Wynkoop’s rule-breaking and uniquely indigenous foreign-style stout. Made with Colorado base malts, roasted barley, seven specialty grains, “steerian” golding hops, and freshly roasted bull testicles (aka Rocky mountain oysters). Deep flavors of chocolate, coffee, roasted grains, and nuts. Yes, nuts. Six balls per barrel.

Largely marketing I guess with the bull balls? I might get just a touch of smoke but nothing else out of the ordinary. Having said that, this is a really good stout. Dry and roasty with very nice bitter chocolate and coffee notes plus a little brown sugar sweetness.

On-tap at Wynkoop Brewing Company, Denver, CO

A: The beer is jet black in color. It poured with a thin tan colored head that left a narrow collar around the edge of the glass.
S: Light aromas of dark malts are present in the nose along with hints of licorice.
T: The taste has flavors of dark and chocolate malts along with a light amount of bitterness.
M: It feels medium-bodied and a little slick on the palate with a moderate amount of carbonation.
O: This beer was easy to drink for a stout that was quite malty.

Revisited November 22nd, 2023

Pours a clear, medium-dark brown color, appears nearly black in the glass; opaque; excellent khaki hued head; dense and long-lasting; nice foam sheeting inside the glass. Pleasant stout aroma; roasted grains; caramel notes. Fantastic taste; malty with a bit of anise-like spiciness; roasted grain and charred grain husk flavors; bold note of bitterness; bitter chocolate. Medium-heavy body; good viscosity; mild dryness at the finish.

This unique stout has a lot going for it even without the addition of bull nuts. It exudes all the earmarks of a well-made foreign export stout -- roasted grains, bitter chocolate, and a nice touch of dryness. I can't say what the 'three balls per barrel' of this batch contributes to the beer other than the uniqueness of 'adjuncts', but as a lover of Rocky Mountain oysters in other formats, this zymurlogical interpretation balls on fantastic!

Ink black in a goblet; only head is a thin ring of foam around the edge of the glass. Standard roasted grain smell; mild bitter chocolate. Fine dark malt sweetness; nice combination of dark grain sweetness; dark pitted fruits like dates and figs; low-key hop bitterness.

Oyster. How does one describe that? Especially Rocky Mountain oysters?? Well, earthy isn't out of the question. Simply stated, this is an earthy, rich and tasty stout. Don't read anything into my statement. This is an excellent foreign-styled stout (with an intriguing mystery ingredient - three balls per barrel per the brewery's notes).

My suggestion - just try it. Damn fine...

Poured from a growler. Black with a light brown head. Light aromas of chocolate, molasses, and some roastiness. Sweet taste to start with milk chocolate, slight coffee, finishes with light bitterness. Feel is very smooth and a bit juicy, not much carbonation. Overall a good stout, sweet and smooth.

12 FL OZ can
Served in a snifter

It pours black as pitch. It is topped with a rich, dark brown head that leaves little lacing.

I get aromas of coffee, chocolate, anise, and dark fruit.

The taste begins with chocolate and coffee. Then come flavors of dark fruit and just a hint of anise.

Full mouthfeel

This is actually a good stout once you get passed the novelty aspect. It pours beautifully and has rich, deep flavors and aromas. I would drink this beer again.
