re-using yeast cakes from sacc and brett mixes...

    just wondering the best way to re-use the yeast cake from a sour mix that had both sacc and brett bugs in it.
    i racked off the cake after 2 weeks. so i assume that the cake and dregs have all the bugs needed?

    Unsure about the balance between sacc and brett?
    heard of cases of over-pitching by tossing on a cake?

    and what if i want to save that yeast for a brew at a later date?

    Those would all be concerns to take into account, but I don't think there's any reason not to try it and see what happens.

    If you're looking to reproduce the same exact beer you made with a clean pitch of both strains, it probably isn't going to happen.

    You can save the slurry in a mason jar or beer bottle. Rule of thumb is to use it within 2 weeks or make another starter.

    I like all of this. I've had great results from yeast as old as 6 weeks with no starter. Brett and sacc bugs are a different animal, and to my understanding live a little longer. I guess when it's all said and done, when would we ever discurage making a starter?

    Expect the ratio of viable Brett and Sacch to change. For the better or for the worst? The only way you can weigh in on that question is to try.

    Did you ever go through with this experiment? I currently have a yeast cake of Brett C and BRY97 that I like to rack on top of.

    tossed it into my shed 2 months ago. so i should be smart and make a starter and see what happens.
