Dock ‘n’ Stormy, a Beer Cocktail with Rye IPA

West Philadelphia’s Dock Street Brewery debuted its new Cannery and Lounge in April. The bar in the new canning area next door to the brewpub serves beer and cocktails—some of which feature products from its offshoot distilling company, Dock Street Spirits. A twist on the classic Dark ‘n’ Stormy cocktail, this recipe pairs the kick of ginger beer with the spicy, dry notes of a rye IPA.

3 oz Dock Street Rye IPA (or another rye IPA, like Westbrook Two Claw or Smuttynose Rhye IPA)
1 oz rum
1/2 oz simple syrup*
1/2 oz lime juice
2 oz ginger beer
lime wedge for garnish

In a 12-ounce glass, add rum, syrup, and lime juice. Fill glass with ice, then top with ginger beer and rye IPA. Box (pour contents into another glass or shaker tin and back again), and garnish with a lime wedge. Enjoy.

*For some extra heat, try swapping in cayenne simple syrup. To make: add one teaspoon ground pepper to 8 ounces simple syrup.
