This establishment is not your usual German beer hall. It is like an American brewpub meets a German bierstube. I am not sure if it is due to the American Soldier/tourist influence or maybe the huge population of British students/tourist in the area. Whatever it is I think it is a cool combination. I have been there several and it can be super busy when every other beer joint in the Dom Platz is empty and vice versa. The service is always friendly. The atmosphere is great I am a big fan of the kettles being in the middle of the restaurant and schnapps brewing on the bar. Both the food and the beer are pretty decent.

Das Ambräusianum is basically right next door to Schlenkerla, and as such acts as a kind of waiting area for the more popular destination. In good weather there are tables outside, and the inside is nice as well. They serve food but I've never eaten there so I have no opinion to offer. I have had the beer though, and I can say that I'm not impressed. It's not bad, but it's not great, and I did enjoy what I had while sitting outside in late September watching the crowds go by. They offer three beers, one of which changes seasonally. An unfiltered helles and an amber weizen are their regulars, and they also make the naturally carbonated and unfiltered “U³ngespundet", a dunkel, a bock, and a doppelbock. There may be other rotating beers from season to season but I'm not aware of them. A half liter cost me €3,40 - 3,80 in 2017 which was a fair price. They also serve Schlenkerla Märzen (probably a good move), and offer some alcohol free beers (as is the case everywhere in Germany now), as well as wine and spirits if you've got someone in your group who doesn't drink beer. Seeing as how it's right next door to Schlenkerla I'll have to say that it's at least worth checking out.

Located amid one of Bamberg's busier pedestrianized streets, this is an atmospheric and sprawling and beerhall (across the street from the world famous - and always packed -Schlenkerla). Ambrausianum makes for a great fallback in the event that you are intimidated by those crowds. Grab a table and go for their Bierprob, which is a taster of all three house beers. These were pretty good, as was the hearty German grub; I tried the flammenkuch, a German-style flatbread pizza. Decent service as well. Honestly, Bamberg is one of Germany's most beautiful cities and should not be missed.

The brewery had just opened for the day and we were the first customers, so we had excellent service. We liked the vibe with the interior charm of the place, as well as an atrium area to the rear area of the pub. And, unlike most of the other 'breweries' that we visited during our beercation, this one actually brews on the premises and the equipment is visible to the customer. This was a pure reminder of what we know of as a brewpub back home. They even had a sampler flight offered on the menu, and we didn't see many of these during our trip. The sampler glasses were 0.1 liter, so you don't get much beer, so we supplemented with a larger glass of the Bernsteinweizen since it was the one that we liked best of the three sampler glasses that we chose (a radler was also available, but we didn't want to try it). Beside the wheat bier there was also a Hell and a dunkel. We liked all three of them, and as we were slowly gaining taste knowledge of German biers on this trip, we still had to take an educated guess on what rating to give them when considering how well they were brewed to style. Likability honestly played a large role in our ratings. Overall we ended up giving a B-minus grade to them.

We were headed for a day of drinking at other breweries, but we weren't hungry to have lunch yet, so we ordered a pretzel just to keep some food in our bellies. It was good. Otherwise I can't comment on the food here. A chalkboard appeared to say that bottles of a Hasche Helles were available to go. We liked it here and recommend it as a worthy visit to others.

The most recently opened brewpub in Bamberg is very influenced by the American brewpub tradition: The shining copper kettles in the centre of the pub, the option to taste their three beers in small glasses, the background music and the robust interior in bright wood.

Although the beers are all in the Bavarian tradition: München Helles,, München Dunkel and Hefeweizen. They also sell the Schenkerla Rauchbier. All beers are served from keg.

The staff was friendly and helpful, knowing quite a bit about the beers.

Easily the most unique pub/brewery in Bamberg. Is it better or worse than the others? Depends on what you want, but you won't confuse it with any of the others.
When you walk in, the first thing you'll notice is that everything is set-up in a large well-lit room with the brewing equipment right in front of you. No hallway passage or beer window - everything is table service. Lots of the neo-industrial copper piping you see in US brewpubs. It reminds me a lot of home. The actual bar is small and is maintained by waitresses. I don't really think you can just wander up to the bar and order here.
They have 3 beers on tap, plus you can order Shlenkerla's rauchbier (and a few menu items) since they're just next door. Their 3 beers are a helles, dunkel, and weizen...pretty much the Bavarian beer trinity. Is that a taster flight I saw? Yup. They do tasters just like most US craft breweries. Can't say I've seen that anywhere else.
I tried the dunkel and weizen and much like the atmosphere, they're unique and likely US inspired. The hops in the dunkel were used very differently and the malts followed more of an amber profile. The weizen was more typical, but still showed a distinct boldness that's usually a lot more restrained.
The food here is quite good and also unique. You can get some of the standard Bavarian/Franconian treats, but the menu is a lot more like a gastropub with a bit of Italian and south European flair. Vegetables abound and the plates are smaller and well priced.

