750 ml bottle into tulip glass, bottled on 2/27/2014. Moderate gusher upon opening. Pours moderately hazy/cloudy golden orange color with a 2 finger dense and rocky off white head with great retention, that reduces to a nice cap that lingers. Nice dense soapy lacing clings on the glass, with a good amount of streaming carbonation retaining the head. Aromas of tart lemon zest, green apple, apricot, orange zest, white wine, hay, straw, grass, herbal, oak, pepper, clove, musty funk, spicy rye, bread, light leather, and yeast earthiness. Very nice aromas with good balance and complexity of tart fruity/spicy/funky yeast, pale/rye malt, and oak barrel notes; with good strength. Taste of tart lemon zest, green apple, apricot, orange zest, white wine, hay, straw, grass, herbal, oak, pepper, clove, musty funk, spicy rye, bread, light leather, and yeast earthiness. Fair amount of fruity/earthy tartness and yeast spice on the finish; with lingering notes of tart lemon zest, green apple, apricot, orange zest, white wine, hay, straw, grass, herbal, pepper, clove, musty funk, oak, light leather, and yeast earthiness on the finish for a good bit. Damn nice complexity and balance of tart fruity/funky/spicy yeast, pale/rye malt, and oak barrel flavors; with a great malt/tartness/yeast spice balance and zero cloying flavors after the finish. Medium-high carbonation and medium bodied; with a very smooth, crisp, lightly prickly, and fairly acidic mouthfeel that is nice. Alcohol is very well hidden with minimal warming present after the finish. Overall this is an excellent wild rye saison. All around excellent complexity and balance of tart fruity/funky/spicy yeast, pale/rye malt, and oak barrel flavors; and very smooth and crisp to sip on for the ABV. A very enjoyable offering.

Pours a nice orange colour, mild cloud. Head is white, small fizzy bubbles, sinking unevenly. Lace is slippery. Looks alright.

Smells saisony, with an earthy organic barnyard aroma dominating nicely. Touch of acidity with maybe some mandarin peeking through. Light spice notes and a touch of licorice. All fairly subtle, but nice and inviting.

Taste is earthy, slightly bitter upfront with a touch of off funk. Fruit acidity provides a nice tang midway with notes of orange zest, passionfruit, before finishing bitter again. Fair barnyard with a medicinal crunch and a whisper of rubber. Also a slight yeasty character which is unwanted. Midway through this is a cracking blend of tart, fresh and earthy, but it finishes a little astringent and doesn't pack the punch it might have.

Bit fizzy on the feel, with distinct pull from the yeast. Body is a bit thin, which doesn't help.

Nice drop for tasting, doesn't quite pull its wild notes into tame, drinkable captivity though. Overall pleasant, but unhinged.

750ml brown bottle purchased from K&L Wine Merchants in Redwood City, CA. Brought back to Sydney and shared with Sam.

Pours a hazy golden colour, with a firm froth of white that stays persistently even as it gets pocked with larger and larger bubbles. Lace forms cottony patterns down the inside of the glass. Body is a bit light, but with this style of beer that's not necessarily all that unnatural. Looks pretty good.

Nose is quite funky right of the bat, almost heading towards funky, plasticky, crushed vegetation and lambic-style bite. There's some citric tones though as well, giving a slight zesty, peppery aroma to the mix. In the sinuses the funk almost turns to tomato-plant-crush in its sharpness. I like it a lot.

Taste is also good, but a lot thinner in the body than it could be, so the flavours don't express themselves with the complexity the might otherwise have done. Clean, sharp, slightly metallic bite on the front, with a lingering bitter character that runs through the centre. This gives it a rather vinous brut champagne note towards the back, especially with the carbonation. Light, metallic and somewhat medicinal in the finish. Feel is dry and sparkling, just like a very dry champagne.

Overall, it's an impressive beer, although exceedingly dry. As long as you're along for the ride and accept that the super-sec character is going to drive it, there's an awful lot to enjoy about it.

"Batch 378" - about 4 and a half years old now, cellared at 55 degrees F.

Color somewhere between copper and amber, bright and pretty. Big bumpy off-white head. Looks good in the glass.

Smells great. Tart, fruity, piney, spicy aroma, with an all encompassing brett presence.

