Abbey-style dubbel, the yeast «died» and was
«resurrected» by brewer Chris Cashell. Made with five types of barley malt and lots of sugar, this beer is quite strong and flavorful, without being too sweet. 7%abv

2013 vintage 750 ml bottle, poured into a snifter

Appearance: Pours a beautiful, deep, mahogany color, speckled with reddish highlights, and a finger of caramel-colored head that slowly dissolved into a lacing of foam that covered the entire top of the beer.

Aroma: Very aromatic. I get lots of dried stone fruit, such as raisins, prunes, apricots, as well as some candied sugar. I also get some good notes of toasted malt, imparting aromas of freshly baked bread or pretzels. There’s some spice notes too, such as clove, cinnamon, a touch of all-spice. Finally, there’s a touch of Belgian yeasty funkiness and piney hops.

Taste: Delicious! Lots of toasted malt up front, imparting notes of freshly baked biscuits, or earthy whole-grain crackers. Next comes some candied sugar, lots of dried stone fruit, such as raisins, prunes, apricots, a touch of pineapple and banana, and spices, such as clove, cinnamon, and a touch of all-spice and saffron. Finally, there’s a touch of Belgian yeasty funkiness and piney hops to balance everything out. Delicious!

Mouthfeel: Medium-bodied and pretty effervescent as there’s some nice carbonation to tickle the taste buds. With an ABV of 7%, there is no alcohol on the palate.

Overall: I found this beer to be delicious and was a perfect accompaniment to my family’s Easter dinner. It’s got great toasted malt, dried stone fruit, spice, funk and hops flavors in a great balance that kept me coming back for more. Recommended.

This was a fantastic beer. It came in a can which is great to reduce light absorption. The beer was extremely flavorful but not overpowering and had a nice finish.
