All Galaxy hops in this one! Picked up a 6 pack that was bottled 1.23.12; poured into tulip glass...
A- Has that familiar deep amber, almost brown color. Nice finger of head with great stability, though the lacing isnt quite what it has been.
S- Nice crisp fruits in the nose. Pineapple, grapefruit, mango, and banana. Caramel bready backbone- very similar malts that are super easy to pick out in these hop projects.
T/M- As soon as the beer touches your lips/tongue there is a flash of orange juice, citrus flavors. The fruitiness is then surprisingly taken over by earthy, piney, woody hop flavors with just a tiny fleeting splash of grapefruit. Nice transition from bitterness to flavor back to a mild lingering bitterness finish. Medium bodied with a great dose of carbonation.
O- Best yet I'd venture to say, though I took a vacation from these for awhile. Kind surprised by the earthy/piney hop flavors from the Galaxy hops, but I think one of the main problems with these are the early hop additions with these high alpha acid varietals. Linus- move em up for more flavor and a bit less empty bitterness!

Bottle: Poured a lightly hazy amber color ale with a large foamy head with good retention and some lacing. Aroma of floral and citrus notes with some subtle fruity ester is quite interesting. Taste is a mix between some lightly sweet caramel malt notes with some floral and light citrus hoppy notes mix in with some fruity ester. Body is about average with good carbonation and no apparent alcohol Very interesting and tasty and makes me want to try more beers with Galaxy hops.

#63 bottled on Feb 6
A little darker than I like my IPAs to be, but nice head and lacing.
Smells of yummy galaxy hops (used late in the boil and for dryhoping).
Tastes of citrusy hops, bitterness and malt could be dialed back a touch to make this one really amazing.
Mouthfeel is just fine.
I think this is my favorite Hop Project yet. There are only 2 or 3 other versions that I have bought this greedily.
On a side note, I have noticed that the Hop Project beers peak at about 2 weeks from the bottling date. This same batch at 3 days old was not nearly as good.

12oz. bottle -- dated No63 Jan 23 -- served into a tulip glass
Pours a brilliantly clear orange color. You can see all the carbonation bubbles rise up to form the .75 fingers sized head. The buttermilk foam leaves behind stops-and-starts of lacing. A nice looking beer.
Hope Project #63 smells mostly of an orange-pine combination that reminds me of a lot of East Coast IPAs. There's a malty element on the nose that reminds me a lot of breakfast cereal... I can't quite place the specific cereal, I'm just definitely reminded of breakfast.
The Galaxy hops here give off lots of candied grapefruit and even more orange. Pine takes over on the midpalate and remains through the finish. Kind of a chalky, grain husks malty flavor to the finish.
The mouthfeel is medium-bodied and semi-sweet. It works pretty well and makes me want to quaff the Hell out of this bottle. Overall, this is a solid, above-average IPA. Nothing outstanding, but a nice fresh six-pack from one state away is nothing to scoff at. It tastes like a beer that will diminish in quality real quick once those malts start taking over, so enjoy this as soon as you can.

Had on tap at 12 South Taproom in Nashville.
Beer pours a nice amber color with a small amount of white foamy head.
Beer smells very strongly of citrus and grapefruit notes.
Beer tastes surprisingly earthy for an IPA. A bit of the grapefruit taste, followed by some mellow earthy tones and a bit of a bite at the end. Very different.
Beer is medium bodied and fairly easy to drink.
