Our Siren Noire isn’t your father’s chocolate stout. We’ve used almost 3 pounds of Belgian coco nibs per barrel. We’ve aged it for five weeks in bourbon barrels with vanilla beans added. A mix of dark malts gives Siren Noire a well-rounded body that is decidedly chocolatey—but without being extraordinarily sweet. Brewers Gold hops contribute an earthy spiciness, with notes of black current.

2013 edition, 12 oz bottle, poured into a pint glass.

Appearance: Pours a beautiful, completely opaque, pitch-black color with three full fingers of chocolate-colored head that dissolved away into a thin lacing of foam that partially covered the top of the beer.

Aroma: Very nice!! Strong aromas of roasted malt, bourbon, oak, vanilla, chocolate, brown sugar, and molasses.

Taste: Wow! Actually, Holy Shit!! This is awesome!! Massive flavors of roasted malt, caramel, vanilla, bourbon, oak and brown sugar-like sweetness. Awesome! The bourbon really comes through on this beer, much like New Holland’s Dragon’s Milk and Goose Island’s Bourbon Country Brand Stout. But so too does the chocolate, and the two flavors, the bourbon and the chocolate, blends together awesomely!

Mouthfeel: Chewy and smooth as silk, as there is no carbonation what-so-ever. With an ABV of 9.5%, there’s a very pleasant alcohol warmth on the palate.

Overall: Wow!! What a beer!! One of the best bourbon barrel-aged imperial stouts that I’ve had in fact! Strong, awesome, flavors of malt, chocolate, vanilla, brown sugar and bourbon. Fantastic!
