This is up there in my Top 3 single IPAs at the moment, and I actually prefer Blind Pig over Pliny the Elder. Poured from a 500 mL bottle, freshness date prominently displayed. This was bottled less than 2 weeks ago.
A: Muted yellow-orange with a nice fluffy white head. A little cloudy. Plenty of lacing.
S: Very floral bouquet of hops. I don't get any of the sweetness from less balanced IPAs ... just a nice and potent blast of fresh hops.
T: A little bitter, but very well balanced against the malt bill. No single note overpowers the other (i.e. citrus vs. pine), and a very subtle hint of honey.
M - Very smooth, balanced, creamy and light (for an IPA).
O - I don't know if it is just me getting older, but I enjoy the fact that Blind Pig is so balanced with a lower abv% than a lot of IPAs out there. Very drinkable and one of the best IPAs on the planet. A perfect example of the west coast style.
