Notes/Commercial Description:
During the fermentation of the first batch of this
Abbey-style dubbel, the yeast «died» and was
«resurrected» by brewer Chris Cashell. Made with five types of barley malt and lots of sugar, this beer is quite strong and flavorful, without being too sweet. 7%abv

I had this can at the Cove in York, enjoyed chilled in a pint glass.

The color is dark amber with thin head of beige with rocky frothy look. The clarity is hazed as of an unfiltered beer with fine bead. The retention is good and lace sticks. The smell is very nutty with a slight tropical ester like dates with light spiced accent from the yeast and mild alcohol aroma. The feel is good semi-dry spiced texture with thin body for the style, but not too dry or phenolic moderately carbonated.

The flavor has an element of fruit with semi-spicy yeast giving the ale more of a light taste with toasted grain taste in the background. The flavor has fruity yeast with an herbal tinge of hops perhaps, but the malt is lacking in this for my taste. Overall not a bad beer but if you want a dubbel more representative of the style there are better options, the drinkability is good overall.

Poured from a can into a tulip. Pours deep light red with a nice white head. Smells of berries and Belgian yeast, berries dominant. Tastes of sweet grain with hints of berries nice balance. Beer is carbonated nicely light body goes down smooth. Overall an above average beer.

Poured into a tall pint glass, color is dark copper, head is huge on the last glug, had to slurp some foam. Head color is light tan very nice lacing and it lingers very thick, about 3/4 inch.

Smell is more malty than yeasty, some toast, maybe biscuit, caramel flavors; yeast flavors are slight phenol and light banana and clove.

Taste is more malty than yeasty, yeast flavor is off, slightly astringent. Malt flavors are slightly thin, dry with some caramely flavors; yeast flavors from the nose come through, light banana clove.

Mouthfeel is sweeter upfront quickly overtaken by drying qualities, some lingering yeast and sweet flavors, drying on the tongue.

Overall, a slightly light dubbel, maybe headed towards saison dryness more so than dubbel sweetness and yeastiness.
