If I had to advise someone with time for a visit to only one location in Toronto, this would be it.

Below-ground bar that is easy to miss. Nice interior but has a sort of independent, organic look to it, like the owner built it up over years with a number of different styles. Two bar areas, one you encounter as soon as you descend the stairs, the other is larger and runs parallel with table seating and pool tables. Live music on occasion. Food is excellent with a very good wine and whiskey selection. Service is courteous and informal.

The beer selection is just phenomenal, not because of the quantity but because they pride themselves on serving only Canadian craft-brewed beer. 35 taps including 5 casks, around 70 bottles -- all local without exception. This place also makes its own beers, qualifying as a "brewpub" by contracting the brewing locally and fermenting on-site.

NB: Watch out for that last step at the base of the stairs. I tripped at the same spot twice, completely sober. A little more lighting would help.

Good menu, huge rotating range of craft beers, many cask conditioned. Knowledgeable and helpful staff. All round one of my favourite places to have a few in the city.

Stopped by for a birthday lunch and left very happy. C'est What is located across the street from Toronto's "Flatiron Building" (Not sure of the actual name) in a cozy, comfortable and attractive subterranean room decorated in light wood and stonework. There is a lengthy bar on one side and the usual smattering of tables and such. Very atmospheric. Along with this is a very impressive beer list that offers their own house beers and several local crafts. (They do have something on cask, as well.) Excellent service and some hearty grub made for a fine lunch amid the hustle and bustle of the city's downtown core.
During my visit, I enjoyed these: Hogtown Kolsch, Al's Cask, Joan's Dark Secret and a tasty IPA from one of Ontario's newer brewers Rhyme and reason.
A worthy stop when in Toronto.
