A sour beer with fresh cucumber and lime juice with a hint of sea salt; sounds insane, right? Nope, this thirst-quenching Gose (pronounced Gose-Uh) is the perfect balance between tart, refreshing and citrus flavours. Wheat and barely, cucumber and limes, Himalayan sea salt and a hint of Lactobacillus all combine in an all-natural sour delight.

With the change from spring the summer comes sunshine, relaxation and a wide array of fresh fruit and vegetables. We were inspired by this change to come up with something truly unique and thirst quenching. Gose is a tart, German styles wheat beer with a hint of coriander and Himalayan sea salt, which we have kicked into summer overdrive by adding fresh lime and cucumber juice. So kick back, soak up some run and let Ceres do the rest.

375 ml bottle, couldn't see a date on this when I bought it yesterday. But after pouring the beer into the glass, I can read the black print on the bottle that looks like it's stamped with 06/14/17. Served in a Ritterguts Gose glass, the beer pours a slightly hazy gold color with a huge white head that fizzled away quickly. Not much lacing. There's also some floaties. Aroma is nice, and to me it's dominated by the cucumber. I can also smell some lime, salt and grain. It tastes like cucumber, lime, salt, honeydew melon, grain and some citrusy tartness. Similar to the aroma, I think the cucumber flavor is stronger compared to the others. Mouthfeel/body is light, it's easy to drink and it has a lot of carbonation. Even with it being more than a year old, I still liked it. Hope I'll get to try a fresher batch at some point. $4.99 a bottle.

This beer pours a brilliant golden color and is topped with a fleeting white head that leaves no trace of its existence.

I can smell the cucumber from accross the room. The lime and salt are there, too.

It has a HUGE cucumber flavor right off the bat followed by a tart bordering on sour flavor. The lime comes through in the end.

Thin mouthfeel

If you want a beer that delivers on what the label says then this is your beer. The cucumber is very pronounced and the lime compliments it to make a refreshing, enjoyable beer.

Straw filtered with a finger of off white head.

Smells of watermelon, cucumber, coriander, flowery perfume and fruitiness.

The taste is bone dry sour, with melons and cucumbers, as well as the same perfume and fruitiness.

Moderate to light, acidic, body with moderate, soda like carbonation.

Drinking by Lake Muskoka, March 16th, 2018. Decent sour beer.

A: The beer is crystal clear yellow in color and has a moderate to high amount of visible carbonation. It poured with a finger high bright white head that slowly died down, leaving a patch of bubbles on the surface and a wide collar around the edge of the glass.
S: Moderate aromas of cucumbers are present in the nose.
T: Like the smell, the taste starts out with lots of flavors of cucumbers with some notes of lime noticeable towards the finish. There are also some hints of saltiness.
M: It feels light-bodied on the palate and has a moderate amount of carbonation.
O: This beer is essentially all about cucumbers as they are dominant in both the smell and taste. It is very light and refreshing.

L: Clear straw. Hazy when sediment is added. Small foamy white head, surprisingly long retention, some lacing.

S: Cucumber, but then lime and salt.

T: Lime juice, salt, pineapple, lemon, cracker, and then cucumber on the finish.

F: Light, but spritzy and refreshing.

O: Very refreshing and tasty.

Bottle: Poured a pale yellow color ale with a nice white foamy head with OK retention and minimal lacing. Aroma of cucumber and lime with light tart notes is quite refreshing. Taste is a refreshing mix of cucumber with some light tart notes with some clearly distinctable lime notes. Body is light with good carbonation. Super good mix of cucumber notes for a refreshing beer.

Brewing on the backbone of traditional German-style gose, the gods look upon the brewers at Nickel Brook quite favorably. Incorporating the taste of lime and cucumber, Ceres pushes the style into current market with adventure, respect and charm.

Ceres pours a pale straw, classically hazy and crowned with a soft swath of sea foam. Its scent is melon-like with citrus, cider and a drift a sea air lurking in the background. To taste, the ale is soft with sourdough, lightly pulled candy and a soft yeastiness for a soft palate to start.

But as the creamy wheatiness and its associated sweetness dissolves, the sourness rolls onto the middle palate as those flavors of lime, lemon, crabapple, gooseberry and honeydew really open up. All the while, an aura of cucumber brings a light mint, melon and vegetative brightness to the palate for a strong summertime evocation. A briny kiss of salinity brings the mustiness of damp burlap to close the session with a tantalizing earthiness.

Medium light on the finish, the beer's body is crisp, clean and delicately bready. One final impression of cucumber, melon and sourdough echoes briefly in a quick finish and promises a high rate of refreshment for anytime of year, but expecially during warmer months. Its begging for a pairing with Greek salads and spanikopita.

