Saison Du Parc
Brasserie Dieu du Ciel!
This straw coloured Saison is inspired by the Belgian tradition. Slightly veiled, it is dry with grainy aromas.The chosen hops straddle the line between the traditional and the new world and bring a touch of citrus and passion fruit, all the while letting the aromatic yeast shine through.

Awesome low alcohol beer... should've called it a Grisette and everyone would be all over it. Pleasant yeast character, nice hopping, restrained bitterness.

Cloudy with lots of fine carbonation bubbles. I'd describe the colour as wheat straw that has been rained on several times ( you'd have to be a former grain buyer or wheat grower to understand).
Definite farm house ale aroma..yeasty, grassy, slightly citric.
Once the carbonation settles down it's actually close to as advertised. Those classic Saisson notes are there at the beginning before they get blown away by the aforementioned ( on the label ) hops.
Feel is light and crisp
Thinking this would be a killer on a hot humid day.

11.5oz bottle. Label is stamped for bottling date as '2017-04-07'.
Cloudy straw colored body. Two finger puffy off white head, which settles back to a thin cap. Initially leaves some bubbles of lacing.
Aroma is fruity and yeasty. Tangerine and lemon citrus. Yeast has a bit of funk and expresses dryness.
Taste is much more dominated by the tangy yeast, and the fruity hops has tailed off. Fruit is more like a green apple, with a touch of lemon. The yeast is earthy and a bit sour. The end is dry.
Medium plus mouth feel. Effervescent in the mouth. Excellent carbonation.
The beer shows age, but shows good components. More fresh fruit hops would have made it better.

i buy any beer i see from these guys thats new to me, and was excited to see this one sitting there on the shelf, but unfortunately new to me does not mean new, and this had already been in the bottle a couple of years before i picked it up. i took a chance anyway, not really knowing this was a little hoppier than is traditional in the style. the hops have definitely died off in a somewhat unflattering way here, some cardboard and oxidation and residual green bitterness in the taste, not as delicate and balanced now as it probably was when it was fresh. thankfully the yeast here is awesome, well mature now, vinous, drying, peppery, and with some familiar belgian tones of pear and apple to it, likely was amazing with a fruitier hop profile when this was first made, but now stands as the leading flavor agent in the beer, and is delicious. i like the fuller wheaty body this has, and there is a dry earthen aspect to the grain that i really like, fits well in a saison type of course, and helps distract me from the weird way the hops have faded. white pepper, passion fruit, dried herbs and flowers are all there in the finish, and this still seems summery even with the obvious age on it. cool beer, id kill to try it fresh, but i remain a loyalist to these guys. a good boat beer even now.

Capped: Cloudy straw color with moderate activity. Foamy and frothy white 3 finger head, lasting around 10 minutes, with decent legs and swirl reaction. Flavors of orange, grapefruits, lemon, wild yeast, wheat, oat, cheese, with floral and herbal hops. Moderately oily and fluffy medium body with sharp crispy carbonation. Medium to strong strength, piney and flowery dry hops, grassy brett yeast, powerful straw and barnyard feel. High freshness and real well balanced. Cross Saison and IPA, nice complexity. Overall superb quality craft.

Pours slightly musty straw yellow with a huge frothy head that collapses quite quickly, leaving good lacing. Aromas of tropical fruit and citrusy hops. Flavour is honey, fruity esthers, some pepper, fragrent hops balance. Good - not overwhemung mouth feel on a very full flavour.

341 ml bottle served fairly cold into a tulip. Purchased a 4 pack for about $12 CDN. Bottled April 7, 2017.
Appearance - Hazy, very pale golden color with two fingers of loose and bright white head poured. Good retention and spidery lacing covers this glass.
Smell - Belgian yeast, assertive hops and some lemon and other citrus notes.
Taste - Plenty of earthy hops, some lemon, middling to potent bitterness and a leafy characteristic as well. Yeast shines through just enough to identify this as at least a saison hybrid, but clearly on the hoppier end of things.
Mouthfeel - Fairly light bodied, explosive carbonation drying finish. Works great with the flavor profiles.
Overall - Maybe not a signature saison, but in terms of hybrids, aggressively hopping yet making a sessionable 4.2% ABV while featuring characteristics of many styles certainly makes for a fine summer beer. Yum and worth a 4 pack. There's just something here that really appeals to me.

From a 341ml bottle served straight from the fridge at 11 degrees Celsius into an oversized wine glass. Bottled on date: 04.07.2017.
Look: The beer pours a veiled straw with 6.5cm of bubbly, white head that dissipates into a partial film in 2+ minutes. No lacing.
Smell: Moderate strength and well-balanced. Fruity esters dominate with the phenols and hops taking a back seat. Very mild cereal-like pale malts. Yeast funk, lemon, apples, and white pepper. Reminiscent of white wine.
Taste: Follows the aroma seamlessly. Moderate strength and bitter. Same notes as the nose: esters, phenols, and hops. The finish, while dry, still ends up lingering for quite a bit with medium intensity and bitterness.
Feel: Medium-light body with high carbonation. Effervescent. Crisp and drying with no apparent alcohol.
Overall: Refreshing and easy-drinking session farmhouse ale for the summer. It fits very well within the style except for the noticeable hoppy character. Try it if you get a chance, it's not worth seeking out though.

Smell - yeast, clove, spicy hops, coriander, and citrus.
Taste - Yeast and clove upfront followed by the bitter spicy hops. The citrus finishes the brew off. There is pleasant effervescence to this beer.
Mouthfeel - Medium bodied with moderate to high carbonation. Finishes with a pleasant lingering bitterness.
Overall - A "hoppy saison" that has the hops to a nice tee. I would've liked if the traditional saison elements were more evident in this one.
