of fruit, candy, honey, and bready grains. That ripe fruit character really pushes the nose here but overall this is pretty balanced in the nostrils.
The taste is similar but this has much more of a hop presence, with a crisp green bite of bitterness that is tempered by some soft fruit notes of peach and orange. The fruit melds nicely with those honeyed sweet notes and the bready grains from the malt before those bitter hops and a light yeastiness finish this crisp and dry with a bit of trailing yeast. The mouthfeel is medium bodied and fairly sharp throughout but some underlying creaminess from the cask really keeps this easy in the mouth for 7.5%.
I think that cask was a perfect presentation for this American take on the style, as it really helped mellow and blend those hops and overall yeast presence into that sweeter character here, keeping this balanced and very approachable for a bigger Saison. Well done.

Smell: some sweetness, a good deal of hoppy citrus and floral aromas, with hints of Belgian esters and phenols. Smells like a Belgian APA so far... almost reminiscent of Pretty Thing's Jack D'Or.
Taste: follows the nose nicely. Honey, fruits, citrus, flowers and hints of spices mingle with spicy phenols and esters. Delicious.
Feel: medium thin and good for the style. Crisp, refreshing, and no lingering bitterness or alcohol warmth.
Drink: could easily drink this one all night if you wanted but be careful... that 8% might sneak up on you.
Overall, very pleased with this one also. This is kind of like an American Saison, and I really like the way the American hops play with the Belgian yeast. Recommend this one. Cheers!

This was on the cask the other evening and was blended with the remanents of Wellness.
It was served in a 12 oz. tulips and had an incredible rich and creamy head. The aroma was a musky, earthy funk.
The taste was of a saison, but more earthy. The funk was there, but not over whelming.
A very drinkable beer, hurry in for this one, I don't think it will be around for very long.
