Roundness to be enjoyed by the side of an open fire!
We wanted to create a more palateful, stronger beer, but without spices, unlike the majority of Christmas beers.
The work therefore first of all focused on the selection of the barley malts. We needed a mixture of five different barley malts for obtaining the dark ruby colour and the body that we wanted.
Then, we wanted hops that were not too strong, in order to contribute to that typical roundness of winter beers. This is why we have mainly opted for the Slovenian Styrian Golding, not very bitter, but used in great quantity and combined with a little Cascade, for a very fine hopping.

From the just out of date bottle, it pours a clear brown with reddish notes color with a modest off-white head that soon diminishes to a nice ring. Scent is a pleasant mix of dark fruits, caramel and slight alcohol. The taste follows the nose with a nice smooth feeling brew with notes of dark fruits and caramel..

Amaranth color with ruby reflections, fine and compact ivory foam with excellent hold. Scent of caramel, bread crust, light chocolate, dates. On the palate it is sweet with a medium and soft body, the carbonation is moderately lively and the finish is spicy, bitter and dry.

L- Deep ruby-red/chestnut brown. Pours with minor sediment - I managed to leave almost all the sediment in the bottle. 1Cm pillowy tan head.
S- Complex, I get raisons, reminding me of a Brit Xmas pudding.
T- Oh wow... deep complex, cheeky ABV% clearly poking it's head up to be ID'd. If you could get a Brit Xmas pudding, reduce it's sweetness somewhat and magic it into beer it might taste like this.
F- Pungent yet balanced by decent hopping. Certainly deep, a slow-sipping beer rather than one to rush. Carbonation in the glass and mouth are appropriate for the style.
O- It's very nice. If you were into pairing food with beer then this would pair well with dessert.
Not cheap at £3.49/330ml but as a treat it's lovely. Bought from BeersOfEurope/UK for home delivery. BB ... hmmm... perhaps on the cap that I discarded earlier!

Day 24 of the advent calendar 2019.
The style is not at all apparent from the label. It pours a lovely brown color with a fair bit of head, which subsides reasonably quickly but hangs around for the duration.
There are some spice notes of clove but mainly sweetness from the malt. The alcohol is well-disguished, as this one drinks easily and quickly.

One year old bottle. Pretty average dark/brown belgian ale.
Pours a murky brown with a one finger head. Notes of biscuit, dark fruits and some citrusy/earthy notes.

not bottling dates, but bought it this year so presumably 2014 vintage
A: Pours a dark mahogany, nearly opaque, with less than 1/2 fingers width of tan colored head. Head dissipates quickly and leaves only very faint patches of lacing. 4
S: Tons of dark fruits, very vinous, with a tartness thats a bit rough. Has a rancid, spoiled fruit like character that I don’t dig at all. Some ethanol boozy characters as well. 3.25
T: Taste is not at all like the nose, and is much better. Cocoa, nice sweet dark fruits like dates and fig, yeast. Tons of sweetness, but not cloying. Tasty. 4
M/D: Full bodied, carbonation appropriately low, ABV well masked, drinkability is good. 4.25
O: Didn’t like the aroma at all, but was a big fan of the taste. Overall, worth a try, but not something I will likely go back to next year. 4

02/27/14 From a label-less bottle. I'm not exactly sure this is what was in the bottle as the label was missing, but according to the cap it was from Cazeau.
I've been having a lot of winter/holiday brews lately and the spices led me to conclude this was the Tournay De Noël.
I was hoping for a bit more influence from the yeast, which makes me pay so much attention to all things Belgian. I enjoyed it enough to leave the door open to other Brasserie de Cazeau beers.
