Notes/Commercial Description:
We turned our regular Damnation recipe into a Tripel. It is bittered with Tomahawk and has Sterling and Cascade in the mid-boil and finish. The beer was then aged on new American oak chips for two to three weeks.

A: poured into a tulip glass to a slightly cloudy golden hue with a two finger dense white head with excellent retention and solid lacing
S: smells of fruity esters and spicy yeast with a bit of sweetness
T: very smooth flavors with some fruitiness, some sweetness, a bit of spice, and slight oakyness. Swallow is sweet, fruity and spicy
M: medium in the mouth with excellent carbonation and a drying finish
O: A fantastic beer that I've been sitting on for far too long. The alcohol is well hidden with just a hint of a warming sensation.

375 mL bottle poured into a snifter. Batch 69.

Appearance - Big white head after a very difficult cork removal. Thick collar. Wispy surface. Golden orange hazy body.

Smell - Bready and estery. A little phenolic. Kinda fruity. A little earthy. Quite oaky. Very odd.

Taste - Belgian sweetness and yeastiness. Extremely oaky. Sweet and estery up front. Doughy malts. Gets earthy and bitter in the back.

Mouthfeel - Boozy. Bitter. Medium heavy.

Overall - An odd beer. A smell I can't quite place. The flavor is complex, but not really a tripel. Points for being interesting.

Batch 46 (bomber) - Bottled 1-09...drinking 12-31-13

Had this cellared for almost five years...New Year's Eve? Why not?

Pours a darn near clear amber color with a billowing bright white foamy head. Impressive after many years lying low. Decent lacing.

The smell is sublime. The oak chips shine through with a big banana aroma in the background. Light alcohol is present with slight burn on the nostrils if you breathe deep enough. Pears, raspberry and more oak as you whiff. Really good stuff.

The taste is a combo of sweet fruit, BIG oak, bananas and booze. Amazing how the oak really is still majorly present with this. If this was aged for only two or three weeks on oak chips, them oak chips were pretty strong in flavor. A kiss of hops on the finish and a slight spice as well. Juicy with a lingering aftertaste.

Silky and full-bodied mouthfeel.

Overall this session was amazing. I'll admit I was a little concerned with the amount of time this sat in the cellar and how it would age. Those concerns were unnecessary. This is an amazing brew and Vinnie knows exactly what he is/was doing. The oak chips brought out something special in this beer (not a huge fan of the Damnation) and it is not to be missed. Pricey? Maybe. Worth it? Absolutely.

Batch 69 (giggity)

A: Pours a very hazy orange. Tall fizzy off-white head that slowly fades away. Decent fluffy bits of lacing. Good head retention to boot.

S: Whoa. Loaded with dark fruits. Raisins stand out like a beacon of light. Very strong. Sweet caramel and bread with a little clove and banana backing it up. A little toffee and oak. Does not smell like any tripel I've ever smelled. It's 90% sweet raisins.

T: Huh. Very bready with some caramel. Loads of raisin and clove. Gets spicier in the middle and finish with LOADS of cloves and some minor grassiness I'd say. A little drying oak in the finish with more raisins. There's an odd, all-encompassing flavor that I can't quite place. It's almost like the funkiness/tartness of a saison but not quite. If I had to guess I'd say it's rotten pears. Strange.

M: Heavy and sweet. Lower carbonation.

O: Interesting tripel. Very unusual. Not much oakiness to this one. It's quite sweet and has an odd funkiness to it that I don't usually get. Lots of sweetbread and yeast at least. Didn't quite hit me right but it's not horrible - just not as good as I was expecting. Not a big fan, and tripels are usually my favorite belgians.