Bottle- pours a lightly hazed pale straw ale with a small; white cap that reduced quickly to a surface lace. Pungent aroma of cucumber, some citrus and mustiness - Flavour is cucumber-tartness, some citrus and salt - short clean puckering finish with a lime kiss - delightfully refreshing on a hot day but not good for a session.

Actually rather interesting and distinctive. Spritzy and sweet like a spumante with a sour bite. Interesting flavour combination of lime and cucumber. Pretty good novelty beer, likely a good patio cooler.

375 mL bottle from the LCBO; dated Jun 2 2017 and served slightly chilled. I've had this one on my wants list for a few months now, so I was pleased to see it show up locally.

This gose has a hazy, effervescent, pale golden complexion, and is initially topped with an inch of bubbly, soapy, impermanent white head. It soon fades down to a frothy collar and cap about a half-cm high, which remains in place for a good long while. The aroma is vaguely like a salad - a bit leafy, with the citric lime juice and melon rind-like cucumber being the most noticeable aspects. Subtle hints of coriander and salt water.

Very interesting flavours - the first thing I noticed was the sourness, which is mildly puckering at times, but there's a depth to the profile. Hints of wheat husk and grainy pale malt sweetness are easily missed, while the tart lime juice and lactic acidity comes through clearly mid-sip. Cucumber peaks on the back end, alongside notes of melon rind and grapefruit pith, followed by coriander spice before a salty finish; lingering cucumber skin flavours and salt in the aftertaste. Light-bodied, with aggressive carbonation that gives this gose a crisp, palate-scrubbing texture. Very refreshing and easy to drink - I usually finish the review before the glass, but not this time.

Final Grade: 4.36, an awesome A grade. I loved Nickel Brook's Ceres - in fact, the only thing I'd change about it is the format, because 375 mL just wasn't enough for me. The levels of both sourness and saltiness are just right, while the cucumber and lime are both fine complements to the subtle, gritty wheat flavours of the base gose. Basically, I'd consider it a must-try. Judging from how quickly the bottles seem to moving, I'm gonna need to grab a few more and store them in the back of the fridge for later this summer (since I have no idea how often I'll be seeing this around here).

Appearance: It has a nice slightly hazy pale straw yellow color to it. It has a nice white head that dies down somewhat fast and leaves almost no lacing.

Smell: The aromas definitely give out hints of cucumber, lime undertones, faint wheat malts and a touch of salt on the back.

Taste: Like the aromas, it has a predominant cucumber flavor with notes of lime, some wheat malts, a light breadiness and a faint saltiness on the finish.

Mouthfeel: It has a medium carbonation with a nice overall balance and feel.

Drinkability: It's a very smooth drinkable beer accompanied by good flavors and aromas. Refreshing and delicious Gose!

375ml bottle picked up from the brewery. Served cold into a chalice. Listed as a cucumber-lime Gose, Lab Series 5 - 2016 also displayed on the bottle. The concept of this is cool, cucumbers and lime?

Appearance - Pours a pale golden color, marginal AAL in color, but here it works since there's some haze and well the expectation is that it will be pale due to cucumber. A finger and change of white head is poured, that doesn't last long though. Small amount of sediment in the bottom of the glass.

Smell - Some clear and distinct yet subtle lime and well... cucumbers fresh from the garden in late August. Some wheaty malts mixed in, but refreshingly summer-esque.

Taste - Astonishingly refreshing with the cucumber so up front and the clear star of this brew. The lime adds some nice balance and the salt finishes everything off so clean.

Mouthfeel - A bit over-carbonated even for the style but pretty good. Salt content is good and gives a slight drying of the mouth effect to go along with a subtle puckering from the tartness.

Overall - Really fine stuff from nickel Brook. Superbly refreshing. Only qualm is the cost as this sin't cheap, but there are few beers that could be enjoyed more readily on a hot summer's day. Cool as a cuke!

Appearance - Pours a pear colour with three fingers of bubbly white head.

Smell - sea salt, cucumber, lime, and wheat malts.

Taste - Cucumber and lime upfront. Bready wheat malts, and coriander follow suit. The sea salt finishes the brew off.

Mouthfeel - Medium bodied with moderate carbonation. Finishes with a pleasant lingering saltiness.

Overall - A unique take on the gose style that incorporates the flavours of cucumber and lime very well. A refreshing brew.

This beer surprised me. The cucumber is so present and refreshing. The lime is subtle as is the salt. Carbonation might be a bit over the top for some, bordering on sparkling water, but I like it as it accentuates the crispness of the cuke. A totally refreshing summer brew. Try it if you have the chance!

One of the best Gose I've ever had. Bright and clean gold color, white head fades to nothing. Nose is full of cucumber, with lime highlighting, and the taste mirrors this, with cucumber highlights over a sour note. The salt is popping things. Excellent!
