German inspired sour wheat beer. The obvious and domineering acidity of this beer is obtained by letting the unboiled wort go sour for several days. The Solstice d’Été is made complete by the addition, during the fermentation process, of a phenomenal quantity of whole fruit (raspberries or mangos or cherries) which compensate for the sourness of the beer. The result is a very refreshing beer where both acidity and fruity flavours dominate wholeheartedly.

An interesting rewrite of a Berliner Weisse.

Pours almost comically saturated deep red with a quick dissipating pink head.

Initial aroma is no description but gets to a raspberry jam as it warms.

Flavor is tart with some raspberry sweetness with almost a turbid wheat that makes Berliner's so great.

A little high in ABV to be so crushable.

473ml can poured into tulip.

Pours a deep fruit punch red with a thin cap of bubbles that quickly vanish, leaving no lace.

Smells of cold raspberry pie, crackery wheat malt, spicy yeast and some faint earthy hops.

Tastes of tart juicy raspberries, flaky pie crust, some mixed sour fruit like apples and limes, doughy wheat malt and more ghostly forest floor hops.

Feels innocent and fluffy. Deceptively medium bodied with soft carbonation. Finishes pleasantly sour.

Verdict: Highly recommended. A tasty, exciting raspberry beer with enough booze to keep you warm on a cold night.

330ml screwtop bottle served in a little snulip. Bottled on 2018-07-17. I've had this beer for more than a year, but apparently it was on the shelf for almost four before I bought it.

Pours a clear purple-red with a small wispy head. Smell is berry jam that doesn't quite hit tart, but doesn't smell sweetened.

Taste is tart and jammy, just a little bit of kettle sourness. Really bright raspberry.

Mouthfeel is very light and clean. Overall, not bad, particularly for 5+ years.

Solstice D'ete is a lightly hazy, reddish pink colored ale. Head is pink and fades quickly.

As I take my first sniff, raspberry is not a descriptor that comes to mind. Rather, the first thing I think of is maraschino cherries, sitting in a jar in that artificial, radioactive red color. Fruit puree lends support, smelling of both fresh strawberry and ripe raspberry. Fresh, damp earth provides a nice through note, making me think for a moment I'm out on the farm, picking the raspberries myself.

Taking my first sip is where I get big amounts of raspberry. Solstice D'ete definitely tastes of freshly squeezed, perfectly ripened raspberries. Fresh, ripe fruit even lends its character to the mouthfeel, giving an impression of fresh fruit juice, beer with fruit flavoring in it. Fresh earth lends itself to the flavor profile nicely as it did with the nose.

Very well executed fruit beer. Has the flavor and mouthfeel of freshly squeezed raspberries. Tartness is just right given the dominant fruit is raspberry. Full of character and yet refreshing.

Pours cloudy hazy scarlet rose red with a creamy frothy light pink off-white foam head and loads of sediment. Smells like jammy pulpy fresh garden raspberries, wheaty malts, sour yeast, with floral earthy hops. Tastes tart with fresh whole sour raspberries, jammy, juicy, fresh picked berries, nutty raspberry pulp, wheaty malt, and some floral earthy hops. Feels medium bodied, creamy with smooth moderate carbonation. Overall a really nice raspberry sour wheat beer.

Bottle poured into a goblet. Beautiful reddish color, bright under some light, dark under other light. Very small white head lingers around the edges. Raspberry scent in the nose which is light. Raspberry flavor in the taste with a slight tartness. Great balance of carbonation, raspberry fruit and tartness. This was a very easy sipper! One of the better sours I've had recently.

Pours a clear raspberry color; nice look. A big thumb length frothy head displays excellent retention.

The raspberry imparts a dominant and refreshing aroma with tart notes of lemon, lime and sour apple. The malt base compliments the tart theme by evoking aromas of sourdough bread and wheat.

Strongly tart throughout and nearly acidic, yet, deftly balanced by the fruitiness of the raspberries. Flavors of lemon, lime, green apples, sourdough and wheat bread. There is no bitterness so to speak, however, there are some peppery yeast and earthy hops flavors that add a nice complexity and bite. The acidity mellows towards the end yielding a hint of doughy malt sweetness.

Light bodied, crisp and with a lively carbonation. Stinging tartness throughout, including in the finish, which is also bone dry.

One of the most refreshing examples of Berliner Weisse I’ve had. Despite drinking it in the winter, I’m nevertheless impressed.

Pours cloudy raspberry red, white lacing for a head.

Aroma is of fresh raspberry jam, cracker malts, and citrus tartness.

Tastes of fresh raspberry, tart cherry, red grape, citrus, cracker and cereal malts.

Medium body, stinging carbonation on the tongue.

Exceptionally good raspberry sour. The raspberry taste is very fresh and lively. The tartness is strong but not overwhelming. Goes down very easy and definitely worth trying.
