Cellaring Persica

  1. Hey everyone,

    Similar to many of you, I'm in the situation where I have one bottle of a beer which is one of the jewels of my cellar and I'm torn as to whether I should it. In this case, the bottle in question is Crooked Stave Persica. I'm part of the Cellar Reserve in 2013 so I'll be getting my hands on two bottles this year but I wanted your take on the pros / cons of cellaring this particular beer?

    It's goddamn delicious - drink it. It'd be a lot better as a jewel of your belly instead of a jewel of your cellar.

    Nobody knows how Crooked Stave beers will age so I'd drink it if I were you.

    I can't envision any scenario where aging this beer would improve it