I have no idea what the general opinion of the place is around Bamberg, but I can tell you that they have a unique idea on their hands that will either succeed or crash and burn. The food is universally good here, and I get the impression Bamberg is a town that does appreciate good food, so that will likely help them in the long run. The beers will probably be divisive, but then again that's kind of what the US craft beer scene is all about. They just need to hope there are more loves than hates and we'll see where they end up in a few years!

Smaller place down the stairs form Domplatz nestled 1 door down from Schenkerla. We decided to stop here first.

Inside it has a bar, some brew kettles, and some benches in the back. It wasn't too full and the wait staff is super attentive. They obviously knew we spoke English and offered us English menus and talked English, but we declined because we spoke German. It is kind of annoying for me, but it should be viewed as a plus overall.

I ordered the Bierprobe which was cheap and included the 3 beers they had on tap. The beers were good, but not fantastic, but still good enough to warrant a visit. But what really caught my attention was the Schweinhax'n. It was the best one I have had so far, swimming in Biersoße and some kind of herb sauce with a very good Knodel. It was 9,60 too which has been the cheapest I found, and it was a giant one.

Overall the beer isn't the best in Bamberg, but this location is easily a high point for food.

I walked in here on a sunny but chilly Saturday afternoon after visiting the open air market in the Alstadt. The place was empty. The inside is beautiful, looks recently remodeled with lots of arches and wood. We took a seat near the tanks and were promptly helped by friendly servers. I had a half litre of the helles and the dunkel. Also on tap was the Weizen, which I didn't try. I didn't care for the helles; it was light, dry and husky like a helles should be; but I agree with some reviewers below that something seemed 'off' about it. I can't put my finger on it but it was just weird. The dunkel was just OK. It had a nice malty sweet aroma but I did not want another one. Being literally right next to Schlenkerla, this place has insurmountable competition but doesn't even come close to the quality of the other places I visited in Bamberg.

We wound up here a couple of evenings as a "last stop" after a long day of sightseeing and keller-hopping. Schlenkerla is right next door, but was packed tight and the crowd was starting to get a little sloppy, So the tables out front of Ambrausianum were great for people watching. Why wasn't this place packed like next door? Probably because the bier was just "ok". We had the Weizen and the Dunkel. The place has a bit more of a modern feel, and there's something kind of "off" with the vibe inside. We saw lots of people walk in, look around and then leave... not sure why, but probably because there are so many amazing places to have a bier in Bamberg that this place pales in comparison. We had the streudel here one night and it was very good: fresh and flakey. Two nights later, we ordered it again and it was limp and stale - obviously microwaved from the fresher batch we had previously. Honestly, this place is better than the Brewpub near me... but in Bamberg it's at the bottom of the pack.

We arrived in this bar around 12 mid-day on a Wednesday and found it almost empty, yet all the bars around were so full we could not get in any of them (Heller Trum etc)

The interior is very pleasant with brew kettles on display and attractive seating around and on a balcony with lots of plants, making it very attractive.

Service was prompt (although there were only two other customers!) and friendly, and we had the Ambausianum Keller bier, which was a pale unfiltered Hell type beer. Have to say it was the most disappointing beer we had on our trip to Germany this time, although light and refreshing, it had a hint of sourness which neither of us enjoyed. We only just finished the beer, and maybe we just made the wrong choice from the several available.

One this one showing, we were disappointed, but maybe that also explains why it was so quiet when everywhere else was jam packed!

UPDATE JUNE 2011

We visited here again three times during a weeks stay in Bamberg. We found the beers better than on our first visit in 2008, with the unfiltered Lager beer being tasty and enjoyable if not outstanding. I would say the same of the Weiss Beer too, we enjoyed it, but there are better beers. Service was good, and we did eat here one evening and the food was good and decent value - typical prices for Bamberg. It was never as busy as the adjacent bars, but worth calling in, and the interior is attractive.

Visited this place by default one afternoon because Heller-Trum a few doors up was closed.(I think it was a Monday).
Very new upmarket looking place, while at the same time trying to evoke an "old school" feel. The place felt wrong.
Very average beers served by pretty, but cold waitress's. I think I even walked away and left an almost full glass, the quality was so poor.
It is a shame because it is in a great location, but in this nieghbourhood, it just couldn't "keep up with the Jones"

Completely different to all the other brewpubs and bars of Bamberg. This is bright, young looking and airy.

Plants, flowers and light woods everywhere, not smoke stained yet or dark anywhere that I could see.

Very quiet on my visit (Friday lunchtime, 29 Sept 2006), so the atmosphere was hard to judge, but it was a pleasant experience all the same.

The young lady behind the bar had a nice smile and brought our beers to us very swiftly, so service was good.

Only two beers on draught during my stay, helles and a dunkel, both looked, smelt and tasted fine, but nothing to exciting about them, sorry didn't review either, other things on my mind (like where's the next bar at?).

Not a place I would use on a regular basis if I lived closer, but still a bar I can recommend, to the under 40's mostly.

