Course One: Tonkotsu Ramen with braised pork belly

Course Two: Bleu Cheese Plate featuring Valderon Blue (Spain) and Fourme d’Ambert Bleu (France)

Course Three: Varietal Bacon
Jack’s Chicken Bacon, Maple Leaf Farms Duck Bacon, Patek Beef Bacon, Summits Horseradish & Jalapeno Bacon all served with almond butter and toast points

Course Four: Ginger Scallion Noodles

Course Five: Manchego smoked paprika corn on the cob

Course Six: Cheeses of Spain featuring Corcuera Manchego aged three months and El Trigal Manchego aged 14 months

Course Seven: A duo of sliders. One German style BBQ Bologna steak with Kimchi and a Smoked Liverwurst with Cabernet onions.

Course Eight: Salami Course featuring Moldovian style salami, Czech style salami, Spicy Hungarian style salami, Odessa salami and Genoa salami

Course Nine: Cheddar Cheese plate featuring Cabot Special Sharp White Cheddar aged eight months and Tillamook Extra Sharp Cheddar

Course Ten: Apple tart drizzled with Georgia wildflower honey
