aged just 3-6 months, this sheep-milk cheese develops a
deep buttery color, smooth texture and brothy overtones.
Paired with Vienna Red Lager

Le GruyÈre
subtle, sophisticated and produced since at least 1115 AD
in the region surrounding the small town of gruyère, this cheese is still
made today in the village factories according to the traditional recipe.
Paired with Saison

like a new romance, this sweet, creamy and fruity cheese
begins with a deliciously inviting appearance and finishes
with a playful, tangy bite. made in madison, wisconsin and
named “2012 cheese of the year” by the american cheese society.
Paired with Raspberry Berliner Weisse

Beemster X.O.
aged 3+ years, this cheese develops a delicate, brittle texture.
after we tasted it, the flavor of butterscotch permeated the palate,
followed by alternating waves of whiskey and pecan.