Large high ceiling rooms with a cool looking mezzanine in the back. The copper tanks are right in the middle of the brewpub, but they don’t seem to be used that much. 6 to 8 times a month I’ve been told. I visited at the time of a fest in bamberg, where most of the people where drinking outside, in the street. The place was thus quite empty, and I couldn’t really judge the atmosphere. Some cheesy decoration and not too much effort on the design of the place is what was striking in such a context. But the warm Bavarian evenings don’t need a crazy decoration, and the atmosphere comes from the people, and from the beer. The beers were quite good, the weizen being outstanding. I wanted to try the other brews, but finally sticked to the weizen, and had to come back the next day to taste the helles. Only three beers available when I visitied though. The food was quite tasty too, I got the wurst plate once, and the brewmaster’s salad the second time. Both were good, and at decent prices. Service was ok, and could have been a little better given the emptiness of the place. They seemed to think I was sketchy, as all the people where in the street. A nice waitress the second day though. Definitely a nice stop.

I just realized that I had never entered this review of my visit to Das Ambräusianum last November.

I stopped in this pub on a Thursday night, November 25th, 2004, and was quite shocked to see the crowd so large that it was spilling out onto the street. It turns out it was a special night: the night they were celebrating their new Doppelbock. Lucky me!

The pub was so full of people that I never got an opportunity to sit down. We all just stood where we could, and ordered glass after glass of the potent doppelbock. Oopf, I am glad I was walking back to my hotel. The pub itself was long and narrow, with the walls painted in pastel colors, and some wooden beams, and with skylights in the ceiling. There was a bar near the front, with tables a little further back. I would like to visit again on a less hectic night (unfortunately I was departing the next day after this visit).

The only beer I sampled was the doppelbock, and it was very good. I think there might have been one other beer listed, but they seemed to be serving the doppelbock exclusively during this event. The service was good considering the size and exuberance of the crowd. I did not have a chance to try the food (other than a pretzel or two).

Being just a few doors down from Schenkerla, I am sure I will visit them again. Definitely worth a visit.

Been back a few times since the original review. Some of the beers are better than others. The Hefeweizen is usually good. The 2005 doppelbock was not as good as the 2004 by my recollection.

BierManVA, his friend Mark and I had just finished a great round of Rauchbier at Schlenkerla. We exited there on our short Bamberg Bier tour and headed to the "new place". I joked to them "Let me lay some BA on them!". We entered the place and I recognized the owner, Herr Mahr, from some internet photos. He was at the service bar, and we sauntered over. I showed him a BA card and said we were interested in his new place and were going to try some Biers. He welcomed us and said he offers a Weizen, Helles and Dunkel, plus Schlenkerla Rauch as well. He recommended the Weizen, as his best offering. Cool! We had a round and I asked to pay; he said "No problem, it's on me!" Way cool! We took our Biers and grabbed a table for some lunch. This is a nice-looking place; different from the typical Bamberg pub in that it's actually bright and airy! There's a cheery look here, with lots of light wood, both in the furniture and in the big-ass beams supporting things. The place is long and narrow from front to back, with tables to the right and left upon entering, the service bar near mid-room on the right, brew-kettles a bit further on the left, and more tables in an upstairs/downstairs courtyard area near the back. The wood is incorporated around some heavy stone archways existing from many years ago. A pleasant mix of modern German with the old original architecture. No music was heard playing, just the happy banter of Bier-drinking patrons. Service, in addition to Herr Mahrs hospitality, was friendly and efficient. We all agreed that the Weizen was indeed a tasty Bier, and the Würstplatter and Schnitzels we downed were well-made, ample and filling. Thnx to Herr Mahr for making our visit all the better. Please stop by when in downtown Bamberg. Prosit!!

I stopped in here for a bier recently with bierman9 and my friend Mark. We had been walking the beautiful city of Bamberg and enjoying the scenery as well as many unique bier offerings.

This new brewpub is only 2 doors down from the famous Brauerei Heller-Trum Ausschank and it's famous Aecht Schlenkerla Rauchbier. We stopped in on a Sunday and promptly found that the owner, Herr Mahr, was pouring bier behind the centrally located bierstube. We inquired as to his recommendation and he proudly told us that his Hefeweizen was something special. We all agreed to sample it and he promptly filled a few half liter glasses (I myself opted for the sampler, only 1/3 liter, I'm dumb). The bier was quite good and refreshing and when we inquired as to pay for the bier, Herr Mahr simply waved us off. How nice! He told us that business had been going very well, and although slow on this Sunday, he had done over 1000 Liters the previous day.

We decided to sit down and have a lunch. The restaraunt is a nice blend of old and new. The building is most likely hundreds of years old and several old beams and collumns poke through the new plaster. Most of the furnishings are new however and the place is immaculately clean and quite bright. A skylight at one end of the restaraunt gives a nice feel of an outdoor biergarden and indeed seemed the most popular place for people to sit.

Each table had a small jar with roasted malt in it and it was a pleasure to snack on this treat while waiting for our food. The service was a little on the slow side, quite typical for Germany. No need to be in a hurry though as the company of good bier and friends is always a treat. When the food did arrive, I found it to be quite good. Standard pork and wurst dishes abound here and are done well.

This place is a break from the darker, smaller places popular to Bamberg. And wth a little time and effort, I see this could become a regular hangout for anyone who wants to have a good bier and meal.
