Phantom Ship is an exciting Belgian-style tripel aged in bourbon barrels. Goldenrod in color with a dense head and creamy mouthfeel, this robust, bold brew presents phenolic flavors of white pepper and peach skin from the warm fermentation, along with vanilla and subtle spiciness from the bourbon-barrel aging.

First official review, so I'll keep it short and sweet.
I've had this one cellared since buying 3 of them last year. The one I opened fresh last year left me unimpressed; folks, if you have one or two, do yourself a solid and let it age a year or two.
This poured a completely golden cloud, with a creamy head that dissipated within a minute or so. This has mellowed nicely, and I am impressed with the hidden heat after only 18 months of aging. The nose isn't there, or maybe it is..my whole house smells like cinammon and apples a week before Christmas, so I'll have to account for that.
I love it. it's worth the price, and if I can find a few more bottles, I'll snatch them up fast.

Poured from a 22 oz. bottle into a Piraat tulip glass.

Appearance: Pours with a moderately dense bone-colored head over a slightly hazy orange-amber body. Retention is good and lacing is medium.

Aroma: Bready malts, fruitcake, yeast, and undertones of alcohol. Woody barrel aging effects with delicate bourbon.

Flavor: Lightly toasted malts, soft fruit, faint spiciness, vanilla, bourbon and yeast. The bourbon and barrel aging seem to come forward as the ale warms.

Mouthfeel: Crisp, semi-dry finish. Smooth, medium body and medium+ carbonation. Alcohol presence is light for ABV.

Overall: An enjoyable, quality Tripel with a twist: light-moderate effects of bourbon barrel aging.

Poured from a 22 oz. bottle to a tulip glass.

(Appearance) Pours a fizzy and frothed head of a golden white color over a moderately hazy sunset amber body with moderate carbonation and varied sediment in tow. Retention is average and lacing is light and spotty. 3.5

(Smell) Bread malts, pale syrups and undertones of grain alcohol. Light barrel aging characters of delicate bourbon. 3.75

(Taste) Lightly toasted syrup malts, bread malts, effervescent spiciness and soft tanginess of barrel aging and yeast. 3.75

(Mouthfeel) Texture is slick, lightly sticky, smooth, medium dry. Carbonation is moderate, generating a light frothiness and a medium crisp finish. Body is shy of medium for the style, medium+ overall. Alcohol presence is light and there are no off characters. 3.75

(Overall) It's an enjoyable Tripel Ale, a bit limited on the flavor range and not much of an impact from the barrel aging. 3.75
