If you're in Dublin much later on Friday's and Saturday's, thinking the Porterhouse and Messrs Macguire (both brewpubs) would be open until 2am or 3am

Outside of Dublin you'll also find later closing on the weekends, maybe 1 am or 2 am

Be prepared to adjust your schedule a bit, when I was in Ireland 2 years back, our group had to adjust that many shops closed at 4 or 5 p.m. (& I mean say the gift shops & similiar businesses) Grocery stores closed maybe an hour or 2 after that. Which compared to the U.S. was an adjustment considering so many close @ 10 or 11 p.m.

Pubs are generally the only thing open at nightfall in the smaller towns we found, except petrol/gas stations, and even many of those close early too. Granted we were in Adare, south of Limerick, which is just a block in Dublin, but Galway, Cork, Doolin & many other towns seemed to have same hours. Have a great trip, I can't wait to go back, I miss it.
