Brasserie Dieu du Ciel!
Quebec, Canada

Style: Herb and Spice Beer

Alcohol by volume (ABV): 5.90%

Notes / Commercial Description:
Rosée D’Hibiscus is a delicate wheat beer with a floral and lightly acidic character. Its beautiful pink colour comes from the hibiscus flowers used in the brewing process. A perfumed aroma invokes fresh pink grapefruit and the pleasing texture persists nicely. A refreshing, quenching ale perfect for hot summer days & nights.

341 ml bottle.

A- Light orange and pink, a very nice summery colour. Not much head. Nice effervescence.

S- Witbier base with a very fragrant fruity and flowery aroma.

T- Base is a light witbier with faint wheat and yeast. Slightly sour middle. Flowery aroma floats over the rest. Berries in their as well. Not great, but no off flavours either. Could use a bit more malt and wheat.

MF- Light bodied. Leaves a good natural feeling to the mouth. Refreshing.

D- Easy to drink. Good as a warm weather beer to quench your thirst. Grew on me as drank it and I could have had more.

12oz bottle purchased from Super Marche Rahman in Montreal. Pours a cloudy pink-brown. Smells like strawberries. Flavour is light and fruity - again with the strawberries. Has some qualities similar to a light witbier. Mouthfeel is thin. I don't understand why DDC would choose to bottle this one.

Pours medium red with a pink/yelllow highlights, of white (pink) dissipates and laces nicely.

Aroma of soft pepper and fresh spice. Wheat, and contiental malt shine but a light off setting perfumy flavor seems to be shadowing. Hibiscus flowers are used in the brewing, my guess is it must contribute to the apperance and aroma, maybe its that off-flavor I taste. Still, a very unique and pleasant offering.

Bottle date 10/07

Pours ruby red with pinish hues in the body.
A one-inch head of light pink rose up slowly, along with some minute orbs of carbonation up the hips of the glass.
Aromatics are fruity and zesty, with plenty of phenols.
Strawberries, rose petals, coriander, cherries, and oranges all in harmony. Quite floral and earthy.
The mouthfeel is light and crisp. Fairly lively and very refreshing.
The pallet has ripe stone fruits riding atop a solid witbier base.
Slightly tart and drying, with juicy, ripe overtones.
Strawberries, cherries, and citrus zest all are within, but not overbearing.
Bitterness is balancing and the beer finishes quite quick with faint wave of sweetness.
Alcohol is nill and that makes the beer that much more drinkable and refreshing.

Not to compare, but reminiscent of New Belgium's Pomegranite wit, and more floral.

341 ml brown bottle.

Bright pink beer with a thin white head.

Aroma is of sour fruit with floral notes.

Sour cherries are the dominant flavour in this beer, with some citrus and a faint, lingering hop bitterness. I'm also getting some hints of tropical fruit, mainly pineapple. Light-bodied with fairly high carbonation.

Tart and refreshing and quite unusual.

Bottle: Poured a cloudy deep pink color ale with a big foamy head with some average retention. Aroma of hibiscus is dominating and quite enjoyable and different. Taste is also dominated by the hibiscus with a ton of wheat malt and some spices which may originate from the yeast strain or maybe some orange peel/coriander mix. Body is full with some good carbonation. Interesting experience and definitely something I would buy again.

Pinkish reddish beer with no head retention at all.
Smell of hibiscus, shy wheat, spices, bananas and florals flavours with a shy hoppish bitterness.

Taste is wheaty at first followed by a shy malty caramel flavour then followed by a sweet floral smooth taste that let some shy flavours out such as hops, spices and fruit, but everything is pretty smooth like a soft juice.

It's pink, an orange pink colour with a finger of foamy pink head. Pinkest beer I've had. Some lacing as the beer goes down.

The aroma is flowery and tart, and has a bit of citrus. I'm not sure what hibiscus smells like, but I assume that it makes up for the bulk of the aroma, as it doesn't remind me of any other beer I've smelled.

Sour and tart flavoured, reminds me of juice crystals that need to have sugar added. Slight citrus to the finish. Nice, unique.

Though it is light bodied, it seems to coat the mouth. Carbonation is sturdy but not overdone.

Quite nice, and certainly different. Not something I'd have frequently but certainly glad to try it. My thanks go to my friend Jay for bringing a bottle back on his recent trip to Montreal.

A beautiful red with pinkish foam, like a bstrawberry milkshake. Aroma of sweet and sour herbs. Creamy mouthfeel with a sour edge. Bold taste. Sourish finish. Suitable carbonation. I like sour rosehip tea once in a while, but this was a unique spot-on brew.
