Poured into a flute. Batch 006
A: Pours a crystal clear straw with a ½ finger of fizzy head. Heavy carbonation.
N: White grape, pear, white oak, vanilla and hints of sour cherry. Very nice.
T: Mildly tart lemon, pear, chardonnay, lactic acid and light grains upfront. More sourness comes in mid-palette with white grapes and vinegar along with soft notes of tropical fruit, butterscotch and funk. Finishes with naked oak, vanilla and tobacco.
M: Light-medium bodied, lively, creamy, slightly tart and a little dry and sticky.
O: This is an exceptional Sour! Very refreshing and not overly harsh on the taste buds. I will be picking up more when I get a chance.

Pours a clearish light golden color with a wispy off white head. Aroma is initially vinous with mild brett. Grapes, apple, oak and lemon. Flavor is mildly fruity, with strong white wine and oak and a slightly funky finish. Medium bodied with a slightly sour, dry finish.

Batch 003 purchased on 3/16/2008, waxed, stored at 55 degrees for 1,370 days, and opened by me tonight. This is my last bottle of this vintage. Snifter. When I remove the wax and cage the cork shoots out with an emphatic pop, but the liquid does not rise or gush.
A: Bright dark gold with perfect clarity and an enormous white mousse-like head rising three fingers above the liquid exhibiting exceptional retention. The lacing forms a thick white coating on the sides of the glass as the head recedes.
S: Ripe granny smith apple blends with wet leather and white grape. Oak is strong but not overpowering. Earth is apparent and I get light notes of barnyard and earth. The aroma displays a moderate tartness with evident lactic characteristics. There's a decided Chardonnay presence.
T: Chardonnay up front with ripe golden apples, a soft buttery note, and a piquant oak character. Lactic notes are pronounced, and there's a lower moderate tartness. Wet leather blends with earth and a mild spiciness. The finish is dry with evident tannins.
M: Light in body with high carbonation. The mouthfeel is bone dry and sticky.
Overall: One of the more successful aging experiences I've had. This is exceptional.