Tastes like brett, bread, grain, dried fruit, pine, and some spice that grows toward the finish. Good length; spicy brett. Quite tasty, but doesn't quite live up to the aroma; more acidity would be nice.

Fairly highly carbonated. Some swirling renders it cushy and smooth.

Never tried this fresh, but in any case it's delicious at the moment.

Pours a clear, copper color. 1/3 inch head of a white color. Good retention and good lacing. Smells of sweet malt, hops, strong yeast, funk, slight citrus, alcohol, and a hint of biscuit. Fits the style of a Saison / Farmhouse Ale. Mouth feel is sharp and crisp, with an average carbonation level. There is a strong tartness. Tastes of sweet malt, hops, strong yeast, citrus, alcohol, hint of pine, and a hint of pale malt. Overall, good aroma, body, blend, complexity, and decent appearance.

unretire this, it is back and it is genius. tripels are usually so sweet and strong, alcoholic and laden with belgian yeast esters. this one takes an entirely new approach. with the addition of rye to the grain bill and the wild fermentation, it is a whole new animal. one of the best beers from jolly pumpkin, who makes nothing but epic beers all around. murky but glowing golden color, deeper than most, with a tall white head that never fades and a nose that shows brett as well as a familiar souring bacteria culture. awesome. as i smell it deeply, i get a whole heap of rye malt. its too simple to call it spicy, and to say that it goes so well with the peppery yeast notes is all too generic phraseology, but such is true. it might be more descriptive to say that the rye, in addition to its usual adjectives, also has a dried straw or hay complexion, which resonates more with the brett than the belgian yeast. oats obviously flesh out the body here, its so lush and textured on my palate, dry as can be, effervescent, but also somewhat rich, decadent, and confusing. theres ten times more going on here than most beers i open, so a several hundred word summation seems cursory, but suffice it to say that this is exquisite beer, both in flavor and feel, and that its unlike anything ive had, even from jolly pumpkin, who, with this brew, have firmly cemented their position at the apex of the wild ale world. this stuff is magic, one of a kind, not rivaled by crooked stave, jester king, cascade, or any of them.

Poured from the bottle a hazy greyish-orange with two fingers of off-white head.

Aroma of white wine, yeast, tart green apple, lemon, earthy funk. and brett.

The taste was much like the aroma. White wine, tart green apple and lemon along with brett and earthy yeast notes. Tartness lingered thru the finish. The 8% abv was well hidden.

Medium bodied and a bit dry with a sharper carbonation.

Another enjoyable beer from Jolly Pumpkin.

Deeply earthy, yet brought to life with spice and herb, the Baudelaire Serie extends into an herb infused taste that includes flowery tones, a fruity soul and a biting acidity.

As the beer opens, its body evokes a sense of peach, amber and gold. Hazy with its color, the foam that separates is frothy yet delicate. Its white creme stands the session well and laces lightly on the glass- shedding wine-like character all along.

One whiff delivers bold fruit, spice and tarter aromas- bright floral tones are of hibiscus, chamomile and rose hips. But as that bouquet of floral medley subsides, a peppery and acidic tone rises to offset its honeysuckle character. Soft white pepper, wood rot, vinous rose wine, lemon and lime all spear the senses while that first sip comes quick.

But when the beer touches the tongue, its floral and fruity taste abounds with honey, melon, tropical passion fruit, apricot and papaya. That fruitiness fades in the middle as its peppery taste takes command. White pepper, cumin and fennel rise while those fruity-floral tones lurk in the backdrop. Its dry finish is tart, tangy and just short of sour- shedding glimpses of dry white wine, cider and must.

To the mouth, the ale plays lightly. Its sweetness is light, delicate and floats above the tongue like powdered sugar. Once dissolved, the ale effortlessly dives into a quick finish of white pepper, oak, aniseed and alcohol while delightfully warm.

The classic spicy yeast character of Jolly Pumpkin applies its thumbprint upon the beer. But its whimsy of floral character plays out early and often, shedding rosy character intermittently upon the session. As beautiful as it is, the beer teases the palate with a tangy sensation that falls short of sour. Unfortunately, those teases never follow through and the beer leaves the taste buds wanting much more.
