The Last Will is born from a meeting between the Belgian and British brewing traditions. It has a complex nose of flowers and alcohol, supported by slightly fruity and malty flavors, all topped by a strong hop bouquet. In the mouth it is spicy and fruity hints and a discrete touch of alcohol. In the final, hops up the rear with force.

One of Dieu du Ciel's weakest offerings. Tastes foul, although great nose. No head, no substance, no reason to drink again. Let's just go back to their winning brews.

Poured from a 12 oz bottle bought at Aces & Ales-Tenaya in Las Vegas.

L - Medium gold color with moderate haziness. Off-white head is moderately active and persistent.

S - Sweet bready malt along with bright, fruity notes that seem to come from yeast rather than hops. There are also aged, oxidized notes of wet cardboard. The bartender warned me these bottles had been around for a while, so that is not too surprising. The beer is certainly still enjoyable, so it is not too far gone.

T - Flavors are a mix of fruity yeast and sweet, bready malt. Hops may be showing themselves as a low grassy note. Oxidized notes are not as prominent as in the aroma.

F - Medium body with light to medium, spritzy carbonation. Low to medium hops bitterness. Alcohol warmth , but at a low level.

O - The beer shows some promise, but has obviously been adversely affected by oxidation and age. It is still tasty and I would like to try a fresher example some time.

Poured at fridge temp from 11.5-ounce bottle into a tulip glass. I got a crystal-clear amber colored pour, making me think I was drinking a different beer than just about everyone else who reviewed this. ;) The head was thick and white, leaving a pretty curtain of lacing as it settled to a thick ring. Very nice aroma dominated by orange peel, coriander, and yeast funk. These are present on the palate as well, with a fruity and slightly floral note as a complement. Rather light in body, with good carbonation, a pleasant hoppy bitterness on the tongue, and a mostly dry finish. I couldn't help but think that this would make a great table beer, but that's just me. At any rate, there's a lot to like about this one. Highly recommended.

Look: It pours golden and clear with very tight beading in the head. The head is white with very good head retention.

Smell: It has strong earthly aromas with barnyard elements. Leather is also prominent with a very light floral note.

Taste: The flavors are strong with leather and earthly elements. There are also floral notes and a low level of flowers. Spicy flavors are in support with very low levels of fruit.

Feel: It has a medium body with slight alcohol warming.

Overall, the brett is the strongest single element in the beer with the other elements in the background.

Pours a hazy straw color with a thin, white head. Plenty of varbonation.
Big carmel malt and yeast smell with banana. A slight dark fruit smell, cherry.
Carmel malt and dark fruit is the backbone of taste. Good yeast and slight banana. Light hop in the finish with lemongrass. Quite complex that comes together well.
Very unique beer that I highly enjoyef.

Although I love wild beers, IPA Brett beers are not one I gravitate towards.

This however is a great representation of the style mixing fruitiness from the hops and Brett and dryness from the bitter hops and the Brett.

Bottle description was Abbey-Style Blond Ale and the label sure looked Belgian to me, so grabbed this. BA describes it as Brett/IPA, two styles I don't particularly care for, but despite this, and the BA description of the finish as "hops up the rear with a force" (Yikes!), I found this very enjoyable, complex and tasty. Also turns out its from Quebec, Canada, not Belgium.
Full of pleasant surprises.

Poured from a bottle dated 9/20/2016 into the test glass.
A - Loose knit frothy white cap sits atop a slightly hazed dark straw colored offering. The carbonation is champagne style.
minute spheres tirelessly work skyward.
S - Pineapple, tangerine, a bit of funk from the Brett, candied citrus marmalade, and some nice biscuit notes from a solid grain bill, finally some botanical threads run through the aromatics include lily and hyacinths.
T - Follows the nose closely, lots of pineapple and orange flavors, with a rise in temperature honeysuckle and orange blossom honey.
M - Medium in body, fully coated palate rolls the tongues edges up welcoming the slightly sour notes. Then that pesky Brett dries things out quickly, almost ashen finish, but wait, a touch of sweetness in the long linger.
O - A very nice Belgian influenced offering from Du Du Ciel, Strikes all the right notes, Brett use is well executed, the aromatics are the shining spot here, the body is quite good and the palate is delightful.

Poured from fridge temp. Pours a golden yellow with good carbonation. Smell is hops, barnyard funk, and citrus peel. A bit of leather and bitterness. Very nice. Taste is smooth, nice hops (but not too overpowering), Definitely some bitterness. Mouthfeel is nice. Overall, a really nice beer.

Brasserie Dieu du Ciel! Dernière Volonté, 7% ABV, 25 IBU. Pours thin and hazy golden, with a 2+ finger foamy white head that left decent lacing. Nose is grapefruit and a bit of alcohol, taste is grapefruit, hops, and a slight bitter close. A bit over-carbonated but it plays nicely with the grapefruit for a nice mouthfeel. Overall pretty decent. I'm not a big IPA fan but this is pretty good.
