Notes: Bottle re-fermented with Brettanomyces, the characteristic aromas of these wild yeast intermingle with the floral bouquet of the beer. Its warm leathery flavours envelop the equilibrium achieved between the malt and the notes of hops. Imperceptibly bitter, the hoppy finish is counterbalanced by the Belgian yeast esters, revealing a hint of spicy overtones. Available from September to December.

Cloudy orange with a massive white colored head.

Smells funky and slightly sour. Barnyard and coriander with a faint plum scent. Honeysuckle malt scent.

Starts out slightly sour and funky. Sourness isn't much. Taste like a bit sour plum. Not that strongly flavored really.

Mouthfeel is good.

Overall it is a mild Wild Ale by taste.

Bottle: Poured a dirty beige color ale with a nice large white foamy head with good retention and some light lacing notes. Aroma of Belgian malt with light residual sugar notes with the right amount of funky Brett notes. Taste is also a great mix between dry Brett notes with light funky ester and some Belgian malt notes. Body is full enough with good carbonation. Very well brewed overall and something I wouldn’t mind having on a regular basis.

Dirty straw with a slight haze, pours a little head, but it quickly recedes to a thin ring.

Aroma isn't intense, but there's a pleasant depth...candied pineapple, mango, papaya, with a bit of citrus and leather.

Flavours echo the aroma. There's a dry bitter finish, but the alcohol is very subtle.

I'm tired of bombers, but 12 oz just seems too small.

Pours a liquid gold that is totally hazy, small tight foam that latches on. Aroma is all brett as is flavor but Belgian esters make their presence known quite well. Subdued with low tartness (if any) but tasty.

341ml bottle - always cool to see any of these gold-stickered special releases from DDC on the shelves out West here.

This beer pours a hazy, medium golden yellow colour, with a teeming tower (thank you, bottle refermentation!) of puffy, finely foamy, and somewhat creamy off-white head, which leaves a stellar array of continental drift lace around the glass as it slowly sinks away.

It smells of musty, funky, and acrid Brett bacteria, overshadowed domestic and tropical fruit, gritty, grainy pale malt, a further pale brown sugar sweetness, and some hard to discern earthy, leafy hop bitterness. The taste is more cheesy and dank funk courtesy of our bacterial guest(s), a rounded grainy and bready pale maltiness, muddled fruit of many different apparent stripes, and some tame leafy, weedy, and slightly herbal hoppiness.

The carbonation is quite laid-back in its plain-Jane frothiness, the body a sturdy middleweight, and more smooth than I believe that it has any particular right to be. It finishes fairly dry, the Brett holding the malt's head to the curb, but not quite following through with the proverbial stomp.

Yeah, if you like Brett in all its funky, tart, musty, etc. glory, with little interference from the local populace, then this beer's for you. I'm in the take it or leave it camp, but I do know when something's been made well, and folks, this one certainly has.

Cloudy golden in color with a 1.5 inch head with big bubbles and lots of carbonation. You mostly smell the brett yeasts, really funky and wild smell. You also have some hops in the nose but it's really the yeasts that you smell the most. Funky taste too but it's less intense than I expected. It's definitely like the classic Dernière Volonté but funkier. You still have a bread taste and floral hops are there too.

Wonderful brett and tropical fruit nose. Super juicy tropical fruits and some nice dry brett in the finish. Big body and mouthfeel with medium-low carbonation. Interesting stuff.

Thanks to Papat444 for the bottle- very excited to try this one.
This is a very nice variation on Derniere Volonte. The Brett is quite prominent, lending a nice dry funkiness to the belgian yeast and citrus hops. Finish is very dry and the nose contains the horse blanket scent associated with Brett. I don't know if this beer is ever to be brewed again, but I hope to come across it again. If you like Brett, this is a very nice beer.

From notes

Appearance: It has a nice hazy golden/orange color to it. It has a nice thick white head that dies down slowly and leaves nice lacing.

Smell: The aromas definitely give out hints of brett funk, tropical/floral hops, bready malts and light grains .

Taste: Like the aromas, it has loads of brett funk upfront, followed by some tropical hops (mainly citrus), floral undertones, pepper, light earthiness, bready malts and some grains.

Mouthfeel: It has a med-high carbonation with a very nice overall balance and feel.

Drinkability: It's a very smooth drinkable beer accompanied by great flavors and aromas. Speechless!

Literally smells like feces. Tastes fine, but that nose... Perhaps I had it too fresh and with time it will change. If so, I will change this assessment.

Poured from bottle into brandy snifter. Pours a cloudy gold and brass with heaps of head.

L-cloudy burnished gold with hints of brass. White head that heaps up and sticks around for a bit.

A-lovely smell of Brett funk. Fermented straw.

T-Boom. Brett all over. Sour with some bitterness clattering around. Lemon rind, horse, simple syrup.

M-effervescence dances across the tongue.

O-the Brett takes over everything else. Like a funky Berliner Weiss. An experiment, but a good experiment.
