When we first got our noses in and hands on the experimental hop, then known only as HBC 369 CV, we knew it was something special. We wanted to make a lower alcohol IPA that didn’t drink like many others we tried. There was good hoppiness to most of them, but the body seemed lacking. We went to work on solving this, and it took a bit of time. When we were finally convinced our session IPA was ready for prime time, HBC 369 had been named: Mosaic. We employ this chameleon cone -with its exceptional palette of flavors- at each stage in the hopping process. Paul has actually created a lower alcohol session ale with the flavor and body of an American IPA. This beer has developed a following in the active lifestyle crowd, especially with cyclists, but it’s also a great beer when you just want a little more hang-time with your IPA. Dedicated to our hop-loving friend, David Moes, we brew this beer for true hop heads.

Looks like I picked a 6 pack of this up in March 2014 (per the book of face). Weren't seeing a lot of Mosaic in 2014 like you do near ubiquity here in 2019 (that's an improvement).

Poured a color evocative of those "older" ipas, this one was orangeyamber. Solid 2/3" head and good retention. Aroma was Mosaic, but not at levels we smell these days, it also had to compete with a heftier malt bill and that caramel bitterness they liked to push for 100ibu level wars.

Taste was about the same representation as the aroma. Average amounts of Mosaic giving a little bit of guava and passion fruit to pair up with that caramel presence. Kinda found the body on this one to be way heavier than a session ipa typically has. Carbonation was fine. If you liked your session ipas with the breadiness and malt character bordering just as much on biere de garde, this might have been your jam.

Best by December, had it in on August 11th. Clear amber color, beige head. Aroma had some old hop notes at first but after it sat a few minutes in the glass, it opened up to nice a white grapes bouquet and some fresh cut grass. Taste starts with grassy hops, white grapes, almonds, guava and finishes with medium hop bitterness with a somehow tea-like/medicinal flavor but not necessarily in a bad way. Light to medium body with medium carbonation. It's a bit weird. It has some old hop notes but also fresh flavors. Not bad, but not great either.

12 oz bottle. Dark orange pour, clear, with a medium height white head. The smell is overwhelmed by tropical fruit, pineapple, tons of overripe mango, oranges and honey. Smooth mouthfeel, bitter-sweet and balanced with the tropical fruits dominating the taste, as well. Medium bodied, with a sticky bitter-sweet aftertaste. Right up my alley.

I'll admit this doesn't taste ur mom a normal session ale. It's a bit more assertive than most, which is good, but it just misses the mark for taste to me.

As expected, pours a mostly clear amber body, wearing its carbonation level on its sleeve. Well-retaining head is light tan, fine, and chunky. Decent lacing, as well. First aroma to hit you is strong, sweet (sweeter than usual) grapefruit. A whiff later, after it's had a chance to sit, it is resinous, herbal, and spicy, but after letting the old olfactory senses renew, there's that grapefruit again. Flavor profile is more complex (mosaic?) than those of many other session IPAs out there. Caramel and cracker or pasta make an effort, but hops steal the show with mild grapefruit, a touch of rind, spice and herbs, and notes of black pepper as you let it linger and then finish (this always combines well with crackery malt in my opinion). Pasta-like aftertaste, one of my favorite sensations in certain Pale Ales, occasionally found in IPAs. Medium-bodied with medium to high (but gentle) carbonation, very smooth, but could stand to be a lot more crisp and dry.
